What have you eaten today? (Low carb forum)

FBG 10.2. 12.35 - just had breakfast - fried eggs with some of the Atkins crispbread. Eggs are not tasty enough to cover up the taste of the crispbread, but it's food anyway.

Not sure what to do about dinner. I have quite a lot of roast pork left from yesterday - minus crackling, which I ate in bits and pieces when I couldn't resist. But I do also have some frozen scallops and quite a range of veggies. Maybe a warm, Asian style scallop salad and give the pork a rest.

Might make a fricasee with some of the pork (without the flour to thicken, might use cream cheese instead) and put it into the freezer and leave the rest for sliced cold pork tomorrow.

Didn't make the fricasee and didn't get the scallops out of the freezer - Neil discovered a pile of papers that needed sorting through and either chucking out or archiving. That job exhausted me so I just had some raspberries and cream and sat in the chair for a bit. I expect to make the fricasee tomorrow. I'll need to so that the pork doesn't go off.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and white chocolate phd bar.
Late Lunch: a small a key of Cheesies followed by Greek yoghurt, lemon chia pudding and vanilla and raspberry LC granola.
Dinner: LC ‘KFC’ chicken with a leafy salad followed by SF jelly, cream and LC chocolate granola.

B. Nothing, did mid level exercise class
L. Salmon, chicken and salad same as yesterday but still hungry so Greek yoghurt, blueberries, seeds and splash of cream to follow
4pm still hungry so had a hard boiled egg
D. Leftover chicken and veg reheated with curry paste and yoghurt
Amazingly my before dinner reading was 5.0. Haven't seen a 5 in 4 weeks and no idea why suddenly (pleasingly) one now. Pp was 6.1

breakfast: CWC, nut granola more CWC
Lunch: mountain of lettuce, half a large tomato, coleslaw and tinned mackeral in tomato sauce. 2 large cups of tea.
more tea in the afternoon.
snack: raw carrot while preparing dinner
Dinner: frozen meal. Parmetier de Canard, like shepherds pie, but made with duck. Did eat some of the topping Cat was wanting to share, so gave her the remaining potato topping - expected her to turn her nose up, was surprised that she ate it all. Glass of wine and later more tea.

had brocolli, carrots and roast celeriac with dinner .
 
Advice needed again!
To not derail, I've had coffee with skimmed milk, a low carb wrap with black pudding (if it's the same stuff you call black pudding, not sure about that) and 2 rashers of bacon, black olives for a snack, 2 Belgian beers, and the last bit of oxtail veg stew from the freezer with sauerkraut, cream and lots of paprika. Midnight snack about to happen, likely nuts, more olives and a piece of 85% chocolate from Aldi.

Now for my question:
I've bought halloumi for tomorrow. I've tried it once before, I think I most likely just pan fried if I remember correctly and didn't much like it.
Google says for halloumi fries, cover in flour and spices and fry in lots of oil. Many recipes for other things say to use crushed pork scratchings to get a crunchy bite on whatever.
What do you think, would glueing crushed pork scratchings to my halloumi with a beaten egg before frying work?

Other tips for my halloumi are very welcome too!

Have been away from this thread for a long time and have missed all of you loads.

@Antje77 -- not an expert on halloumi fries, unfortunately (though I bought some halloumi recently with the intent of frying it -- it is still sitting in the fridge though). Your suggestion sounds great and I would be surprised if it didn't work out great.

Today's food ...

Breakfast: One double decaffeinated espresso with cream and erythritol. Half a DD keto roll with mayonnaise and smoked salmon.

Lunch: Some fillet of lamb with homemade sauce bearnaise and some cauli mash (with lots of butter and some potato fibers).

Dinner: Half DD keto roll with chicken liver pate, a chicken wiener, 20g of 88% chocolate and way too much red wine.

Tried a new recipe a couple of days ago and it was really delicious. It's based on a Persian dish called Salad Olivieh. The ingredients are shredded chicken, diced pickles, mashed boiled eggs, green peas (albeit a smaller portion) and normally mashed potatoes (though substituted with cauli mash instead), everything mixed together and combined with homemade mayonnaise. Very low carb (about 14g for a huge bowl) and even my husband couldn't distinguish it from the real thing. Definitely a keeper for me.

@Antje77 wrapping the halloumi in bacon works well too - I cut it into chip like pieces, wrap a piece of streaky bacon around each one and air fry. Ordinary frying works too. Your suggestion should work too and sounds delicious. Love the look - and especially the name of spekknabbels.

Good morning - I'm not ill precisely, just got a sore throat and raised BGs. Still the same this morning.

Early wake up this morning.... my neighbour was out walking her dog with ours (and Mr C) this morning, the dogs were chasing each other when one of them caroomed in to her and knocked her over managing to re-break a leg she has previously broken before. They were basically in the middle of nowhere a couple of miles from the nearest road. It took 90 minutes for the ambulance to arrive. All the while my neighbour was flat on her back on a rough path and couldn't move without screaming. What was mad was that when I phoned for an ambulance 999 asked if I had spoken to 111 first - then after 25 mins on the phone to 111 they finally told me to ring 999. Total waste of time!! Thank goodness for mobile phones.

Breakfast: none - just black coffee
Lunch: Actimel drink and bit of cheese
Dinner: yesterday's leftovers - Greek butter beans, salad and some feta cheese and probably some kimchi (when I ate it yesterday I thought it would be nice with kimchi). The Greek butter beans recipe is definitely a keeper.

it turned out to be a broken knee and she's now in a red pot thing from ankle to groin. Luckily her and an ex got back together at the beginning of lockdown so she's got someone to take care of her. Jack's had his gravy bone biscuits stopped for a month in punishment.

the problem with Shih Tzu fur is that without a hair dryer, it will take 5 hrs to dry. So you either shampoo, rinse and blow dry, or you leave them shivering for hours, and then brush the mud out. See the white roots? That is because the fur is so thick the mud/wet penetrates slowly, and then dries even more slowly...

Oh my goodness! Do you normally shampoo and blow dry them? Brushing mud out must hurt?

When my lot get muddy they get a cold wash with a hose (which they all dislike but have to put up with) or, if there's time, we take them swimming which they all love but tends to be a weekend thing.

My neighbour has just texted me to say that she's discharged herself and on her way home. She's more worried about her dog and horse than herself. :rolleyes:

When my lot get muddy they get a cold wash with a hose (which they all dislike but have to put up with) or, if there's time, we take them swimming which they all love but tends to be a weekend thing.

When I recently started on T3, I was referred for a DEXA bone density scan. It took a coupleo f weeks to come through and too about 15 minutes to have done.

Annoyingly, it showed I have one hip with osteoporosis and the other osteopaenic. Whilst gutted, I wasn't totally side-swiped, as I had been warned eons ago I would be at risk, having lived with an eating disorder for a number of years.

I have been prescribed Alendronic Acid, which the more I read about it, the less I fancy it. I've taken on (weekly) dose, actually hoping I'd have galloping heartburn, which is one of the common side effects, to justify stopping it, but bearing in mind I also asked to be referred to the Bone Clinic, I'm deferring any more until I've been there. Doing nothing was an option I was given.

I do hope your neighbour gets to the bottom of things and whatever transpires, her fracture heals well and any condition uncovered can be managed easily.

@Chook hope your neighbour is ok - sounds a dramatic and painful morning and hugs for the BG. Mine has also been elevated the past few days for no apparent reason.
@Brunneria those dogs look a bit disgruntled at having their muddiness photographed!

Bit of a hungry day here - probably due to yesterday’s walking and disappointing dinner.

Breakfast was smoked salmon and cream cheese.
Lunch was 2 fried eggs, bacon and some grated cheese followed by cream cheese and 100% chocolate and then some more 100% chocolate drops.
Dinner was slow roast lamb breast.

Neil has to take Alendronic Acid for his sarcoidosis. They do have a fairly serious effect on his digestion although he doesn't have indigestion as such - one effect he reports is loss of taste. There are other side effects as well and his dose has been very slowly reduced over the months. It is expected to take quite a few months more before he can come off them altogether. Although he dislikes taking them, he does, to try to sort out the effects of the sarcoidosis.

Luckily, when I was referred for a DEXA scan, they found that, although my bone density is less than it ought to be, I don't have osteoporosis. I was advised to take vit D though. I couldn't get any locally and I rather gave up but I recently got some in liquid form online. That is one drop per day and even so it gives me headaches. Might have to stop taking it.

Breakfast today was an omelette, about 9 o'clock.

I keep saying I must do some food prep but when I think about it, I feel too grotty and it doesn't get done. Need to make some mayonnaise and some tomato sauce - ran out of both a few days ago.

I did make the pork and mushroom fricasee earlier but don't really feel like eating it just yet. Maybe later.
 
Black coffee this morning.
Lunch: cheese ham and mushroom omelette and 15g Montezumas with a handful of walnuts.
Dinner H/M burger with bacon, cheese 1/2 a dill pickle and mayo in a lettuce wrap, not 5 Guys but pretty good. A little salad of avocado and cherry tomatoes with it and a glass of red.
The expressions on those muddy dog’s faces has had me in stitches @Brunneria

Breakfast: CWC, nut granola.
Mid morning coffee with cream.
Lunch: had been to village shop in search of fresh vegetables, bought an avocado, 2 apricots, and six eggs.
Message from MrSlim, he is working with Weston Hospital which has closed to new patients because 40% of staff have tested positive for CV.
IMO MrSlim is in the vulnerable category. He does have a serious health condition, although you would never know to look at him. Ofc he thinks he is invincible.
Had the avocado with tomato, feta and basil on a mountain of lettuce. Ate both apricots, shame one got bruised on the way home. Was thinking the amount of feta wasn't sufficient protein so opened packet of emmental and had a sliver, and another. And then several more. 450g cheese gone. Substitute for fingernails, perhaps? Probably won't need dinner. Definitely do need wine.
Have second coated the inside of the wardrobe. Painted on the shelves, by the weekend should be able to fill it. Have been calling it a wardrobe, to give idea of scale, but it's actually an armoire. Huge cupboard with shelves, going to be used for spare bedding and towels.
@Chook hope your neighbour will recover quickly.
@DCUKMod Have also got oesteopenia, found when I fractured bone just above my elbow last year, probably from undereating for years. Seems prosperity cannot undo what poverty and depression have caused.
Currently eating like a horse, and still losing weight.
@Goonergal jealous of your breakfast.
