What have you eaten today? (Low carb forum)

breakfast: grain free granola, bacon melt. 2xCWC

lunch salad, LC bread roll, salmon and courgette fritter, warmed the fritter, added dollop of tartare sauce and popped it into roll,nice, and very filling.
tea and more tea
dinner,pork chop, red cabbage, carrot, leeks and green beans, raspberries and greek yoghurt
several glasses of wine leading to several chunks of cheese

Good morning

Very rainy here today so our plans for this morning have been cancelled.

Asda delivery is due this afternoon - just got the email and they've subbed ELMLEA (yuck :yuck: gross) instead of double cream to make my scrambled eggs. I've sent Mr C on a foraging expedition to get proper cream and the Linda McCartney burgers and pak choi the email said are unavailable. Oh, and eggs are unavailable again.

Breakfast: scrambled eggs and kimchi on the side
Lunch: Actimel drink and the rest of last night's 'pizza' which was aubergine topped with sundried tomato pesto and mozzarella
Dinner: Linda McCartney burgers and salad / dessert will be strawberries
 
About noon I had scrambled eggs with some chunks of boiled gammon through them.

Dinner will be some very quick fried, thin, boneless pork chops with cabbage and, maybe some mixed peppers in a kind of onion and peppers stew, which I'm fond of and is very easy to do. Might even mix cabbage with it.

Just waiting for Ms Volunteer to come with my shopping. Someone reminded me about whitebait, which I haven't been able to get for years and I wondered if the supermarket might have them frozen. I don't suppose so, but I asked Ms V to look to see - just in case.

Trip to butcher's went reasonably well yesterday - only 5 people allowed in the shop and distancing measures in place plus plastic screens at the counter. Picked up my bag of goodies but had a slight issue when trying to use debit card - the counter is too high, or I'm too short, and had to pull the card reader down to my side of the counter to use it. Then, there were no wipes to use before the next person came along. Had to stand for a short time, but just about managed it. Next time, I will still order and pay over the phone.

On the way home I had to go in to the pharmacy - only 2 allowed in a very small shop, which meant that only one side of the shop was available - someone else on the other side. No plastic barrier yet - just a rope barrier about 5 feet from the counter so the assistant has to bring things to the customer and come to collect payment. Got into a bit of a fankle because there was nowhere to put my purchases down while I paid. Also had to stand for far too long, waiting for other customer to be served - nearly gave up and went back to the car, before my legs gave out. V. sore still now, but I have another week to get over it.
 
Ms V didn't manage to get whitebait. She clearly didn't understand what was wanted and bought frozen "white fish" - not sure what variety. Seems like a good time to experiment with smoking fish. She also doesn't know the difference between butter, pure soya spread and non dairy spread. So we have some non-dairy spread to get rid of. Never mind, she does her best and I'm grateful.
 
Couple of days to catch up on. I've not been very well (again) but once again getting over it. I was going to get on with something today but Hubby has suggested it might be an idea to take it easy for another day to see how it goes. It's chucking it down here. At least I had a good nights sleep last night and Vick free for a change. Hubby has finally decided on the cube furniture he wants for the garden, it's ordered, decking is cleared ready for cleaning when the rain stops and the broken furniture is dismantled ready for recycling when I can get it there! Downside? That flaming bicycle still hasn't been collected.
Wednesday - bed 6.5 FBG 6.4. I still got a mid morning surge but not as bad as Tuesday.

L. Nothing
D. Remains of Tuesday's kung po beef with cauliflower rice. Later a couple of Lotus biscuits.
 
Morning all. Got distracted by a work related project last night so no time for posting.

During lockdown our Department has a fortnightly Teams catch up which is not work related - attempt to recreate kitchen chat remotely. Really enjoy them. We take turns (in pairs) to kick-start the conversation. Given that this has been going on a while now, the person I’m presenting with and I were a bit stuck for something original. We found that we both like photography (she’s based in Wales so not someone I generally spend much time chatting to, so we hadn’t known that before), so we decided we’d each pick out 20 photos that say something about our lockdown experience and put them into a rolling presentation. Given that I have literally taken thousands of the things on my walks, that was quite a challenge - and I’ve cheated by making some collages to include a few more :D tomorrow is presentation day!

@Brunneria sounds like you had a very dramatic day, but glad you have a proper diagnosis and a way forward
@maglil55 hugs for the recurring virus. Similar here but not as severe as you, but my BG is ridiculously elevated this week, with no obvious symptoms

So on to food. Very hungry yesterday. Ate some salami and chorizo for breakfast, with Awfully Posh pork crackling later in the morning. Some cream with cocoa nibs in the afternoon and then some air fried chicken wings coated in Parmesan for dinner. They were fab.

The wings look great. I'd love them with a curry mayo. Like the sound of your meet-up too. Grandsons have been doing remote assemblies with their classes and are enjoying them.

Hi all so a few weeks ago had to go into hospital in Sydney for a sigmoidoscopy initially was anxious about traveling but figured Australia has been ok with low covid-19 incidents. I caught a train in and hardly anyone on the train but got good results scope showed improvement since my flare and scope in November so new treatment seems to be helping so continue with treatment and see GI in 3 months and another scope in 6 months.

My BSL has been ok I'm back on 60mr diamcron and still on januvia since steroids November but I'm also not really eating LC but I'm planning to start next week back to LCHF/PALEO. I also joined an online 28bySam exercise and meal program.

My BG is very erratic this week! Went to bed on 5.2 last night and FBG was 16.3 this morning - checked again and it was 16.2 - must admit I feel a bit weird this morning - sort of slightly drunk feeling and very tired. We have decided to shelve our plans for today and stay in. Might go back to bed for a bit.

Dinner: Linda McCartney burger and vegetable bake (courgette, aubergine and tomato)
Like for the food- not the BGs. Seems to be a few of us suffering from crazy levels. I flinched when I saw Amitriptyline. It sends both me & DIL doo-lally!
 
Evening all.

Very glad to have got to Friday evening.

Breakfast of corned beef fried with 2 eggs, onion and grated cheese and dinner of carnivore pizza.

Looking forward to some promised sun and walks this weekend - plans to meet up with a friend; we’re both walking a fair distance to get to a park roughly midway between our respective homes and then of course will need to walk back again. Will be good to catch up though.

@maglil55 the wings were good. May have to buy some more at the weekend.
 
@Annb - liking the look of your cabbage rolls. Also, I'm with you & @DCUKMod that developing butcher ideas is the way to go. The butcher I use now has some interesting stuff but quite a few has a detrimental effect on my BGs. Doesn't stop me doing my own version though. @ziggy_w & @Goonergal - thanks for the hugs. Wasn't brilliant until yesterday late afternoon. Only thing bothering me now is my sinuses. Bed yesterday 5.9 FBG 6. I didn't have a good night but at least I only got one surge to 8.1 and it quickly came back down plus I improved as the day went on.
B. TAG and 2 Dairylea triangles - I've decided I actually prefer Lidl's cheese triangles.
L. Another cheese triangle.
D. Butcher delivered a GF haggis which I cut into slices, fried and had with celeriac chips done in the air fryer rotating basket. For the first time EVER I have had a haggis that has absolutely no effect on my BGs. Hubby didn't like it as the texture is different but I'll be buying more.

@Brunneria - I still read that as Bovril & hot choc mixed together in one mug! @SlimLizzy - disappointing for a bought cabbage.
 
Gave breakfast a miss and instead took flask of coffee on a morning hike - wanted to get back home before rain arrived this pm. Wonderful walk and coffee.
Lunch scrambled buttered eggs with lc seeded crackers
Dinner garlic and chilli chicken with salads and glass of dry white followed by lc lemon and lime mousse with spoon of thick cream. Three 100% hc buttons with decaff coffee.
@SlimLizzy - re celeriac chips I always freeze them. I peel and chop celeriac some into roast ‘potato’ size and some into chip size. I then open freeze on silicone mat on a tray. When frozen I add to a container or bag and keep frozen. I then just take out the amount out needed for a meal and roast either chips or potato shape from frozen - works well. I also sometimes drop celeriac squares into a curry - they give lovely thickness. I usually buy two celeriac and bulk freeze they seem to last ages in freezer. Good luck getting hold of the celeriac and carrying on your bike. I’m lucky to get it in my online food delivery just now.
Our local Tesco always seem to have celeriac but like you they are nigh on impossible to get in an online shop.

Peppers done - braised with butter, onions, a tiny amount of stock and added cabbage plus a splosh of soya sauce. It's fantastic! Might not bother with the pork but will have a huge plate of veg. in an hour or so.
 
Bed 6.9 FBG 6.8. No crazy rises this morning which I hope is down to having a good nights sleep. BGs are pretty stable- although they are stable in the 6's but I can live with that for now. Sinuses have been a nuisance today although dinner has just improved them!
B. TAG and was hungry so had 1 of the butcher's tomato sausages, slice of their GF black pudding, 2 rashers of very crispy back bacon and a fried egg - yet another double yolk.
L. Mug of tea - been a while since I've had tea which I just take black. Really enjoyed it.
D. My version of the butcher's beef wraps - minute steaks wrapped around sliced peppers and onion and cooked in a LC sweet chilli sauce (which has had a clearing effect on my sinuses).
Had veggie chips with it.

Was a bit heavy with the chilli. Apart from the egg and the veggie chips it was very much an air frying day.

I may have a couple of Lotus biscuits with 6 raspberries later.

Breakfast just coffee
Lunch cheese omelette with a few lc seed crackers and coffee with five 100% choc buttons
Dinner salmon in lemon butter with celeriac chips and local asparagus and glass dry white followed by lc raspberry mousse with two home grown strawberries and spoon of cream.
Friday nights now I always stay up till midnight to book an online delivery - hard for me as I like to start heading towards bed at 10 normally! I find if I log in at midnight I can get delivery booked in on time of choice three weeks ahead - means I now get a regular weekly delivery. I just chuck whatever into my trolley so can get to sleep and then sort out what I, my eldest son and my neighbours actually want a bit nearer to delivery time. With this method me, my neighbours, and autistic son get a regular weekly Saturday morning delivery.
 
Still at Mum’s.
Breakfast: strawberries and cream with black coffee.
Elevensies: black coffee with chocolate carb killa bar.
Lunch: 1/2 an avocado with prawns and mayo followed by Greek yoghurt and coffee Chia pudding.
Dinner: cheese and mushroom omelette and mixed veggies followed by my last DGF orange and chocolate brownie with cream.
 
Back in Cornwall. Spent practically the whole journey in the phone to insurance co. That’s the third day running. Have had to leave patio door boarded up and house as yet uninsured.
Had a rapturous greeting from Dennis There is nothing in the world like a doggy welcome and it raised my spirits no end.
Back on track food today....
Black coffee, a few stops en route to top up
Lunch on the move and spread out over a couple of hours: flaxseed bun filled with cream cheese and smoked salmon. 30g Montezumas absolute black. 1 20g pack Cheesies.
Dinner: takeaway from a lovely local restaurant which has branched our into click&collect 10iz sirloin, peppercorn sauce, 3 seared scallops, green veg and an unusual but delicious onion purée with crispy fried onions. Probably a bit too carby but worth it. Couple of glasses of red.

I'm alright with Amitriptyline as long as I take it no less than three hours before I go to bed otherwise i get a hangover from it the next day. I've been taking it for years and every now and then I wonder if it actually works so have a night without to test it and, yes, it definitely works.
Does anyone have any idea what this might be? It was my birthday the other day and this arrived in the post - I know I didn't buy it but, before I ring around to say thank you to the person who bought it, I really need to know what it is.
