What have you eaten today? (Low carb forum)

Rib steak and eggs, some fried veggie leftovers for breakfast.
No smoko again, so will stop putting it in the menu.
Roast loin of pork, roast spudlites, onion, jap pumpkin and gravy, small bunch of white grapes for later lunch.
Leftover pork toasted sandwiches for supper at seven.

Two glasses of single malt whisky trying to show interest in Trooping of the Colour I recorded the day before.

Usual rubbish, to many Freddy Metcury impressionists and Americans being interviewed, and not enough of the actual ceremony and flypast by the troops.

Could have been been worse they could have had Memememegan Susseas a common tater... :meh:

I hope the concert will be better as I will be recording that as well.

Can't remember yesterday's breakfast
L: half a very ripe camembert, small salad. Slice hm lc mocha tart with cream, to try stave off food cravings at village picnic later.

Saw all the tables groaning with cakes and felt...nothing! Didn't tickle my taste buds at all.

D: sort of picnic, 2 chicken drumsticks, soem homemade rollitos, cocktail sausages, 1 bite scone, 1 bite cake. Later more camembert and 2 aperol spritz drinks.

This morning waking bg was under 6, so ok with that

Out at a celebration with friends yesterday evening they live in a great place to watch our towns fireworks so had lovely evening catching up and then watching fireworks later in the evening. I took things with me to help - a bottle of soda water to dilute my wine (I’m an alcohol lightweight these days and don’t sleep too good if have more than one glass!also my leg cramps sometimes come back if more than one!),a packet of lc m and s seeded crackers and a pot of my kimchi to share.
Yesterday and today’s breakfast was a few spoons of my hm yoghurts with my supplements
Yesterday lunch mushroom omelette with kimchi followed by a few squares of 100% chocolate and dinner was salmon in lemon butter with cauliflower cheese and local asparagus followed by stewed rhubarb and hm yoghurts.evening while out had one glass of wine but diluted with soda water to keep me going all evening a few nibbles of cheese, a few seeded crackers and kimchi.
Today lunch some of my hm pate (see photo) with seeded crackers and kimchi followed by stewed rhubarb and hm yoghurts and four squares of 100% chocolate
Currently have hm chicken curry simmering away in slow cooker - smells delicious -and will serve it with hm spiced cauliflower rice and a glass of gin and soda.a lc chocolate brownie will no doubt follow.

Been experimenting a bit this bank holiday. The choc/nut squares of yesterday are no more :D:hilarious:

Today I made a garlic flatbread using part of one of the pizza bases I bought last weekend. Added a thin layer of mozzarella, then melted some butter and added 3 cloves of crushed garlic and a pinch of salt before mixing with some more mozzarella and spreading on the base. Finally added yet more mozzarella and some oregano. Air fried for 8 mins. Delicious and very filling!

Aside from that I had a ramekin of Greek yoghurt, double cream and raspberries and 2 slices of a small lemon zucchini cake I made in a practice run for a similar, larger bake for work later in the week. Also did that in the air fryer and it turned out pretty well. Moist and tasty! Won’t be any need for anything else.

I have looked for the little silicon cups to cook these in but I have only seen them on Amazon and the postage costs about the same as the cups so I haven't bothered - do yous cook them in the metal tray and do they turn out ok or have yous managed to find cheap silicon cups?

I do have a silicone muffin tray which I usually use. I’ve also used a metal one, but I push a square of baking parchment in each hole to line it first -they end up looking quite artisan then!
 
B- 2 boiled eggs and SLC toast
Elevenses- DGF ‘Brookie’
L- cold plate of Brie, h/b egg, chilli sauerkraut, olives and a sluce of roast beef. DGF biscuit ( still frozen) and tea.
D- chicken stir fry with chorizo, broccoli and red pepper. One sugar free jelly. IMG_1654366734.642280.jpg
 
I got son to do them for me. I just rendered down the fat afterwards when we were going to eat them. It keeps it beautifully moist and pink.
Son says breasts were at 58C for 45 mins. Season before sealing. I had some orange zest and port in with them. He cooled them as soon as they were taken out as I wasn't using until the next day.
The legs were rubbed with salt, pepper and thyme the covered and refrigerated for 24 hrs. Remove after 24 hrs, wash, pat dry, and vacuum seal with a couple of spoonfuls of duck fat. Legs were done at 76c for 12 hrs. They too were cooled as soon as they came out as I wasn't using until the next day. As with the breasts you can crisp them up in a pan but I put them in the oven for 20 mins (180C fan), took them out and drained fats off, added port and orange zest then popped them back for another 10 mins.

Thank you, I’ll save for later ( or more likely lose and ask you again!) It certainly did look good in your photo. I have a couple of mallard breasts in the freezer but my kitchen is still in upheaval so I haven’t got all my gadgets out again.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: coronation chicken, coleslaw and two baby tomatoes followed by DGF lemon drizzle cake and cream.
 
Breakfast: bacon and egg with one slice wholemeal toast.

Didn't really feel like eating for the rest of the day but I was trying out a new recipe for banana biscuits and had one to check what it was like. It really needed something else. Might make some lemon icing for them. They might go to waste anyway because Em's dad has tested positive to covid (he just thought he had a cold) so she probably won't be visiting for a few days. She doesn't have to isolate these days, But I doubt if she'll come here before Tuesday.

Anyway - that rather put me off of food until a short time ago, so I'm just going to make do with another slice of toast and butter.

A few days ago Neil turned off the power to the cooker while I had bread baking and I wondered if I should return the favour. I didn't because that would have been mean. But I made the same mistake today. His loaf turned out much worse than mine!

Two sausage rolls from the pie shop for smoko.
Pea and ham soup, garlic rolls for lunch
Toasted cheese and onion sandwiches for supper at six.

Glass of single malt before I had an early night.

The rest of the pea and ham soup went in to the freezer for later, the ham tasted better in a stew than as xmas food
 
Skipped breakfast as go to yoga class.
L: camembert, cold meats and salad. Mocha tart
D: seafood platter, not very appetising. More mocha tart. Getting lots of portions from it as its very rich and I decided not to freeze it. Wish I had frozen it now. 2, or was it 3 small glasses white wine

Keep your eyes open in Lidl and/or Aldi if you use them. They often have Joie products in there, which include silicone muffin tins.
 
Probably only one meal today. I had some more of the "Collard" greens that I made a couple of days ago. I had a soup plate half full but there's still as much left again for tomorrow maybe. Don't expect to have anything other than tea for the rest of the day. BG high (13.5 just now). Hope I didn't get the bug from Alistair. Feeling kind of off, but nothing specific. Have to check with GP surgery whether I should stay away from my blood test appointment on Tuesday because of contact with him on Friday.

Had to edit this post because, as sometimes happens, the post loaded while I was in the process of writing it. Don't know why that happens - maybe some keyboard shortcut that I don't know about.
 
So back to Friday it is. All brekkies slice of LC toast and tea. Can’t remember lunch but supper was a LoDough pizza with goats cheese, halved cherry toms, olives and basil leaves. Yum. Yesterday had salad and quiche lunch. Supper was Tandoori King Prawns and cauliflower Bhajee. One popadom. Too much rose wine.
Same lunch as yesterday. Later making chicken fajitas which I will have without the flatbreads but with soured cream, guacamole & salsa, bit of salad on side.

Coming to end of current jar of stewed rhubarb so cooked some mixed berries-I use a bag of frozen berries when none in garden yet -and cook until a bit softer and then put into preserving jar to keep in fridge so can just add a spoon or two to my hm yoghurts. My yoghurt maker is behind the fruit jar - it still had 5 hours to go when did the berries - ive been doing another experiment refermenting my most recent different bio yoghurt which has The lactobacillus strains of gasseri and rhamanos. It’s it’s third refermentation and I’ve increased timing for re ferment from last times 24 hours to 30 hours at 41 degrees and result re thickness is like clottedcream and tastes delicious too. Instructions that come with the bacteria only suggest 4 to 6 hours referment but longer produces more live bacteria and much thicker product. @DJC3 and @MrsA2 know you were both interested in my yoghurt experiments.
Today,as Sunday, had three meals but within an 8 hour eating window :
Breakfast about 10 one egg,slice of bacon,mushroom and slice of lc toast
Lunch about 1 kimchi, hm pate and a few lc seeded crackers followed by stewed rhubarb and hm yoghurts
Dinner about 5 roast chicken dinner with a few carrots, local asparagus and cauliflower cheese with glass of dry white wine followed by lc crumble heated and served with some of my hm yoghurts.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Food Doctor bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
 
Three slices of middle bacon, two egg and cheese omelette, mushrooms, tomatoes for a later breakfast.
No smoko.
Baked rolled belly pork, green veggies, gravy for lunch.
Pea and ham soup, two slices of toast for supper at six.

Couple of crispbreads with extra tasty cheddar cheese on them watching tv.

Small glass single malt.
 
@shelley262 your yoghurt really does look deliciously thick and creamy.
Today started with cheesy scrambled eggs on lc toast.
Took grandchildren out with me to walk Dennis and we stopped at a cafe afterwards where they had ice cream and I had a coffee and a dollop of clotted cream in it (without the scones and jam)
lunch was 2 tuna muffins.
Dinner h/m cheeseburger in lettuce wrap with more salad. 2 glasses red. Handful of nuts and a 15g mini bar of Montezuma’s absolute black.
 
Her Majesty has a lot to answer for!

5:30 planned street party migrated into our house due to rain and temperature. So 12 households brought innumerable bottles, lots of salads, 2 large crusty loaves, coronation chicken, devilled eggs, cheese, crisps, nuts, more salads. And the desserts, a platinum jubilee trifle, brownies, muffins, and a tirimisu big enough to swim in!
I confess to devilled eggs, some avocado and far too much tirimisu and a constant drip feed of wine. They were here 4 hours...! Its all Her Majesty's fault!!!
