What have you eaten today? (Low carb forum)

Morning all. Freezing fog here again today so won't be going anywhere. Had my coffee with tablespoon Baileys so am ready for the day getting things sorted for my granddaughters visit. Have written and sent all my cards and wrapped all my presents, put up the tree, did my 2 hour electricity saving stint yesterday so am feeling up to date. Going to have the rest of the beef stew I made for sunday with cauli mash and sprouts. A babybel and crackers for tea and hope I'm back on track. Bought some of those German cookies from Lidl for my grandson (he was born in Germany so classes himself as part German bless him) and helped myself to a few. Have a good day everyone.
 
Funny night where I woke at 5, stayed awake with a busy head until 7:30 then fell back to sleep until 10.
So a very late breakfast ended up being half a bowl of cold veg soup (yes I like it cold and it was there and ready!)
12:00 in IKEA, meatballs, cream gravy and peas. And a coffee that was way too strong so made hubby drink it
15:00 a cup veg soup
D: half a bratwurst, a tablespoon hm coleslaw. A glass red wine
 
2 fried eggs for breakfast - went out for my podiatry appointment. We couldn't get parked anywhere near the surgery so Neil had to push me for about a quarter of a mile - the last few hundred yards uphill - to get me there. It was snowing and very cold sitting in that chair and facing into the wind. Poor Neil - it's not as if he's in the best of health either. He was kind of puffed out when we got there. This is the only GP surgery that has a podiatrist and they are very busy now that the hospital is no longer doing feet and the other, old fashioned, chiropodist has decided to retire. They are on one of Stornoway's main streets and have no parking area of their own - just on street parking, which is always completely taken up - even the disabled space across the road from the surgery (by people without Blue Badges). He made it - without him I never could have.

The upshot was, by the time we got home we were both cold and hungry. Neil made himself a quick pasta dish with mushrooms and yoghurt and I made myself a cold chicken sandwich. That wasn't in the plan.

Soon Em arrived from school and I didn't get around to putting on my beef stew until quite late on. It is still cooking away and should be ready in another hour.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: cauliflower cheese with Brussels and runner beans followed by SF cherry jelly and cream.

Monday
no breakast or lunch just black coffee
dinner left over beef, cauliflower mash, green beans. Mineral water.

Today
black coffee until mid afternoon, Greek yogurt , sunflower hearts, blak decaff.
dinner ham cheese and mushroom omelette, decaff coffee with coconut cream.
 
Yesterday and today was a very thick and filling tomato soup, mainly canned tomatoes with added cream and a diced spicy jalapeno burger by way of lazy little meatballs, not too much water added. Added grated cheese as well today. :hungry:

Not feeling to well, short of breath after a lingering cough after a cold two months ago, and a second cold on top of that, so an easy and filling soup is perfect!
Feeling very lucky to live where I do, called the GP today to ask if it was worth worrying about yet and got an appointment for tomorrow. The only downside is that I'm expecting to be diagnosed with a mild bronchitis, get told to quit smoking (how???) and be prescribed salbutamol which I already have, found in the back of a cupboard. But who knows, they might have some other trick up their sleeve! :)

Morning all. We have snow! It's not convenient but it's pretty and my garden looks as pretty as everyone else's! No bf today, just my usual coffee. Midday meal will be the last of the beef stew I made sunday, with cauli mash and carrots and broccoli. I will do that again because I so enjoyed it. I'm never really hungry at teatime any more so I'll just have a couple of buttered water biscuits and a slice of cheese. Have a good day everyone.
 
6am sugar free oats and berries porridge 30carbs . protein shake with water and milk 7 carbs 27 protien

9am granola with milk and peanuts 40carbs 20 grams of fat

mid day 12pm 6 pro vitas . with 2 extra thick slices of cheddar . not sure how many carbs or fat but carbs probably 30

I've been off insulin for 5 days . but I'm losing weight . and i want to gain it . still have 2 more meals planned for the day
 
Tuesday breakfast beans on wholemeal toast coffee( 39 carbs ).
late lunch 2 rolls with salad and cold meats coleslaw and cheese ( 65 carbs )
Tea: ratatouille and cheese ( 10 carbs roughly )

Wednesday FBG 6.2 Breakfast porridge small bowl 7am then 11am 2 wholemeal toast and pate
Corn beef sandwich before I left work at 2.30 ( 30 carbs )
Evening meal grilled chicken thighs ratatouille grated cheese and sauerkraut ( managed to buy some unpasteurised sauerkraut ).( 10 carbs )
 
Was supposed to have my hba1c done today at 10:30 but they cancelled it (for the third time!)
So instead of early breakfast, I had at
11:00 1 bratwurst and 2 poached eggs on 2 slices HiLo bread.

16:00 tiny bit of pate and some cream cheese found missed at the back of the fridge. (I must remember that my body is NOT the bin!)

17:30
Gammon with boiled celery, carrots and onion with a side of cauliflower and broccoli with cream cheese and grated cheddar. 2 sqs 85%.

Only exercise has been putting up decorations, but as I decided to change the curtains and the lights we'd done last week that was an awful lot of up and down on the footstool. My legs are tired now!
 
Do you put the smoked salmon and cream cheese in cold after cooking the eggs? Or are they warmed? Sounds good but can’t figure out how I’d prepare it?

I cook the omelette until it’s pretty much set ( more so than if I was adding other fillings) then add dollops of cream cheese ( I tried spreading but not successfully) and strips of smoked salmon and leaving for a few seconds before folding over and plating. V tasty.
