What have you eaten today? (Low carb forum)

Late Lunch - Lupin flour pancakes 1 with peanut butter and the other with a slice of top side beef yum
Feeling full now so not sure if I will have anything else just a snack perhaps later
 
Wanted to say Happy New Year to you guys and hope all of you are well, I will read back a bit further when time but there are a lot of missed posts! - I'm hoping to post more regularly again in 2023 - after having had a difficult last 6 months of 2022, including caring for and losing my mum. My health too took a dive after a bout of Covid which I had just before mum collapsed with a bleed on her brain and this lead to major caring stress and driving around all the time - so that I didn't eat much at all for 2 of those months and lost weight. Happy to say I am back on the level now and looking forward to my 6th year of eating low Carb in 2023 and reporting back.
To stay on topic today so far I have eaten:
10ish small amount of kefir with my supplements and then one slice of bacon, one egg and one mushroom on toasted HILO bread - agree with you @DJC3 and @PenguinMum its a lovely loaf but Ive found it hard to find Sainsburys often out of stock and not found anywhere else.
1ish a few bits of cheese and a few walnuts followed by a naughty half a tangerine - I indulged in a net of tangerines this Christmas but dont seem to have an impact on my bgs provided stick to a small amount.
3ish a delicious DGF Ginger cookie
Planning tea around 6ish - a bit later than usual as itis New Years Eve so will be up till midnight. I have a hm chicken curry simmering in the slow cooker and will stirfry some cauliflower rice to go with it plus a glass of gin and soda water.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Food dr bar.
Dinner: one and a half 100% beef burgers (eyes too big for belly) and LC roll with cheese and coleslaw followed by DGF crimbo crumble and cream.

Welcome back @shelley262 .so sorry to hear of your troubles. Your yoghurt making tips have continued on and I have thought of you every time I've started a new batch.

Skipped breakfast and did 20 minutes on the bike

L : 3 chicken drumsticks, a know of cheese,some almonds

D: is being a drawn out, picky affair : hm dips with seedy crackers and a few tortilla chips, chicken drumsticks, cheese, smoked salmon,coffee ice cream (one of those "special" desserts that just wasn't worth it either in money or taste)
3 glasses wine

For those seeking HiLo loaf in Sainsburys, I've found it twice lately on the lowest shelf on the unit at the end of an aisle. It used to be on the top shelf in the middle of an aisle.
Might be worth keeping eyes peeled and on knees!
 
Not much to report as I did not have much to eat as I felt like **** most of the day.

Had a three egg cheese and sandcrab omelette for supper at six.

Several generous glasses of highland fling before a early night to bed.

@shelly262 glad to see you are back, and with such determination, as usually. So sorry for your loss of your mum, and for your own health troubles. Welcomee back.

Meals for me yesterday..
brunch, boiled eggs, olives, brie, pear, black coffee.
Dinner, Barnsley chop, fried cabbage and leeks, coffee with cream.
tonic water with slice of lemon, later in the evening.
 
Vacuum sealer and freeze small amounts?

That lamb breast looks amazing.

It was so good. Crisp outside, meltingly tender inside - I think it was you who first did lamb breast in the rotisserie and gave me the push to try it.
Regarding vacuum sealer etc - no! No more gadgets! I’m sure there’s a conspiracy going on here

No breakfast ( feeling a bit ropey tbh after overindulging last night)
L- couple of bowls of h/m mushroom soup. It was so nice I couldn’t stop at 1 bowl.
D- @maglil55 ‘s delicious feather blade beef recipe with broccoli and sprouts. Followed by my last DGF Crimbo crumble. I really wish I’d bought more of these.
I noticed that DGF are now producing lc wraps. I’ve ordered some, looking forward to trying them.

Breakfast: 1 slice of toast with cream cheese. That was early and quick because my BG was high so I took insulin to bring it down and then, half an hour later had the toast.

2nd meal: steak and onions. The steak is resting for a few minutes and then I'll eat it. Nearly didn't bother - feeling very odd all afternoon but took some pain killers and, coincidentally, started to feel better after a while so I think I will eat it.

@MrsA2 thank you for info re position of Hilo low carb bread in Sainsbury's . I'm going on Tuesday so will check there -as well as where it used to be!
11ish small portion of kefir with my supplements then fried one egg,one sausage,(I buy very high meat low carb chipolatas)and one bacon rasher and toasted one slice of hilo bread
3ish DGF low carb ginger cookie and thin slice of husbands English cox apple lovely and crispy
5ish roast chicken dinner served along the chicken were a few chipolatas, one small roast potatoe and a few pieces of carrot with glass of dry white wine. Planning in a few mins to have a DGF low carb crimbo crumble with yoghurt and then some decaffeinated coffee.
@DJC3 let me know what the DGF wraps are like I spotted them being launched but am holding back from ordering simply because I've got a lot of DGF goodies in my freezer and always like to make a larger free delivery order and stock up!
 
Today was Greek yoghurt with raspberries for brekkers. No lunch as we had got up a bit later than usual and had roast lamb lined up for dinner. SO delicious.

Nice to see you back @shelley262 . I'm sorry life was particularly hard for you in recent months. Hopefully, 2023 will be kinder to you and yours.
 
I’m another who forgot to post yesterday, and possibly the day before - I can’t remember.

Today we travelled back from the Lakes to Cornwall (skilfully avoiding the Lakeland HQ in Windermere!) just 9 hr trip which was 1/2 as long as the journey up.
Loads of black coffee all morning.
L- sandwich made from HiLo bread and leftovers ( Turkey, ham, cheese, mayo). 2 slices of HiLo are 10g carbs, too much really but…
Mid aft a DGF cake
D- stopped at local coop on way back to buy wine and easy party food for the others. The ‘party food deal’ included Camembert for baking so I had that with some roast cauli florets to dip. Chilled white wine. Glad to be home.
@maglil55 sorry to read you are still not right, I do hope you start to feel better soon. Btw what are cc chocolate pots?
CC little chocolate pots are the Coconut Collaborative little chocolate pots. They are tiny, non dairy and vegan. They are a glorious chocolate fix though. 8g of carbs but on a not too carby day they are a delight (plus they are not doing much to my BGs). They make loads of things but some are a bit too carby. Friday 30 December - bed 7.7 FBG 6 7 I'm still afflicted with this bug (as is Hubby). We're all up and down with it. Least effort is very tiring. Worst for me is the vertigo (but I don't know if that could be more related to my eye imbalance). At least all the additional eye drops ended today

B TAG and 3 LC crackers with a bit port salut.

L. At optician so nothing.

D. Yet another wrap. Same as last 2 days - lettuce, tomato, rare brisket, mustard and mayo. CC little chocolate pot.

Good news at optician. No inflammation, implant sitting well and near perfect distance vision. My consultant has also brought my hospital appointment forward by 1 week so, back there in 5 weeks. Disappointing that my eye pressure hadn't come down more but, optician reminded me I'd been dropping steroids into my eye for 4 weeks (along with everything else). Hopefully, the pressure will drop over the coming weeks.
