What have you eaten today? (Low carb forum)

10ish kefir with lemon and lime zest
1 ish two boiled eggs with some low carb bread cut up as soilders to dip in - comfort food on a grey day followed by 100% chocolate and shared a sharp green apple with OH I ate most of the peel and he ate rest of apple - he seems happy and it keeps my bg and gut bacteria happy too
5ish pork casserole slow cooked and served on bed of mushrooms cooked in olive oil also had small glass of red wine followed by hm lC rhubarb crumble - one portion left for tomorrow -warmed and served with yoghurt.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: fry up of eggs, bacon and mushrooms followed by SF cherry jelly and cream.

Not the neatest fry up I’ve ever cooked!

B: berries with ff greek and seeds, 2 slices ham
L: driving stopped at a cafe and wasn't prepared with anything so had a brie and bacon sandwich but left half the bread. Coffee
Mid afternoon, too many cashews
D: pork chop with a simple sauce made of stirring cream,cream cheese and mustard through the cooking juices, broccoli and carrot.
1 sq h, lc coffee cake.

It's good to be home again with some hm lc goodies and supplies in the freezer.
Libre and weighing tomorrow. These trousers are far too tight
 
Wednesday 15 March bed 7 FBG 7.6 - I am glad to say that everything is back (although there was still an intermittent fault for a few hours). Then I had the fun of resetting everything that had gone do lally with the broadband going off. Amazing just how many things are knocked off by broadband going down. Dishwasher & washing machines are both "smart"! Not that smart as they were really mucked up by both water and technology. We also had to clear the air from the pipes. In-between times, I had the boys here for dinner and was yelling at Hubby from elsewhere in the House - how to clear the cache on the "smart" TV.

B. TAG and a bit crustless quiche a bit later (as they've decided to dig the High Street up and close another road).

L. Nothing - no time

D. Another bit crustless quiche, LC wrap with remains of the prawns with Marie Rose, smashed avocado, lettuce, tomato. DGF Christmas pie with cream and 2 strawberries.

I also managed to fit in Maths & English homework with the eldest grandson.

Thursday 16 March bed & FBG both 7.

B. TAG and last bit of crustless quiche

L. Nothing

D. 2 chicken drumsticks and a DGF Christmas pie with cream and 2 strawberries.

Amazingly, today, my GP actually called me to book me in for a bloodletting, diabetic review. He did say, "we haven't seen you for a while." I resisted the temptation to say that it has been extremely difficult to get an appointment!
 
Breakfast: bacon and eggs.

2nd meal: hoping to make the chicken curry I didn't get to yesterday.

Still lots of china and glass to wash and dry though and that has taken all morning so far. More still to do. Maybe I'll make the curry and then get back to the dishes. At least Neil managed to get most of my shopping today - cost about £20 more than usual for the same amount of groceries. Also having to order stuff from Amazon which, it seems is no longer available here. That's a more expensive way of buying household items, but needs must.

so back to yesterday
Usual brekkie of slice LC toast and copious tea.
Lunch was small plate of chopped salad and finger of cheddar and last bit of Durris cheese.
Supper was two baked plant burgers topped with two Portobello mushrooms.

Fish Finger Firsday has been pushed into today.
Same brekkie.
Same lunch but replaced cheddar with finger of Shropshire Blue.
Supper Chunky cod fingers and cauli cheese.
 
@PenguinMum I hope Friday’s as good as Fursday for Fish Fingers.

Todays breakfast was fried eggs topped with grated cheddar.
L- tin of mackerel on toasted SLC ( I know it’s SRSLY now but my autocorrect won’t have it and I can’t be bothered to keep correcting!). Followed by a DGF white chocolate heart which had just arrived. (This was supposed to be a Mother’s Day gift but daughter won’t remember there were 2 chocolate hearts I hope. I couldn’t resist trying one, and surprisingly I really liked it)
D- Chicken fillet topped with chilli pesto and mozzarella, with roast broccoli, aubergine and cherry toms. Glass of white wine. IMG_2041.jpg

1.30ish three eggs scrambled in butter with one slice of LC toast followed by one green apple rind and 100% chocolate
Mid pm LC ginger cookie
5ish salmon in lemon butter with a few peas and pre cooked and frozen two small potatoes cooked in duck fat and one glass of dry white followed by last of hm LC rhubarb crumble warmed and eaten with yoghurt.

Im curious about the green apple rind? Is it just for fibre?

Hi @DJC3 it's to feed my gut bacteria especially Akkermansia and to give me a bit more diversity without upping my blood sugars it's particularly good at feeding this bacteria that smoothes and strengthens the gut lining to make it less permeable it's often regarded as the key for gut health. I gather Akkermansia likes apples as well as other things like berries nuts and olives but it's the skin that it particularly likes and whole apples a bit too carby. Hence also why I'm adding lemon and lime zest to my kefir.

Thank you. In the back of my mind I was sure I’d read something about Apple peel but couldn’t remember what! I might try it, not just for the gut health, but because I really miss apples. I used to eat 2 a day. Nibbling on the peel might work, if I can find someone to eat the rest of the apple!

You need a couple of guinea pigs!

M&S sell some dinky mini apples. Expensive but about a quarter of the size of a normal apple. They’re called ‘rockit’ and might meet your ‘whole apple’ craving.

I’ve had a few recently and recommend.

Are you, or have you, tested bg?
Especially now you've been doing it a few days (I have a theory that bg can build up over days, unscientific and unproven)

12:30 50g (weight) cheese, 2 slices hm lc soda bread, 1 sq hm lc coffee cake. 20g 85% chocolate
Evening yoga so hoped I could skip eating again, but came home hungry so
Ff greek with seeds and flaked almonds, then 10g blue cheese.

Well, libres on and bedding in. Will activate it Sunday morning.
Weighed on my own scales for first time in 3 weeks expecting a gain but had stayed same. Doesn't explain why trousers too tight.
 
0630-0700 2 double espresso with double cream
1100 Kong Strong sugar free caffeine drink
1200 100g Lidl smoked sausage with cheese (2.6g carb)
1530 cortado (Costa) - maybe 3g carb?
1700 Kong Strong sugar free caffeine drink
1930 Chicken Thuriwala with mushroom instead of potato. Bit of pickle. Estimated 10g carb
2100 - 2200 2x zero sugar Salute lagers
2230 one large rum


Total somewhere around 17-18g carb max. Still in (moderate) ketosis.
