What have you eaten today? (Low carb forum)

B: ff greek yog with berries and seeds
Lovely walk, lakes, sunshine, ponies. Passed a pub and 20 minutes later decided to turn back to it, based on "why not?"
L: white wine with soda. Smoked mackerel niceoise salad. Good simple ingredients but not particularly well put together. Loads of whole anchovies and loads of capers. At least it meant I could avoid most of the new potatoes.
Having walked passed several ice cream vans, pleased I only had a mini almond magnum when back home.
D: steak with broccoli and green beans. 1 sq 85% and half a nut bar. 1 tiny taste of hubbys cheesecake.
 
How can I be 56 post behind? Crikey!
Today in brief:
B- scrambled eggs, smoked salmon, avocado. Loads of black coffee.
L/D- roast leg of hogget, cauli cheese, roast broccoli stalks, puréed swede and garlic stuffed mushrooms. White, then red wine v
Supper- DGF cake and black tea ( finally getting used to it without milk)
 
Had a filled mystery lettuce leaf left over from yesterday, added another one with celeriac mayo, and a slice of LC bread with 'zwiebelmettwurst', raw onion, and a fried turkey egg with cheese.

When you do the celeriac in mayo like that do you just grate it raw or do you cook it in some way first. I’ve never tried it but have seen them in the grocery store. I think it’s time to branch out.

I just grate raw and add mayo, salt and pepper, nothing else!

In the Netherlands the storebought version (selleriesalade) is very common, and the celeriac in that is blanched, so that's a possibility as well.
Never tried it though, the raw way was my favourite breakfast topping for bread when I visited my grandparents as a child, so I never saw the need to change the recipe. :happy:

Not yet, but when I get around to it:

Breakfast will be a chicken mayo with a RyVita cracker.
2nd meal will be a sort of moussaka made with the vegetables left from the tagine.

The GP prescribed Laxido, along with s tablet called Bisacodyl which I have tried to take, but the tablet result was just awful - that was a couple of weeks ago and it took me days to recover from it. I have held back on taking the Laxido because when I have taken similar products in the past I have ended up with serous headaches due, I think to the sweeteners they contain. However, this one only contains maltodextrin, which should be allright. It wasn't. Yesterday I had the first serious headache I have had in ages. And it has had no other effect either! The taste was dreadful and I had to take special measures to get it down (take a breath, hold it, drink, breath out - hold another breath, drink and so on).

Sunday 9 April - bed 7.3 FBG 7.9. Well, I was not having a busy day, other than instructing hubby how to do things.

B. TAG and a bit crustless quiche

L. 2 slices of SRSLY fruit loaf with butter

D. Usual campari and soda. Roast lamb, cauliflower cheese, asparagus, 1 small boiled potato, mint sauce. CC little chocolate pot.

Took the strapping off my ankle for bed. No swelling now, but a twinge remains.
 
Glad the swellings gone down @maglil55 , must be a relief to get the strapping off even if just for bed.
I’ve realised I’ve been letting things slide, too much snacking and too many carbs, even if each item is low carb, it’s been adding up to too much. Back to tracking on the trusty Carbs&cals app.
B- 2 tuna melt muffins and a spoon of h/m sauerkraut.
L- leftover very small portion of lamb ( I’m with Mr PM @PenguinMum - lamb’s never as nice next day) with leftover veg - cauli cheese and swede. DGF cake.
D- feta cheese baked with assorted veg ( broccoli, red onion, courgette, red pepper and a couple of cherry toms) then all mixed together at the end. Daughter has this on pasta but it’s just as good without.
 
@maglil55 pleased swelling going down - meanwhile make the most of having a rest.
First thing a Small amount of kefir with sprinkle of pomegranate peel powder and an Apple peel.
For both meals had rest of yesterday's roast Chicken, range of salads and kimchi - had small portion at lunchtime and then bigger portion at 5ish along with the additions of two very small new potatoes pre cooked and open frozen and then cooked from frozen in air fryer with small amount of olive oil plus glass of dry white wine. Planning some 100% Montezuma s chocolate with mint oil with my decaffeinated coffee in a few mins.
 
B: 3 rashers back bacon and 2 fried eggs on 1 slice HiLo bread
L: at family who finally seem to getting low carb. Hard boiled eggs, ham, cheese, avocado, cold sausages, salad. Bread and New potatoes for the carb eaters. Pud was cream with berries, meringue nests for the carb eaters.
Hot cross buns were offered later, I refused.
D: 4 seedy hm crackers with a bit of pate, bit of cheese and spoonful kimchi. Cc chocolate pot. Small white wine with soda
 
Yesterday, I made moussaka - just a small dish of it - I didn't want to have any more leftovers to use up. Having made it, and put it into the oven, I realised that I had forgotten about the cheese sauce that should be in it - I had the sauce, just omitted to put it in. So I had an unnamed aubergine and vegetable dish, turned out onto a plate and covered with the cheese sauce (just double cream with cheese grated into it and melted). It was actually very good but I only used half of the sauce so I do have some leftovers to use up.

Breakfast today: slightly spicy vegetable soup. All the extra veggies from making meals in the last couple of days. Harissa added. Followed with a slice of quite under-ripe honeydew melon.

2nd meal will be lamb, some courgette slices and some roasted celeriac. Perhaps some cauliflower rice, or mash.

BG isn't going down as far as I wanted, as quickly as it did last time. 9.1 at 4.30 am, 10.9 before breakfast.
 
Just black coffee until midday.
L- leftover cauli cheese with ham. 2 100% Hotel Chocolat batons.
D- babysitting this evening so needed something child friendly. DD keto ‘Swedish’ meatballs is always popular, although they asked for pasta rather than cauli mash IMG_2249.jpg

mid pm I tried the Seriously Low Carb fruit loaf - mentioned by @maglil55 - I really did like the slice I had from the freezer which I toasted and buttered, similar cinnamon smell and taste to hot cross buns.
Dinner a couple of lamb chops with salads and small glass of red wine followed by LC warmed blondie.
@DJC3 your diet doctor keto Swedish meatballs look delicious I keep thinking I should make more DD recipes think I've become lazy repeating a series of LC meals that work for me. I used to be a lot more experimental.....

I’m the same with repeating meals, so every now and then I go back to DD. They have so many good recipes I just forget about.
I also love that SLC fruit loaf but daren’t buy it again, it lasted all of 2 days before. Even with freezing, it toasts so quickly I can’t be trusted.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and phd bar.
Skipped lunch.
Mid afternoon: black coffee and DGF millionaires shortbread.
Dinner: Liver and onions with carrot and cauliflower.

I think I must be the only person never to have tried DGF, SLC or any of the other baked LC stuff.
