I’ve had 2 large coffees with double cream and cooking in the oven right now are sausages and a few celeriac chips which is my only meal of the day. I’ve managed 22 hours fast, if you don’t count the coffee….which I haven’t! :D Just checked my BG before I eat and it’s 5.3mmol/l

Breakfast small portion of kefir
Lunchtime mushroom omelette followed by 100% chocolate and peel from one Apple
Dinner starter of ACV in water and a few vegetable crudites then 100% burger in LC roll and salad with glass of red. LC cake and decaffeinated coffee
Away from forum next few days will be back at weekend after youngest sons wedding.

Well done on the 22hr fast @MissMuffett , I bet those sausages smell amazing.
I forgot to post yesterday and can’t remember what I ate now. Today I had
B- fried eggs on marmite (SRSLY) toast.
L- large leafy salad with tuna, h/m mayo, feta and sauerkraut. Rhubarb, yoghurt and a grating of 100% choc.
Snack! I found an old bag of dried apricots, took them outside to throw for the birds and astonished myself by eating 4 before I knew what I’d done ! They were lovely but BG rose to 7.7 at 1 hr.
D- lamb and coconut curry, dahl, cauli rice and a glass of dry white.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: ribs with roasted veggies.

I finally went for groceries today, very happy and so are the guinea pigs!

Not sharing what I ate yesterday, while it was perfectly low carb and assumably pretty healthy as well, I don't want anyone making the mistake of trying to replicate that meal. Still, it filled me up.

Today was a quick, easy and very tasty meal, guaranteed to ward off the vampires for days. :joyful:
Onion, shawarma meat, bell pepper, mushrooms, plus lots of garlic and some spices, with zaziki.
Not even my own zaziki, Lidl has it as a special at the moment, big tub, cheap, and almost as low in carbs as plain yoghurt. Did add some extra garlic though.
Not as good as my own zaziki but definitely not bad, and considering the work I didn't have to do I'm perfectly happy with this!

It's a bit like Huevos Rancheros, but the egg is scrambled and the tomato less prominent. To be honest, I prefer Huevos Rancheros but the eggs are easier to get right in this one.

4 large ripe tomatoes
Green peppers, about ¼ lb, preferably a slightly hot variety or a mix of green peppers and 1 mild chilli
2 spring onions, or 1 small onion
2 tbsp vegetable or olive oil
Salt
1 tbsp butter
½ tsp ground paprika
4 eggs
A little chopped parsley, coriander or chives, to finish

Method
  • Cut the tomatoes in half and grate them; discard the skins.
  • Cut the peppers in half, discard the stems, seeds and pith, then cut the flesh into thin slices.
  • Trim the spring onions and cut into chunky slices (or peel and finely dice the yellow or red onion).
  • Saute the peppers, along with a good pinch of salt, and the yellow/red onion, if using, for about five minutes, until soft.
  • Stir in the butter, spring onions, fry, stirring, for a couple of minutes more, then add the tomatoes, plus a pinch of sugar/sweetener, if you think they’ll need it.
  • Simmer gently until the colour of the tomatoes darkens and some, but not all of the liquid has evaporated.
  • Beat the eggs.
  • Stir in the eggs and cook, stirring, until the mixture has firmed up slightly, but not entirely. Top with herbs, if using, and serve with bread of your choice.

Mid morning, 2 hard boiled eggs.
L last chunk of Kentish blue.
Mid afternoon, succumbed to reduced price chocolate cookies. Emotional eating at its worst. Know why I did it but still couldn't stop myself

B: Coffee with whole milk because the cream got delivered with a broken lid, boohiss. Aldi version of a Grenade bar.

L: Gregg's vegan sausage roll and some cheese. Eaten in the car before taking the kids swimming. The vegan sausage rolls are slightly lower in carbs than the regular meaty ones (22g for vegan, 24g for meaty) and I tolerate them well.

S: More cheese, eaten in the car after swimming. Some sort of skinny cereal bar thing for 10.4g carbs.

S: Had a cheeky sample of our homemade elderflower syrup with lots of sparkling water and ice. Won't be doing that again as I went from 6.8 to 9.5 30mins pp, but back down to 7.2 1hr pp. Worth it though, as I foraged and made it with my eldest and he was really keen to try it together. I have 2ltrs of it that I need to give away.

D: Smoked aubergine, red pepper and courgette tagine-thing with cauliflower rice and a dollop of homemade cheese. Fancied dessert, had an Aldi protein chocolate mousse for 10g carbs.

I had a crack at making yogurt the other day in my Instant Pot but it wasn't too my liking, so I strained it and added seasonings. Much better this whey (intentional pun).

Very carby day today for me. I will do better tomorrow.

Monday 29 May bed 7.2 FBG 6.7 Post school run, I went straight to Physio, and I badly needed it! Overdone things with deep cleaning. Much better now.

B. TAG 2 slices if SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Bit of crustless quiche and later, 8 almonds.

D. Salad of prawns with Marie Rose, boiled egg, lettuce, tomatoes, avocado, almonds, whipped cheese, and the brown stuff is SRSLY LC pickle. Slice of SRSLY Bread and benecol spread. Didn't finish it, but I did have a CC little chocolate pot later.

Tuesday 30 May - bed & FBG both 6.6. Another busy day with the addition of school sports and the start again of after-school basketball! Glorious day again, though.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Slice of the butcher's roast pork and a cheese triangle. I'd squeezed in a trip to the butcher.

D. Garlic & parmesan chicken escalope (1.5 actually), wilted spinach, santini minis, and a Portobello mushroom. Moretti 00 (no Peroni). CC little chocolate pot.

Looks great. Is the crumb just parmesan and garlic powder, fried?

Yesterday's food went well until the evening when I felt very hungry and a bit fed up with the pain in my legs and I had one of the ice creams I keep for Em. Enjoyed it but regretted it all the same. Tut tut. It wasn't all that good to be worth spoiling my day's record for.
BG didn't go up by much though. This morning it's pretty high, but no higher than usual.

Not sure what to do about eating today but I must do some cooking because there is food in the fridge that is on, or just past it's date. Intending to make experimental pork mince "cakes" with spinach and some curd cheese; might need some egg to hold it together. Some lamb chops in there as well so will make a hotpot with those and as many vegetables as I can get into it. That'll see me through the next few days for meals.

I think I'll make Huevos Rancheros for breakfast. It may well be enough to keep me going all day. Definitely shan't be having another ice cream!
