One cheesey biscuit, one low carb muffin and an oatcake (BG dropped too low and nothing better to bring it back up than an oatcake) and cups of tea. Loads of food left over but I'm not hungry. I'll put it all in the fridge and see what tomorrow brings.

Today:

More often than not, lunch is our main meal of the day. We find we sleep better at night following a light supper. Today's menu included our favourite Sunday lunch-for-two whenever there is only my husband and myself to consider; baked whole sea bass stuffed with garden herbs, garlic and lemon zest, accompanied by vegetables in season.

B: Two eggs scrambled in butter with a generous dollop of double cream, sauteed chestnut mushrooms and a tomato, garnished with chopped flat-leaf parsley and seasoned with one or two grindings of black pepper.
Water to swallow tablets, followed by an espresso.

L: Baked whole sea bass, belly stuffed with fennel fronds, lemon slices and garlic, drizzled with olive oil and accompanied by asparagus spears topped with butter, broccoli and leeks.
Low carb pudding made with milled flax seeds, home made granola, unsweetened almond milk and cream.

D: Cheddar cheese salad made with lettuce, Romano peppers, celery, salad onions, cherry tomatoes, black olives, dressed with an olive oil and balsamic vinaigrette with garlic and mint, scattered with pecans and macadamia nuts roasted in butter.
Water to swallow tablets.

B- Fried eggs with cheese and avocado on a DGF wrap. A few shakes of Tabasco on top.
L- Ham and salad with h/m mayo in a DGF roll, followed by rhubarb, h/m yoghurt and seeds.
D- tiny airfried wild mallard breast. Served with parmesan mushrooms and @maglil55 ‘s spinach/Santini toms. Couple of glasses of champagne to toast my dad who would have been 96 today and loved champagne. View attachment 61191
That looks absolutely gorgeous. I've done some duck in the air fryer in the past too.

Such a nice thing to toast your dad - I'm sure he had a good like.

It would have been my mum's 70th birthday today, so I celebrated with buying her peonies and eating one of her favourite foods: asparagus.

The peonies have been a yearly thing since she died in 1997, they were my last birthday present for her. I'll get to enjoy them for 3 days, on the 7th, her dying day, I'll throw them in the water somewhere, share a beer with her, and take a swim to remember her, I like the tradition.

I had a very decadent serving of 6 very large asparagus with mashed chicken eggs and smoked fish fillet, and the creamy mushrooms someone told about a couple of days ago, very tasty!

@IanBish I love my airfryer and agree that duck breast cooked this way is absolutely fantastic. I never really liked it previously.
Todays food:
Woke up to an inexplicable FBG in the high 7s so decided to skip breakfast and leave meter at home and head to the beach with daughters and granddaughters.
Lunch spread out over a couple of hours was SRSLY roll filled with cheese and marmite, a h/b egg and a pack of Cheesies. Few black coffees from the beach cafe and a couple of very cold swims.
Dinner at home- spiced lamb chump chop with cauliflower and green beans ( sautéed with cumin and garlic and finished with lime juice and fresh mint) couple of glasses of wine. Later a decaf coffee with cream and DGF coffee

Been feeling under par most of the day today, probably a hangover and maybe maybe migraine? Worst was the tummy discomfort until I realised I was constipated (blush).
That meant my fasting plans were out the window as I tried berries and cream, then greek salad leftover from day before to get things moving.

Mid afternoon soem leftover tortilla chips fell into my mouth too.

D: roast chicken with roasted Mediterranean vegetables in tomato sauce. 2 squares 85% chocolate, and much later 1 cc chocolate pot with a spoon of cream..

Gradually feeling better over the day, and pleased I finally "went" late in the evening . Most days I love my new awareness of my body's needs (one of the positives of diabetes diagnosis and low carbing) but not so much when I don't know what's going on!

A substantial breakfast today as I knew I wouldn’t have time for lunch.
2 fried eggs, 1 slice buttered LivLife toast, 1/2 avocado and a generous spoon of turmeric and ginger sauerkraut.
Dinner- ravenous by now, had celery sticks while I was cooking. Chicken breast battered flat like @maglil55 did the other day, coated in almond flour, parmesan, garlic, herbs and cayenne. Served with fried mushrooms and toms, plus creamy parmesan cabbage.
Rhubarb with h/m yoghurt and seeds for pud then 1/2 a DGF cake with a cup of tea and dash of milk.

Happy birthday to your Mum, @ANTJE. We always take time to remember the important folks in our lives who can't be here any more. More often than not, it's at breakfast time, when we'll just take a minute or two to talk about them, and just remember.

Enjoy your sharing peonies. Ours are just coming into bloom.

Today:

B: Two poached eggs, slices of avocado and tiger prawns garnished with a knob of butter and seasoned with one or two grindings of black pepper.
Water to swallow tablets, followed by espresso.

L: Melanzane alla parmigiana, (aka aubergine parmigiana) using aubergine slices without breading or flour, passata, mozzarella, parmesan, olive oil, oregano, garlic and seaonings. I tossed some breadcrumbs with a little olive oil plus grated parmesan and sprinkled on top before baking. (That way, I can serve the topping to those who like it, but omit the breadcrumbs from my own portion.) Basil, IMHO, works best torn on to the dish at the last minute. Mixed salad made with watercress, chicory, Romano peppers, radishes, salad onions and black olives, dressed with an olive oil, basil and balsamic vinaigrette and topped with toasted pistachios.
Skipped pud. Water to drink.

D: Seafood salad made with crevettes, lettuce, fennel fronds, cherry tomatoes, celery and salad onions dressed with olive oil and a squeeze of lemon juice, parsley and garlic, scattered with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: chicken Balti curry with cauliflower rice.

@Antje77 what a lovely tradition and wonderful way to remember loved ones, you clearly lost your mum way way too early, very sad - like others I'm really fond of peonies they are magnificent flowers.
First thing kefir
Lunchtime fried a mushroom and an egg and served on LC bread followed by an Apple peel and a few squares of 100% chocolate
Starter of ACV in water and crudites with hummus
Dinner remaining roast Chicken with salads followed by LC cake and decaffeinated coffee.

(And how nice to see this other Antje again, it's been a while. :hilarious: )

Haven't had my evening meal yet (10 pm my time), so chances on having anything resembling a decent meal are diminishing quickly.
Too tired after a lovely but very long day, first picking up a friend and then driving to Germany for some shopping. Mainly tobacco. :sorry::bag: They raised the price again to a shocking 18.25 euros for 60 grams, and while I'm all for discouraging smoking, this doesn't mean I can quit just like that. Paid 7.40 for 50 grams in Germany and should have enough now to last me well into 2024.

Of course I had a round of the supermarket as well, where that sold some kind of warm, ready to eat dinosaur bone, juicy, tasty, and fatty enough to have to go back inside to wash my hands and face up to my ears after eating! :hungry:
It's called a schweinshaxe and I can definitely recommend, very cheap too!

I could only finish about half so the other half was to be incorporated in my evening meal, but I expect this will have to wait until tomorrow.

After all this, we brought my car for it's MOT and I borrowed my friends car until tomorrow when I can hopefully pick my car up again.
And to top this perfect day up, I coaxed my friend into borrowing his two dogs until tomorrow so I'll have 4 dogs for the night! :happy:

Antje77, that's such a lovely way to remember your mum.

B: Frozen blueberries, ff greek yog, homemade lc granola. Coffee with cream.

Finding that I rarely drink the entire coffee these days so I need to start making a smaller cup.

L: Emergency vegan Greggs sausage roll while we were out.

S: Pistachios, chunk of chedder.

D: Coconut chicken curry, cauli rice, almond flour waffles instead of naan. I mixed nigella seeds and some dessicated coconut in and they were reminiscent of naan. I need to add coriander next time.

Breakfast: salmon mayo with some lettuce to wrap it in. Slice of wholemeal bread out of the freezer, toasted and buttered.
Tea and black coffee, cold, which is the only way I really like coffee.
2nd meal: lamb hotpot on more of the bread - this time no butter.

B G has been falling all day and I've had to keep on taking things to try to get it back up (should have hung on to those oatcakes after all). The bread was taken out of the freezer in case any of my Sunday guests wanted it - they didn't so I have several plastic wrapped slices to either use or throw away. I would put them out for the nesting sparrows and starlings but when I did that with something on Sunday, 2 huge hooded crows arrived from nowhere and scared them all away. I expected BG to be relatively high after breakfast because freezing bread doesn't usually prevent the rise. That didn't happen and I had to keep snacking on bits and pieces, including fruit pastilles, just to try to get it up. I did have some more bread with the lamb because there was lots of gravy to soak up and the same thing happened this evening. Currently it is still hovering at 3.9 or 4 and I can't go to bed until I can get it to go up a bit. I did think toast, but that doesn't seem to have made any difference during the day. Maybe a drink of warm milk will do it.

Schweinshaxe - is that a bacon hock? It looks a bit like it. They sell them in UK uncooked but these days I can't get them unsmoked and the smoked ones are really salty and not really very good to eat - allright for making soup and then eating the meat once some of the salt has cooked out but not for roasting, which is what my mother used to do. 2 of those fed 4 of us. Delicious! And that one looks delicious too.

Forgopt to add that one of the things I snacked on was an ice cream. Em was having one, so I joined her. She had the last of the mango ones and I had a "crunchie" something or other. Yuk, it was horribly sweet. Probably much sweeter than the one Em had. Shan't do that again.
