What have you eaten today? (Low carb forum)

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes, seasoned with a black pepper.
Water to swallow tablets.
Espresso.

L: Courgetti con sugo di melanzana made with aubergines, celery, carrot and onion, oregano, canned tomatoes, garlic, butter and spiralised courgettes, topped with grated Parmesan.
Salad using lettuce, watercress, Romano peppers, celery, salad onions and black olives, dressed with an olive oil, oregano, garlic and balsamic vinaigrette, topped with toasted almonds and pecan halves.
Raspberries and Greek full-fat yoghurt.

D: Seafood salad made with brown shrimps, mussels, lettuce, fennel fronds, celery, cherry tomatoes and mustard cress with a dollop of aioli for dipping, topped with parsley and toasted pistachios.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: salmon fillet with peppercorn sauce and veggies.

B: ff greek with blueberries and strawberries. Then a second helping because hubby didn't want his and I was still hungry. Trouble was there were 5 grapes in his.

Long walk round some gardens. Their cafe had no low carb options and I hadn't thought to pack anything. Ended up with a savoury scone with cream cheese. Came with 4 pats of butter and a large amount of the cheese so hope the fats offset the carbs. Iced coffee
Later a short swim, haven't been swimming for years and found it hard work at first. Got a bit easier but bet my arms ache tomorrow.
D: a bag of pork crunchies, salmon, salad and home made coleslaw. Red wine.
Dog walk down to beach, and vertical climb back up. About 45 minutes total
 
Breakfast: a couple of slices of Lorne sausage and tea.

2nd meal: will be braised cabbage with some roasted veggies mixed in and some roasted pork belly chopped through it.

Very tired today because I slept so badly with my bandaged legs overheating and aching. At least my ankles don't hurt so much due to the support, but my knees hurt more. Can't win!
 
Shortbread cooling, oatcakes baking. And that's it - I am not going to overdo it today. I keep telling myself that people come to see me, not to eat my food. I don't really believe it, but that's what I tell myself. (Might make some little bits to go with it tomorrow - pancakes? egg or chicken mayo sandwiches? Not much in the way of salad to go into the sandwiches though, still tomatoes and cucumber and spring onions ....);)
 
Evening all

Today:

Water to swallow tablets
Espresso.

L: Packed lunch made with leftover mushroom and spinach frittata, lettuce, Romano peppers, celery and cherry tomatoes dressed with an olive oil and balsamic vinaigrette. plus almonds and hazelnuts.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, fennel fronds, celery, cress and vine tomatoes, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
FBG this morning was 7.2
Breakfast 2 scrambled eggs with butter on top of 2 wholemeal toast coffee ( 33carbs )
Chicken salad sandwich couple of strawberries and cream (34 carbs )
Piece of stilton as a snack .
Evening meal was ratatouille with grated red Leicester cheese ( 18 carbs )
Drinks all day as usual lots of water and a herbal tea . Total carbs roughly ( 85).

Mid afternoon: black coffee and a carb killa.
Dinner: cheese, tomato and chicken pizza (made with a Low Carb Food Co base) with coleslaw.

B: 3 supposedly hard boiled eggs, but they were soft. Added ham, butter and salt until edible.
90 minute Coast walk (ie up and down, up and down and up and finally down!) 30 minutes Beach walk
Earned half a small ice cream and a cup of tea.
30 minutes walk back home again.
L: salad of coleslaw, lettuce with salmon and ham. 2 sqs milk chocolate
D: Sea bass and fennel salad. 1 glass white wine spritzer. Grazed at a cheese board. 1 small glass red wine
 
Off on hols this morning.
Black coffee until 11am then a packed lunch of DGF roll filled with soft blue cheese.
3pm DGF brownie.
6:30 meal at our hotel. They happily swapped out the carby aspects so I had a beautifully cooked rump steak, mixed salad, coleslaw and flat mushroom. Red wine to drink then a decadent brandy to follow.

Where are you going?

I had a very summery salad meal today.
That poor plate must have been shocked by all the greens, having started its life with Goonergals mostly carnivore meals.

I'm really glad she gave it to me, I love remembering people through using their everyday things.

Thursday 22 June bed 7.4 FBG 7.2. Today, the eldest grandson went down with the lurgy! I had him at ours (he slept mostly). The youngest returned to school, but his mum had to collect him early as, guess what, he was still not recovered! Hubby, thankfully, is recovering (and I am doubling my disinfection efforts).

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. After Aqua. A bit of crustless quiche

D. A repeat of yesterday. The rest of the veal meatballs mix with 2 slices of SRSLY bread to mop up. CC Little chocolate pot with raspberries.

Decided to put together some savoury things for my guests, after all. Mainly because, if I don't, I will just have to sit and watch them eat. Made some egg mayo last night and poached/steamed some chicken breasts on top of my cabbage. Will make up come chicken mayo later. There will have to be some kind of salad to go with that so am in the process of making cabbage/celeriac/apple slaw and will make a cucumber and tomato salad. All easy enough to do and there will be enough for everyone to have some of whatever they want. That will be my 2nd meal of the day. Now have to think about breakfast.

For that, I'll have bacon and egg - first time in long enough.
 
Friday 23 June - bed & FBG both 7.8. Both boys are off school , but they are much better. Got my shopping done, although I ended up at Tesco another twice thanks to son!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Slice of deli roast pork. Mix of Tesco protein creme fresh, low carb granola, and a few raspberries. I noticed this in one of my many trips to Tesco today. Tesco own brand, high protein, low carb/sugar creme fraise. Only 1.6g carbs, 1g sugar per 30 mls.

D. Kebab again. Peri Peri chicken & veggie kebabs of peppers, onion, mushroom, aubergine. Lettuce, tomato, cucumber & mayo. CC Little chocolate pot and raspberries.

As usual my plans went awry. Before making my breakfast, I decided to make some large croutons to go with the salads and ended up just grazing on the offcuts, so I didn't have breakfast.

Everything ready for my guests at 2 pm (just about killed me doing it, even with extra painkillers) - and still ready because it's getting on for 4 pm and nobody has arrived. I did phone to try to find out but just got the answerphone.

BREAKING NEWS: Just had a call-back from the person who was arranging to bring them here in her car - she forgot all about it and didn't arrange anything. Ah well - my one actual meal today is all ready for me and there's lots left for Emily to take home on Monday.

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley and asparagus spears with a generous knob of butter, all seasoned with one or two grindings of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in chopped celery and oregano, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese. Salad using watercress, chicory, avocado, radishes, oregano, salad onions and black olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with macaadamia nuts roasted in butter.
Skipped pudding,
Water to drink.

D Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions, plus aioli for dipping and topped with toasted pumpkin seeds.
Water to swallow tablets.
