What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: the other half of yesterday’s pizza, cold with salad.

B: ff greek with seeds and blueberries
L: lettuce wraps of cream cheese, gammon and herb garlic cheese. 2 cherry tomatoes. More yoghurt and blueberries
D: 2 beefburgers with salad and coleslaw.

Very lazy day exercise wise, just eh supermarket shopping
 
Morning all. I think yesterday's food is best forgotten but learned from! Today will be slightly different, my 2 granddaughters and my grandson are having a picnic at my friend's house (a bit confusing but she is one of my granddaughter's other Grandma). I have cooked chicken drumsticks, chipolatas, quiche. Put all the salad stuff in vinegar water, boiled eggs. We have hummus and coleslaw so I don't think anyone will go hungry. There are also crisps and cakes for the young ones. Hopefully, foodwise it will be a good day for me. Happy Birthday @Ryhia. Have a super day folks :joyful:
 
Usual breakfast kefir with seeds
Lunch two eggs with slice of LC toast then a couple of squares of 100%chocolate
Dinner starter of ACV with water then usual Friday salmon with lemon butter and asparagus and glass of red wine then LC cake and decaffeinated coffee.
Is it a kefir drink you have and do you make your own?

I used to make kefir going back a few years. I made it with full fat milk, which I guess with low carb high fat is quite a good option to consider going back to :)

Lunch was cold plate two slices ham, chopped salad and spoon cheesey coleslaw.
Supper was Peking Duck shredded with cucumber and spring onions smidge of sauce in two of the Sainsburys B Free high protein wraps which tasted amazing and a real treat. They are 4g per wrap and tbh I should have stuck to one but I got a bit carried away with the excitement.
@Annb my heart sank for you after all the effort you put in and your guests didn’t come. I hope you have a good rest after all that.

Does anyone know what the salad dressing/dip is called that is made with mayonnaise and grated cheese? I'm sure I've heard of it somewhere but don't know where. I made up a recipe for it yesterday with 1/3 mayo, 1/3 yoghurt and about 1/3 grated cheddar plus some onion powder. It was pretty good, but I'd like to find an original recipe if I can. I don't think it sprang from my imagination.

I found an article about it (which also has a recipe). The only time I've used it was to make cheese/mayo on toast. I just mixed Herman's, grated cheese, paprika, put it on toast, and grilled it. I've added some mustard to it before. It certainly gives toasted cheese a whole different taste, and it's quite creamy.

 
Saturday 24 June bed 7.9 FBG 7.1. We did get out! We feared the eldest was having a relapse, but he made it.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Having gone to try to get DIL a dress she'd been looking at, I was hungry on return. Thankfully, my supply of SRSLY bread had arrived. Sandwich with deli roast pork and coleslaw.

D. I was driving, so I only had a Peroni 00. To start, salt & pepper squid with chilli, lemon, and garlic mayo. Main, veal escalope marsala (surprisingly, it didn't do any damage) with a bit rosemary saute potato, and peas done the Italian way with pancetta and spring onion. I even had an Affogato. One scoop of vanilla ice cream with an espresso poured over. Both boys are eating again, and the eldest was very enthusiastic about their gluten-free selection. Both Hubby & DIL got the desserts & song they do for birthdays these days. Lovely meal. A welcome break!

Thanks for that @maglil55. I think the one I made was a bit thinner (meant to be a salad dressing) but a bit more cheese would thicken it nicely as a spread for grilling. The paprika would make a nice addition. Might just keep experimenting with different flavours (cayenne/chipotle/garlic?)

@Grace04 're kefir yes make my own with organic kefir grains and organic whole milk - it goes quite thick and when mixed with seeds thickens it more - I mix some with seeds and put back in fridge overnight ready for morning and it tends to thicken it nicely.if not in production as been away for example I tend to buy kefir yoghurt such as Waitrose's own gut health variety.

Lunchtime both days two fried eggs with slice of LC toast and a few squares of 100% chocolate
Dinner Saturday lamb curry and LC roti
Sunday cold roast chicken and salad
Both days glass of red wine and puddings a few strawberries and yoghurt.
My garden strawberries are almost over but notice my raspberries are starting to ripen and these are definitely my fave berries.
 
Evening all

Today's plans included a family picnic. I made spinach and goat's cheese pie to pass round. My husband looked at the forecast and decided we would have 'gazpacho' weather. (My husband's party piece is gazpacho, especially welcome in hot weather).

B: Two eggs scrambled in butter with a generous dollop of double cream, sauteed chestnut mushrooms and a tomato, all garnished with chopped, flat-leaf parsley and seasoned with one or two grindings of black pepper.
Water to swallow tablets
Espresso.

L: Spinach and goat's cheese pie, using almond flour, sesame seeds, oat fibre, butter and an egg for the pie crust and spinach, garlic, nutmeg, eggs, sliced goat's cheese and a little grated Cheddar for the filling. Salad using cucumber, salad burnet, salad onions, rocket, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.
Gazpacho to drink.

D: Seafood salad made with king prawns, brown shrimps, lettuce, sweet cicely, Romano peppers, celery, cherry tomatoes, salad onions, oregano and black olives with a dollop of homemade mayonnaise, topped with pecan halves and macadamia nuts roasted in butter.
Water to swallow tablets.
 
9:00 am open air, but not cold water, swim. Thought I'd being doing lengths for ages but was only 15 minutes!
Was lovely to come out to a shower, a cwc and a pre-prepared breakfast of ff greek with blueberries and seeds which had thickened nicely
Late lunch: chicken thigh, few mini sausages, cold meats, cucumber slices with garlic cheese on. 2 sqs 85%
4pm a dash to the beach before the cafe closed. A tub mint chic chip! Well i am on holiday. 30 minutes walk in the shallows. Lovely.
7pm steak with baked peppers stuffed with tomatoes and anchovy. Dessert was sliced strawberries layered with Whipped cream and yoghurt topped with 2 smashed ginger biscuits (between 4 of us) served in wine glasses . Looked very good, tasted even better.. several glasses of red wine with soda.

Our rhubarb is still cropping well, but our strawberries are just beginning to redden.

A busy couple days here in the Breathe hacienda; trying to get a few things finished before MrB trundles off for a couple of days to play in a golf competition.

Dinner this evening was a fabulous lamb chump from what must have been a mutant super lamb. Thoroughly delicious. Not the full Sunday roast, but plenty much on a busy day.

Our raspberries seem to have taken a hit from the odd weather last few seasons. Usually start picking a few mid June but have manged just 5 so far. No sign of maincrop strawberries but the alpines have some berries, not as many as usual.
BUT I do have 2 figs that will ripen, second time in 15+ years, and yes I will eat them no matter what they do to my bg.

BUT I do have 2 figs that will ripen, second time in 15+ years, and yes I will eat them no matter what they do to my bg.
Gardening in UK is never simple

We are yet to have any fruit on the affectionately named the Fig Twig, although, having moved it last year it seems to like it's new place in the world.
