What have you eaten today? (Low carb forum)

Painting our shed, which has just had a new roof as it was leaking, was today's job so started painting early - just black coffee until lunchtime
Lunch hm hummus with some celery and radish plus half a keto roll buttered served with ham and beetroot kimchi, then a few garden berries with yogurt.
after lunch applied second coat of paint on shed
Dinner started with ACV in water then oven cooked salmon in lemon butter, cauliflower cheese ( quick method softened the frozen cauliflower florets in microwave in ovenproof dish then added glug of double cream and sprinkle of grated vintage cheese and seasoning of salt and pepper cooked in oven at same time as the salmon) and a few garden peas plus glass of red wine then LC cake with decaffeinated coffee.

Happy with shed looks good and more importantly it's waterproof again hopefully.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Food dr bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: pea shoots, prawns and garlic mayo on a LC roll with coleslaw.

Wednesday 26 July - bed 7.5 FBG 7.8. Another chaotic day. At least we got until 8.10 am. before the chatter started. We then got another 40 mins before bickering commenced. Got them fed, then it took about another hour to persuade them to wash and dress. House meantime was an obstacle course!

B. TAG and 2 slices of SRSLY toast with ham and mustard. Benecol dairy free.

L. No chance!

D. After collecting Mum & Dad late afternoon, taking them for a quick shop, then home with boys..

Gin and Zero (OK, I had two!). Pork loin chops, with my old favourite, spinach, tomato, mushrooms. CC little chocolate pot. 1/2 a fulfil bar.

Grandson had his trial this evening and is now admitted to the swimming club. He can do all four strokes, but they said his breast stroke is exceptional for his age. Both boys are excellent at breast stroke. He'll train early in the evening on Mondays & Wednesdays.

Thursday 27 July - bed 7.7 FBG 7. Aqua day. My legs were acting up, so the aqua helped. I also had a spa session, which was wonderful.

B. TAG and 2 slices of SRSLY toast with ham and mustard. Benecol dairy free.

L. Nothing got caught up ferrying family to tge trampolines.

Friday 28 July - bed 7.5 FBG 7.9. I had the worst attack of vertigo yet this morning. It happened to you @DJC3, too recently? The room was spinning quite badly when I tried to get up and accompanied with severe sweat & nausea. After a shower, Hubby had to help me downstairs. I'm still not 100%.

B. Water

L. Water, but late on, I had 2 slices of SRSLY toast with ox tongue and a cheese triangle.

D. I settled on crispy squid and salad as it was easy for Hubby to make. CC little chocolate pot. Yet more Water.

As you can imagine, I didn't venture out today. I just hope this wears off as they phoned today to say my new car will arrive next Thursday.

Back from a week in the Emerald Isle visiting bro and SIL. Bro is a very good cook so had some great meals including roast chicken on arrival with at least 5 veg. Swerved the roasties but couldn’t swerve his excellent gravy. Another night some excellent local lamb cutlets and selection of green veg. Local strawberries. Bbq night with interesting salads incl feta, blanched broccolli and peppers from a jar and olives. Home grown peas in a salad with chick peas, finely chopped leftover veg from another meal. Supper out was Halibut with a lemon butter sauce hint of cardamon, various veg followed by cheese selection plate. One memorable lunch was warm goats cheese salad with walnuts.
So back to reality.
Yesterday usual brekkie of slice LC toast, butter, tea.
Lunch wasn’t hungry so just had two chunks cheddar with a few h/g cherry toms.
Supper was panfried lemon sole fillet with scallops on side. Green beans.
Today just had same brekkie.
Lunch will be a small plate prawn salad.
Supper with t/a Tandoori King Prawns, cauli bhajee.

I don't think I ever had crispy squid, how do you make it? (Assuming I can even buy squid that is.)
I get the squid from the fishmongers (who do all the prep on the tubes for me!). I open up the tubes, cut a criss-cross pattern , and cut them into rectangular strips. Squid can sometimes be chewy, so a soak for about 30 mins in a bowl of milk with a teaspoon of bicarbonate in it helps to tenderise them.

Pat them dry when you are ready to cook them. Dust with something like oat fibre (just a light dusting), dip in beaten egg, then straight into a mix that is predominantly rough ground salt and pepper with some (not a lot) almond flour/milled flax/sesame seeds in it. You don't want a thick coating on it, and it helps to pop the coated squid in the fridge to "set" before you cook them. Cooking is quick - fry in oil. They will curl and crisp. I've also done them in the Air Fryer or oven (about 10 mins for that as they would be from my frozen batches). When I make squid, I tend to make a few servings and freeze the other batches.

I've attached a link so you can see what I'm on about with cutting them up. The criss-cross bit is towards the end as they show you all the prep (which I can do but the fishmonger is quicker), and the cut for calamari first. The milk/bicarbonate "bath" is a trick I got from my many trips to Italy. Aioli goes really well with it.

It is also possible sometimes to find ready prepared squid tubes in frozen food cabinets. They tend to be small tubes, whereas I can get larger tubes at the fishmongers.

PS vertigo is still with me, but at least there are no sweats/nausea now.

2nd meal will be the rest of the lamb shank stew from yesterday.

My meals always come across as so plain and unexciting when compared to everyone else's. I really ought to make the effort but I can't be bothered most of the time. Not just for me. Happy enough to cook if someone else is going to eat it though.
 
Friday 21 July - bed 7.6 FBG 7.1. I've had a really busy 5 I'll try to catch up now. All I remember about last Friday was journeys to recycling and lots of shopping with son, and transporting hubby to the football and back!

B. 2 slices of SRSLY toast with deli roast pork and vegetable salad. TAG and Benecol dairy .

L. In-between journeys, 2 slices of SRSLY bread mad into a bacon sandwich.

D. The only thing I had time for! Another hot dog roll with onion, crispy bits, mustard, ketchup and a butcher's sausage. I also stopped for a coconut cappuccino while out.

Saturday 22 July - bed & FBG both 7.9. The start of the town's festival week. Hubby was feeling unwell. I was transporting son & family to the local sports centre as the youngest grandson had decided he was swimming in the Festival Gala - 50 metres FreeStyle. I knew he'd probably be fine as he is fast. He just lacks the dive in and tumble turn. He was up against Club swimmers and came in 4th. He could have been 3rd if he'd tumbled. Good result, though. He got a medal, got to meet a former Commonwealth Swimmer, and came home to an email to Mum from one of the coaches asking for him to trial for a swimming club.

B. L. & D. Same as yesterday. No salad with dinner and no cappuccino. It had to be quick as I was going to sit with the boys while Mum & Dad went to another festival event. They omitted to tell me it didn't finish until 11.30pm!

Sunday 23 July - bed 7.6 FBG 7.5. Just relaxed after yesterday.

B. TAG and a SRSLY sandwich with egg and bacon on it. Benecol dairy free.

L. Nothing

D. Usual campari and soda. The infamous rib eye that the woman in the butcher's didn't want as it had fat in it. Portobello mushroom, peas, tomatoes, mustard, a few "real" chips. CC little chocolate pot.View attachment 62281

I've just made some experimental Lorne style sausage (just square sausage I supposed) with pork, turkey, suet and some ginger, onion powder and salt. Had a tiny pate from it to check the flavour and now have a large loaf tin and a small loaf tin being pressed in the fridge. I think it will work. I believe the difference between this mixture and what I've made in the past (and been dissatisfied with) is going to be the added suet. We'll see how it goes. That'll be for tomorrow's breakfast. Then I'll slice it and put slices in the freezer for future use - if it holds together.
 
Missed a day due to Internet problems

Friday, skipped breakfast.
At a dance event so quite a lot of exercise and lunch delayed until about
14:00. Wetherspoons burger, asked for salad but still got served chips. Left the bun and most of the chips. White wine, but well watered down.

Mid afternoon, the Irrational Tempted Voice inside me leapt to the fore and ordered a choc and nut sundae instead of the small tub Sensible Me wanted. It was huge, managed to leave a good half of it. Old me could never leave food so at least that's positive!

Was so stuffed had nothing else except a handful of nuts and a white wine heavily watered down with soda water. Fair bit more dancing

Saturday, planned 2Mad
Breakfast: 2 scrambled eggs, bacon and mushrooms. Cwc cream ( but suspect the cream was the dreaded Elmlea)

Early afternoon, a white wine much watered down
Mid afternoon handful nuts and 2 sqs 85% dark chocolate.

This evening plan is fish at an Italian restaurant then more dancing and probably more wine.

BTW, there is plenty of water being drunk too.
 
Catch up day for me with lots of little jobs around the house and garden so treated myself to three meals today after a week of two meals a day. @maglil55 hope your vertigo is easing now and congrats to your swimming champ grandson.

5ish starter of hm hummus with some celery and radish crudites and glass of water with ACV then curry with LC roti and glass of gin with soda water just had decaffeinated coffee with a square of 90% chocolate.
 
Nice piece of white fish with stir fried veg for lunch. Scrambles eggs, ham, mature cheddar (that one will put hairs on my chest) avocado and a few salad greens, followed by Greek yoghurt and berries for dinner.
The jury is still out on avocado; I'm sure it's nutritious and has a place in a low carb diet, but as for flavour I'm not impressed. It's just a bland lump of soapy/waxy green and yellow stuff. Could be Soylent Green for all I know! ;)

I know how you feel. I tend to stick to straightforward things for breakfast (and lunch if I have it), and they are mostly the same. I used to spend a lot more time experimenting, but I feel I'm constantly chasing my tail these days.

Really? We hadn't noticed. We enjoy reading your meal plans.

Know how you feel though. Despite all the good ideas I've picked up on this thread, I don't think I'd take the same trouble if I were cooking for myself.
 
Evening all

We were engaged in an insect-finding foray for most of the morning. The weather wasn't conducive to the picnic we had in mind, so some of us retired to a favourite watering hole for a pub lunch.

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Aperitif: gin on the rocks.
Ploughman's lunch: Blue Stilton and salad. ( I swapped pickles and chutney with friends in return for some Farmhouse Cheddar. No takers for my granary bread though. We were each served with what looked like half a loaf!)
Skipped pudding,
Water to drink.
Coffee with cream.

D Seafood salad made with tiger prawns and mussels, lettuce, Romano peppers, celery, cherry tomatoes and salad onions with homemade mayonnaise for dipping, topped with walnut halves.
Water to swallow tablets.
 
Saturday 29 July - bed 7.7 FBG 7.5. Thanks for the get well wishes. I ventured out today with my son (I had to as supplies were getting low). At least I can walk safely today. I still have to avoid sudden movements with my head, but I'm definitely improving. I'm wondering if there was a bug involved, too, as I've never felt this bad with vertigo.

We're hoping that the swimming club discipline will improve the grandson's social skills and focus. I'm delighted he can focus on something he is really good at.

L. Late on again, a bit of crustless quiche.

D. A definite experiment - cabbage carbonara! I tend to find spiralled courgetti it too wet. Cabbage is not wet. I sautéed it down in butter, but otherwise, it was made the same way as carbonara. I liked it better than courgetti. CC little chocolate pot.
