Yes, I find courgetti to be too wet as well. I've given yp on the idea of substituting a veg for pasta or rice. I'd rather just acknowledge that it is a vegetable and use it that way. No reason not to make it in the style of carbonara or bolognese, or whatever but I prefer not to try to kid myself that what I am having is a carbohydrate when it isn't.Saturday 29 July - bed 7.7 FBG 7.5. Thanks for the get well wishes. I ventured out today with my son (I had to as supplies were getting low). At least I can walk safely today. I still have to avoid sudden movements with my head, but I'm definitely improving. I'm wondering if there was a bug involved, too, as I've never felt this bad with vertigo.
We're hoping that the swimming club discipline will improve the grandson's social skills and focus. I'm delighted he can focus on something he is really good at.

L. Late on again, a bit of crustless quiche.
D. A definite experiment - cabbage carbonara! I tend to find spiralled courgetti it too wet. Cabbage is not wet. I sautéed it down in butter, but otherwise, it was made the same way as carbonara. I liked it better than courgetti. CC little chocolate pot.

Edit: I saw a recipe on a keto recipe site which was promising "keto macaroni cheese". When I looked at it tghe instructions were to cut a cauliflower into very small florets and cook them normally then put them into a cheese sauce. To me, that looks like cauliflower cheese, not macaroni cheese.
Added a very hard, dry chunk of cheddar to the lamb shank stew to enhance the flavour and cooked it down a bit more. Went down very well.
