What have you eaten today? (Low carb forum)

Saturday 29 July - bed 7.7 FBG 7.5. Thanks for the get well wishes. I ventured out today with my son (I had to as supplies were getting low). At least I can walk safely today. I still have to avoid sudden movements with my head, but I'm definitely improving. I'm wondering if there was a bug involved, too, as I've never felt this bad with vertigo.

We're hoping that the swimming club discipline will improve the grandson's social skills and focus. I'm delighted he can focus on something he is really good at.

L. Late on again, a bit of crustless quiche.

D. A definite experiment - cabbage carbonara! I tend to find spiralled courgetti it too wet. Cabbage is not wet. I sautéed it down in butter, but otherwise, it was made the same way as carbonara. I liked it better than courgetti. CC little chocolate pot.

Yes, I find courgetti to be too wet as well. I've given yp on the idea of substituting a veg for pasta or rice. I'd rather just acknowledge that it is a vegetable and use it that way. No reason not to make it in the style of carbonara or bolognese, or whatever but I prefer not to try to kid myself that what I am having is a carbohydrate when it isn't.

Edit: I saw a recipe on a keto recipe site which was promising "keto macaroni cheese". When I looked at it tghe instructions were to cut a cauliflower into very small florets and cook them normally then put them into a cheese sauce. To me, that looks like cauliflower cheese, not macaroni cheese.

Added a very hard, dry chunk of cheddar to the lamb shank stew to enhance the flavour and cooked it down a bit more. Went down very well.

D: turned out to be prawn starter followed by pork on creamy mushroom sauce. 3 spoonful of friends rum baba and 2 shots of limoncello... well that blew resolve out if the window so ended the night (after 2 more white wines with soda) with 2 lc crackers . Now feeling bloated as was only a craving, didn't actually need sustenance
 
Just had some of my pork and turkey sausage with a fried egg for breakfast. Seems to have worked. I have kept some in the fridge for use tomorrow and have the larger "loaf" in the freezer to chill down for an hour to make it easier to cut into slices ready to be wrapped and put into the freezer properly.

2nd meal will be rib eye steak with some roasted swede and some cabbage.

Getting everything together to make Em's birthday cake later in the month. Having to get most from Amazon including flower making tools which I seem to have lost, maybe given away. Roses don't need tools, but the smaller forget-me-not shapes need the right cutters. I also seem to have lost all my small tools for shaping petals. Just as well to have new ones for use in future.

Before that, though, there are a couple of events to make food for. Need to plan what I need so that Neil can get it for me.

So after all those drinks and late night eating and even later snacking, I woke with a fbg of 4.8!!! My lowest for over a year.

It's good to hear you're making steady progress after a nasty bout of vertigo.

Courgetti: one way to reduce the moisture is to spread sliced courgettes out on a large plate, sprinkle with salt flakes and leave for 10 minutes while you get on with something else. Then pat dry with kitchen paper.

I have not found this necessary with courgetti, as I normally cook them in a sauce which, if anything, benefits from thinning slightly. It's essential for some recipes though, especially if you want to caramelise the courgettes. Omitting this step makes some dishes soggy, I'd agree.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a tomato, garnished with flat-leaf parsley and seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Baked whole sea bass, belly stuffed with French tarragon and garlic, drizzled with olive oil, accompanied by asparagus spears with butter and a medley of broccoli, leeks and red peppers with garlic.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Two squares Montezuma's Absolute Black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, fennel, Padrón chillies, thyme and a touch of lemon juice, with a dollop of aioli for dipping, topped with toasted pistachios and chopped chervil.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: chicken and coronation mayo on a low carb roll with coleslaw.

@maglil55 I really do sympathise re the vertigo. Until I had a bout a couple of weeks ago I’d no idea it was so debilitating. As you say, it’s the nausea and sweats which are worse than the horrible dizziness. I had prochlorperazine and I’ve no idea if it was the meds or it would have sorted itself anyway but like you I’m still scared of sudden head movements so I’m gliding along like a ghost! (Sorry that should all have been in the parallel thread).
Back on track: food today.
B- Cheesy scrambled eggs
L- pub carvery, thought it was pretty good but BG after was 7.4 I probably ( definitely) had too much cauli cheese which would have had a traditional roux sauce.
Dinner/tea- granddaughters staying for the week. We’ve been trying to cook all out meals together so they chose pesto toast. A nice simple recipe using shop bought ciabatta ( DGF roll for me) easy home made pesto, mozzarella, ham and tomato. Simple and delicious. Couple of glasses of wine and s few blueberries. I do this with aubergine as well. I still find courgette a bit "wet" though much as I like it.
 
Sunday 30 July - bed 7 FBG 7.2. @DJC3 I'm still improving, but it's still there. Getting out of bed requires careful movement!

B. TAG and 2 slices of SRSLY toast with ox tongue and a cheese triangle. Benecol dairy free.

L. A bit of crustless quiche.

D. Usual campari and soda. Rare roast beef, horseradish, 1/2 a roast potato, cobette, GF Yorkshire pudding. CC Little chocolate pot.

Managed to get to recycling with son at lunchtime. He did the unloading, and I stayed put!
 
B: 2 scrambled eggs, bacon and mushrooms. Coffee with cream (suspected Elmlea)
Late morning, peppermint tea
Mid afternoon, large handful nuts.
Feeling a bit nauseous and off, but so is hubby.
Dragged ourselves out in the rain to meet up with friends.
A red wine and tapas of squid, chilli and a small quesadilla later and I was suddenly feeling better, so had a portion of coleslaw too.

Last of our dance events. Celebrated with a white wine and soda, and then 2 sqs 85% chocolate as heading to bed.

Had my rib eye steak - just seared in a hot pan. It was a bit on the thin side, although quite large so it was done in a total of 3 minutes. I'd cut the swede into small chunks but left the cabbage as one very thick slice (about 1" thick). Since I intended to roast the veg together, I microwaved the swede briefly first, then just roasted the 2 veg and a lemon together in butter. It was all very good and there was a lot on the plate, but I ate it all and then regretted it because I was so full.

This morning's breakfast will be more of the pork and turkey sausage with a fried egg.

2nd meal will be chicken tagine, using chicken thighs Neil bought for me.
 
11 ish - Small amount of kefir to take my supplements.
1 - whilst out, two boiled eggs I'd packed to take with me plus a couple of squares of 100% chocolate
Mid pm half a square of LC cake
5 ish - left over roast chicken with salads and kimchi plus glass of dry white wine followed by a few garden berries with yogurt.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: salmon fillets, runner beans, cauliflower and peppercorn sauce.
