What have you eaten today? (Low carb forum)

B- cheese and mushroom omelette.
L- leftover cold slice of roast pork salad. Gk yoghurt with rhubarb and seeds. Few nuts.
D- Steak and mushroom pie made with fathead dough crust. Green beans & courgettes from neighbour’s garden and roast cauli. IMG_3168.jpg
@maglil55 what a stressful afternoon/ evening. You must have been so worried when you couldn’t locate him.
@MrsA2 I’d have eaten the lot too, sounded delicious.
 
Breakfast: 2 cold sausages, sliced lengthwise to give more caramelised area when reheated and 2 fried eggs - both of which I managed to break. Hate doing that. Should have coddled them.

2nd meal: will be cauliflower cheese.

Baking experiment today - told Alistair to expect treats on Monday. I want to try making individual Gypsey tarts (a Kentish traditional treat). They may not work well, but they will be edible. Very sweet schoolday memories but I've never seen them as small, individual tarts.

Actually, not even edible. Not my Mum's recipe, which used to work but one I got off the internet. Waste of time and materials. Twas ever thus with experiments.
 
Friday 4 August - bed 8.2 (thanks to late food & extreme stress, I reckon) FBG 7.2. @DJC3 - more frantic, I would say. All I knew was 1. He's not well. 2. I was to collect him. 3. I needed mindreading skills! Add to that, I was driving a brand new car, and there were still a lot of things I wasn't familiar with. I really didn't feel great today at all.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Nothing

D. I channelled an inner Antje, I think. I had things to use up and had to get a bit inventive. There were 2 of these SRSLY parmigiana stuffed wrap circles, 3 skinny hot dogs (mustard, ketchup & crispy onions, but no bun) , an Antje mix up! Courgetti, spring onion, parmesan, salt, paprika, beaten egg - a large Courgetti fritter.

To add insult to injury, the new car has Hybrid "coaching" and leaves details on your trips to improve your driving! Yesterday's hunt the Hubby trips had a lot of tips! 20230804_184525.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: avocado, prawns, mayo, leafy salad and two baby tomatoes.

1691260829081.jpegThe salady cover is a disguise for a Spanish Cream Cheese Attack Regiment, Lots of taste explosions. It was given support fire by a large ladle full of Yoghurt, Olive Oil and Mustard dressing. The battle was eventually won by my belly, supported by a pincer movement by Mr Knife and Mr Fork. It was hard. But someone had to do it.
 
Evening all

Today:

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Tuna steaks rolled in finely chopped celery and sage, baked with red peppers and aubergines, moistened with cream and topped with grated Cheddar cheese.
Steamed French beans with a knob of butter.
Salad using lettuce, chicory, vine tomatoes, Welsh onions and Kalamata olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with macadamia nuts roasted in butter.
Water to drink.
Strawberries and Greek full fat yoghurt.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with tiger prawns and mussels, rocket, avocado, cucumber, salad burnet, cherry tomatoes, salad onions and Halkidiki olives with homemade aioli for dipping and topped with toasted pistachios.
Water to swallow tablets.
 
Early yoga followed by grocery shop means easy to skip breakfast.

L: 2 eggs scrambled with a lots of shredded ham and a sprinkle of cheese.

Made some lc biscuits to take to an event. Used half the werthers recipe I posted a couple of weeks ago. Ate 2 before we left, and 2 while there.
We were joint hosts of an afternoon tea so everyone else was tucking into cakes and biscuits galore.
I did resist but as those 4 biscuits had about 8 werthers in, my tummy feels a bit rumble and bloated.

D:, didn't really need any but son had cooked "as you've been so busy today" so had to say yes. Chilli mince on vegetable stalk rice. Extra dollop of yoghurt as it was rather hot

Tomorrow its Stink Bomb Sunday. A roasted chicken with 3..........Yes 3 bulbs.......Not cloves.....Bulbs of roasted garlic. Cut the top off the bulb and drizzle with olive oil. The roasted garlic becomes sweet and soft. Rip off some meat and spread some salted garlic on it. It actually tastes amazing. But take a week off work or use a different bedroom. After I eat this my blood sugar sky dives to a normal level. Its just people then avoid me. I dont care. Its a fantastic meal. next day on some wholemeal bread with mayo. The garlic is then mixed into the mayo.

This made me laugh out loud, and true to my reputation I had the following evening meal:

I prepared some green beans that had seen better days with half a fried onion, garlic and some spicy chorizo I found in the freezer earlier this afternoon.

I thought to just put it in the microwave when I'd start to feel hungry, but found it didn't even cover half a plate.
So I made some cheese 'schnitzels' by cutting a thick slice of cheese and covering in egg - almond meal - egg - crushed pork scratchings before frying. :hungry:
It was supposed to be one thick slice but cutting hard Gouda doesn't go too controlled with a cheap potato knife. The potato knife was already dirty and I didn't want to dirty an extra knife. Which is ridiculous really, considering I have a dishwasher! :hilarious:
Two small cheese schnitzels taste just as good as one big one so all is well. :)

Hi All
So back to Thursday usual supper of chunky cod fingers with green veg.
Friday usual brekkie of slice LC toast, butter, copious tea.
Lunch was a couple of slices of ham & cheddar chunk.
Supper was bbq at Mr P’s golf club sausage burger and two chicken thighs with red cabbage coleslaw.
Yesterday Saturday same brekkie.
Lunch was cold beef with horseradish mustard and handful h/g cherry toms
Supper was h/m Thai chicken curry which wasn’t great Because I used a Sainsbury own brand sauce. Note to self. Beforehand I had two Ryvita cheese thins with my gin & soda then had two more which was two too many!
Today same brekkie.
Later out for brunch which will be scrambled egg, mushroom & tomato, maybe a sausage!
Supper today will be Spag Bolognese, either courgetti or cauli rice for me.
@RosemaryJackson don’t stay away, completely agree with @Annb we ALL eat some carbs sometimes but we are not machines and you like the rest of us really toe the LC line most of the time.
