Late breakfast of 2 scrambled eggs, made with double cream and butter, on top of 2 chaffles (chaffles 65g in weight). For some reason bg went up from 5.6 to 7.6 hour and half later. Made a mental note to watch out for this next time I make and eat my chaffle recipe. Don't know how long bg took to come down tho' by dinner time it had returned to 5.4. Two hours after eating dinner bg had hardly moved to 5.6.

Dinner was two baked chicken 'tikka' thighs, French green beans with butter, cauli and butternut squash mash, and tzatziki. Chicken tikka was a bit burnt on the outside but really juicy on the inside.

Afters were a packet of pork scratchings and 5g of dark chocolate.

Total net carbs = 18g carbs.

So back to yesterday
Usual brekkie of slice LC toast, butter, copious tea.
Lunch was two slices ham, one egg mayo, 6 h/g cherry tomatoes.
@shelley262 agree about flavour of h/g toms, for the last two years I have just had two large hanging baskets which work out really well and off the ground so resistant to blight which destroyed all the ground grown toms in my area in 2021.
Supper was spiced chicken breast with tenderstem broccoli.
Today just had the same brekkie.
Lunch will be scrambled eggs done properly. @maglil55 I am convinced that whoever prepared mine on Sunday was following verbal instruction and probably had never cracked eggs before. If the instruction then was to mix the eggs there can only have been a cursory stir because they came out stringy and divided. Sad!
Supper tonight will be a solo meal of two blocks of frozen cod in butter sauce with cauli rice.
@RosemaryJackson welcome back but so sorry about the fall. Glad you didn’t break anything but gentle hug for the bruises and soreness.

Breakfast: 2 RyVita and an omelette with some of the broccoli and baby tomatoes. Had to have it fairly early because today I need to get organised. I have managed to get an appointment to see a GP this afternoon, so no slacking today.

2nd meal: will be some of the home made pork and turkey sausage with some Mediterranean vegetables.

Feeling quite virtuous this morning to have, finally, got Em's birthday present wrapped. Been trying to get around to it for days but dodging it because it is a lot of bits and pieces of art materials and an easel - difficult to wrap, but I managed to get hold of an Amazon box just the right size. Must also make some chorizo with the minced pork that Neil got for me on his last shopping trip.

OK - not chorizo. I know I have some paprika somewhere in the cupboard, but can't find it, so I'm using some Moroccan spices instead. Never tried that flavour, but it should be OK, I imagine. Also can't get pork fat these days, so I'm using beef suet. Shouldn't be a big problem. Flavours might be a bit strange but don't think I need to bother about that.

Black coffee until 12ish two Swedish crispbread and three small bits of cheese - comte, Oxford blue and stilton with a few spoons of beetroot and ginger kimchi
5ish ACV in water then sea bream in lemon butter and a few peas with a couple of hm new potatoes fries and glass of dry white wine. Pudding a couple of garden berries with yoghurt.

Keeping to a 6-7 hr eating window the last few days trying to bring BGs down. Finally seen a couple of 5s today. Phew!
Black coffee all morning.
12 ish cold chicken drumstick and salad. DGF cookie to follow.
6ish low carb lasagna. Found a new variation which uses deli sliced chicken instead of pasta sheets. Worked really well ( photo doesn’t really show the layers though) more salad. Glass of red and a few squares Montezuma’s absolute black.

Wednesday 9 August - bed 7.8 FBG 7.3. Working on the kitchen today. The big fridge/freezer was overdue for a very deep clean, plus the filter needed changing, and its ice maker has gone "to sleep"! It's a lengthy job but it's done and organised again.

B. TAG and 2 slices of SRSLY toast with ham and a cheese triangle. Benecol dairy free.

L. A bit of crustless quiche.

D. Cabbage & meatballs. Meatballs are in a tomato, chilli, and basil sauce. Gin and zero lemonade. CC little chocolate pot and 3 strawberries.

Yes! Same here. I’ve been watering a neighbour’s greenhouse the last few days while they’re away. I was told to help myself to any ripe toms and oh goodness - that heavenly smell!
Yes. The heavenly scent of thin-skinned, Harbinger tomatoes, an early Old English variety, brings back memories of my late grandpa on his vegetable patch. Supermarket toms cannot match those.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with black pepper.
Water to swallow tablets
Espresso.

L: Crustless quiche using broccoli, red peppers, onions, eggs, cream and pecorino cheese.
Salad made with watercress, chicory, oregano, cherry tomatoes, Welsh onions and Kalamata olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with walnut halves.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lettuce, celery, Romano peppers, salad onions and mustard cress, with a dollop of homemade aioli for dipping, topped with toasted pistachios.
Water to swallow tablets.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a food dr bar.
Dinner: ribs with roasted Mediterranean veggies.

They're still tasty when chewy, but to get them crispy I think it's most likely that either the layer/slice of cheese was to thick, or they simply needed a bit longer.
What do you put your Edam slices on? I tried silicone paper, greaseproof paper and directly onto a china plate. Couldn't get them off so I just went back to slices of cheese.

Greeseproof paper, but I make very thin slices or grate, I don't use pre-grated slices, they're too thick.

The sausage that I made yesterday was very good. Not chorizo by any stretch of the imagination but very good all the same. I had some of it alongside the sliced sausage that I made about a week ago. Must try to get some more paprika so that I can make chorizo.

Some more of the new recipe sausage for breakfast and bits of left-over roasted veg.

2nd meal will be steak - if Neil manages to get some today - with onions and some baby plum tomatoes.

Thinking again about cauliflower and broccoli. I've had them a few times recently and my digestive system really doesn't seem to like them so I'll give them a rest for a while before trying again. That does limit my choices a bit, but I seem to be OK with swede and celeriac. I'll also ask Neil to look for Kohl rabi - not sure if the season is right for that. We rarely see ordinary turnips here.

Yesterday I ate:

2 back rashers of bacon and one fried egg for a late breakfast.

Shared a 65g pack of pork scratchings with OH

Dinner was a salmon steak, served with mushrooms and king prawns in a white wine creamy sauce. Sautéed cauli rice in olive oil and lots of butter.

10g of carbs for the day, BUT well over on protein.

For brunch today, a John West Tuna Fridge Pot with mayo.
