What have you eaten today? (Low carb forum)

Greeseproof paper, but I make very thin slices or grate, I don't use pre-grated slices, they're too thick.

I use pre-sliced cheese, it’s uniformly thin and even. Also on greaseproof paper, 90secs. I can only get Edam pre-sliced in the local coop.

I need to go to a bigger shop to find a block of Gouda to make your cheese schnitzel, I’ve been thinking longingly about it ever since you posted a photo of it.

And yesterdays meal, still winging it without going for groceries. :joyful:
Tomatoes filled with spicy tuna mayo with lots of onion, parsley, and jalapenos.

Finally went for groceries today, eating those tomatoes yesterday meant hardly any fresh veggies left for the guinea pigs.

Had a tuna fridge pot in the late morning.
Early afternoon I shared a packet of pork scratchings with His Nibbs, only I think he ate more of them than me ;)
Dinner was 2 smoked mackerel fillets, with pickled beetroot, gherkins, olives, lettuce, baby leaf spinach, and some leftover tzatziki.

Cronometer says today's food totals 7.5g carbs.

Black coffee until lunch
1ish like yesterday had 2 Swedish crispbreads with three small pieces of cheese and kimchi - Also had three of my home grown tomatoes followed by a few garden berries and yoghurt (I seem to be having a good second season of raspberries)
5ish had poached chicken breasts and then just before serving fried a couple of slices of bacon until crisp and browned the poached chicken and served with hm mushroom sauce ( fried mushrooms in butter then added splash of double cream) and my first crop of home grown dinner beans. Definitely will plant more green beans next year they are so tasty. Also glass of dry white wine and for pudding LC chocolate brownie with decaffeinated coffee.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes, seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Ceviche made first thing using lemon sole fillets cured with lemon juice, zest and Welsh onions, then combined with tomatoes, Padron chillies, cucumber, Kalamata and Halkidiki olives, chopped coriander and olive oil.
Salad using watercress, lettuce, cherry tomatoes, radishes, Romano peppers and Welsh onions, dressed with an olive oil, oregano, garlic and balsamic vinaigrette and topped with toasted almonds.
Raspberries with Greek full-fat yoghurt.
Water to drink.

D: Seafood salad made with king prawns, mussels, lettuce, sweet cicely, cherry tomatoes, celery and salad onions dressed with homemade mayonnaise for dipping and topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
@Antje77 I did think of using cheddar for the schnitzel but I’m not sure it melts in the same way as Gouda. It might just end up an oily mess. Probably worth a try I guess.
Todays food-
Black coffee all morning.
L- sRSLY roll with cheese, beef and chilli sauerkraut. Then a slice of apple from a garden. The slice weighed 30g which is apparently nearly 5g carbs but it was absolutely delicious. I really miss apples.
D- Reverse seared pasture fed rump steak from local farm. Mushroom stuffed with Boursin cheese and a big salad ( thanks for posting your photo @shelley262 I’ve copied you! The black olives do make a big difference) 2 glasses red wine. Then decaf coffee with cream and a few squares Montezuma’s absolute black with orange. IMG_3183.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: LC fish pie with mangetout and broccoli.

Morning all. I am really struggling to give up bread all of a sudden. Yesterday I had a BLT for lunch with salad. For tea, I had 2 hardboiled eggs with mayo and cress, at least that was good! Today I have minced pork with small carrot, onion plus cauli and the last 2 runner beans off my plant. I quite like to eat them raw straight of the plant,they are so tasty and juicy. For tea maybe the rest of the cress with another egg. Have a good weekend everyone

Yes I know how you feel. Bread has always been a problem for me. Used to have Live Life low carb bread. Found it still made me want more and also bloods to high after. Also like Avocado Toast but haven't had that for over a year now. Every so often tell my self I can eat bread, test my sugars and say once again, no I can't.... Best of luck.
 
Cheesey scrambled eggs this morning with tea, as usual.

2nd meal will be some of my wanna-be-chorizo-cum-north African sausage with some leeks.

Yesterday, after a very long day (Neil had to strip the dishwasher down and it took most of the day) when I couldn't move around the kitchen because the dishwasher was in bits all over the kitchen floor, I decided to have the rib-eye steak, very quick to cook and one large slice of fondant swede. I'd forgotten how much I enjoyed that way of doing swede. It was only a smallish swede but a thick slice. There's enough left for one more thick slice, maybe tomorrow. And there's lots of gravy left to go with the sausage today.

Lunch was piece of crustless quiche, 6 h/g cherry toms and chopped cucumber..
Supper was two lamb cutlets and chopped Portobello mushrooms all panfried together.
Today same brekkie.
Lunch also the same plus lettuce and spoon cheesey coleslaw.
Supper will be chunky cod fingers and cauli cheese.
@DJC3 that beef looked mouthwatering and beautifully cooked. Lucky to be able to get such good meat. I need a trip to my farm shop where the meat is so much better than the supermarket. @Annb thanks for reminding me how much I like swede. I can only manage it in the microwave now, wrists mot strong enough to cut it raw. @RosemaryJackson you probably need the comfort of bread while recovering from your fall. You will soon get back on track when you feel better.

You will soon get back on track when you feel better.
I probably wouldn't have been able to cut a larger swede, but this was a pretty small (about 31/2 inch diameter) and quite crisp, so it cut more easily than a bigger, older one would. Of course, a big Chines chopper helps.
 
Yesterday
Ff greek with seeds and 1 teaspoon cocoa powder which had sat overnight so nice and thick and evenly mixed.

Dance class was later than usual so tummy rumbled thoughout

L: eventually was a surprise piece of salmon and a hard boiled egg with mayo. The surprise was I'd put the salmon in the microwave for previous evenings meal but forgot about it. Only found it when I was about to reheat a cup of coffee I'd forgotten to drink...

Mid afternoon : half a small apple. We are staying somewhere that has an apple tree in full harvest. It's dropping loads a day and I can't abide waste...resisting all the damaged ones, just!

D: 2 bratwurst with carrots dressed with mayo and a bit of mustard. A chocolate pot. 2 glasses red wine

Today
A lovely beach walk to a cafe. Had an egg and bacon bap as no plates or cutlery available. Hubby was so impressed I managed to use just a quarter of the brioche bap to hold the filling without spurting the egg over everything and still keep (relatively) clean
Bg was 8.2 an hour later after walking back, no idea what happened before or after, but I was quite pleased with that. Just shows how much the full bap would have been.

L: 2 hard boiled eggs with mayo and a bit of cheese. 2 handfuls pecans

Out tonight to a fish restaurant, looking forward to it muchly
 
Please tell how this is made
My swede was a fairly small, crunchy one - only about 31/2 inches diameter but it works with older, bigger ones. I just cut a slice across the swede so that I had a circular slice, about one inch thick, trimmed it to take all the skin off and put it into an oven dish with a large knob of butter (maybe an ounce or a bit more), put some chicken stock in to almost cover the slice and baked it for 1/2 hour at 230C.

If the swede is a bigger one and you can manage to cut it, a square piece cut from it would do the job, or it could work for chunks cut from a larger one. You'd need to be careful about how long it stayed in the oven in that case.

If I'd been using my main oven, I would have started it off on the hob in a metal pan, then put the stock in and then baked it, but I was using my small combi-oven/microwave and there's no space for a pan handle in there. I took it out when a knife could slide into the flesh easily but it was still firm.

It is my favourite way to eat swede. Hate it boiled and prefer the texture this way to whole roasted swede. Just wondering if radish would work similarly. I can't get white turnips here but may be able to get radishes.

L: Packed lunch made with leftover ceviche.
Lettuce, Romano peppers, celery sticks and cherry tomatoes with a dollop of homemade mayonnaise for dipping.
Almonds, hazelnuts and pecans.
Water to drink.
Wild blackberries to round off lunch.

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.

Have a good weekend everyone!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar, specially selected flavour as I’m another year older today!
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a kind dark chocolate and nut bar.
Dinner: avocado with prawns, mayo and coleslaw.
