What have you eaten today? (Low carb forum)

BG 8.5 this morning and still there or thereabouts.

Breakfast: Liver and bacon (small box of liver out of the freezer). Cooked all the liver but didn't eat all of it so have some left to make a pate with.

2nd meal will be chicken thighs (if Neil manages to get some in town today) in a spicy, buttery sauce.

Must get around to making some low carb "bread" of some sort to go with the pate. It's something I've tried a few times without success (at least in my terms). Determined to work it out. Other jobs are getting in the way first though.
 
How do you make peanut butter chocolate? I'd love to try it.
Take peanuts with skin. Roast them in a pan till brown or use unsweetened peanut butter.
Grind it with stevia, vanilla essence and coco powder till it becomes buttery.
Remove from grinder, add almond flour and shredded coconut
Mix well. Put it in silicon mould container and keep it in fridge. Chill it for 1 hour or so and it is ready to eat!

Thanks for that. For me I'd have to tweak it a bit, but I'll have a go at it.

Salmon and sour cream with cherry tomatoes
Bought wrong Biltong which was wagyu jerky, ended up in for bin. Not before I ate less than half and blood sugar went up to 9.9!!!!! Not to be bought again.
Cottage cheese, tomatoes and a small avocado.
Carb count for the day awful....
 
Evening all

B: Two poached eggs with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Berkswell ewe's milk cheese.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with broccoli, mushrooms, double cream and lemon verbena.
Steamed French beans smothered with butter.
Salad made with chicory, celery, green peppers, salad onions and halkidiki olives, dressed with olive oil, garlic and a touch of lemon juice, topped with roasted macadamia nuts.
Water to drink.
Skipped pud.

D: Seafood salad using crab, brown shrimps, lettuce, baby plum tomatoes, last of the sweet cicely, Romano peppers, Kalamata olives and Welsh onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachios.
Water to swallow tablets.

Other jobs didn't get in the way - nausea did. That plus exhaustion. Spent much of the afternoon in the chair after putting chicken thighs into marinade. That's fine - they can marinade until tomorrow lunchtime without coming to harm. Other jobs will have to wait.

Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: bolognese on sliced sautéed courgette with a sprinkle of grated mature cheddar.

Just completed a 2nd day of only having one meal. I've got my 'baby brother' to thank for that (he's 58 btw), he whatsapped me to say he's with me on the 24 hour fast I promised myself today. Couldn't let him down so I stuck to my promise. Doing things with someone can be a real motivator.

10.30am Coffee and Cream

6pm butterflied salmon steak, cooked in butter. Salad of lettuce, a few pieces of apple, celery, peppers all mixed with a couple spoonful's of mayo and a splosh of salad cream, a few prawns tossed in. Creamed mushrooms.

2x 90% chocolate squares followed.

6g of carbs for the day

Looking forward to eating a lovely plateful of bacon and eggs tomorrow for breakfast.
 
Yesterday was the last bit of sauerkraut mash I had planned for the day before, today was swimming and grocery shopping.
The friend I swim with also brought his dogs over for a sleepover until early next week, so we shared a car to the pool which messed up my shopping. I had a list but no plan on what to eat yet. Usually I solve this problem once I'm in the store but I felt (unneededly) hurried by being with my friend and came home still without a plan.

Late afternoon/early evening (the time when I should have made a plan with whatever is in my fridge/freezer) I had a 90 minute zoom session on diabetes for some research company.
At the end of the session we got to hear who the client was, which was the Dutch equivalent of Diabetes UK, (Diabetesvereniging Nederland) which I'm not much impressed with. So I'm very happy they payed me 105 euros to talk about diabetes for a bit plus an hour of time for some homework last week, and very happy I never became a member for them to spend my membership money like this. I mean, I would have participated for a 15 euro giftcard instead of this ridiculous amount of money, now I understand why becoming a member is so expensive!

So in the end my evening meal was two slices of low carb bread, one with a very nice hard cheese and one with a dried ham. I'll have some extra chicory leaves with hummus to make up for the lack of vitamins later on and call it an evening well spent. :joyful:
 
Morning all. Yesterdays meal was a chicken and leek dish from M @ S that my son brought me back from Lincoln to try. 7.7 grams of carbs for the whole thing! The leeks were a bit chewy but it was very tasty. For tea a tin of tuna with mayo, 2 crackers and 1 square of chocolate. Kept to18.5g carbs so quite happy. Have a good day folks :)

So back to yesterday.
Brekkie usual slice LC toast cooled, butter and copious tea.
Lunch was a h/m ginger & walnut muffin (disappointed flavour due to the dried ginger being old and musty) and chunk cheddar. Tea.
Supper small portion of chilli mince with a couple of roasted tomatoes atop cauli rice.
Today same brekkie.
Lunch same need to use the muffins up.
Supper will be a large roasted chicken breast with cauli cheese, spoon peas.
 
Evening all

Today:

L: Sweet red peppers, stuffed with feta cheese, eggs, Kalamata olives, chopped mint and baked until golden on top.
Salad using chicory, Romano peppers, radishes, celery, vine tomatoes and salad onions, dressed with an olive oil, lemon verbena and balsamic vinaigrette and topped with roasted macadamia nuts.
Low carb pud using milled flax seeds, home-made granola, unsweetened almond milk and double cream.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lettuce, finely shredded red cabbage, apple peel, celery and baby plum tomatoes with a dollop of home-made aioli for dipping, topped with parsley and toasted pumpkin seeds.
Water to swallow tablets.

We’ve been buffeted by storm Babet for a couple of days so haven’t been out much. I fear you are going to get an even worse hammering though @maglil55 and @Annb .
Kefir this morning then black coffee and Aquafit class which I’m still enjoying immensely.
Odd mixture of food today, trying to eat everything that’s likely to go off before Friday, when we are taking granddaughters to Center Parcs for 1/2 term. @Rachox I know you’ve been to Center parcs a few times ( maybe not same site, but I guess they are all similar) which of the restaurants do you think are safest for lc?
L- 2 bacon rashers topped with mozzarella topped with avocado and hot sauce.
D-gammon steak topped with a fried egg. Fried mushrooms and broccoli in blue cheese sauce. 2 glasses red.

we are taking granddaughters to Center Parcs for 1/2 term. @Rachox I know you’ve been to Center parcs a few times ( maybe not same site, but I guess they are all similar) which of the restaurants do you think are safest for lc?
We usually go to Longleat, and I’ve had very little trouble getting low carb options. I would say you’d need to avoid Café Rouge for lunch (very bread and chips with everything), they are fine for dinner though. The Pancake House is no good at all, no LC pancakes although they do do omelettes. Every where else have happily swapped things out for me. Have a great time xx
