Started the day thinking normality was back

L: cheeses and seedy crackers
Headachy afternoon with several naps
D: omelette with ham and cheese
Then a phone call saying our second bereavement in 8 days had happened. Thought we'd had weeks, but no, suddenly this afternoon .
Hit the expensive chocolates. 3 so far but have now given the box to hubby to ration me.

Hubby's birthday tomorrow. Think I might find it hard to put ona brave face, again. It's getting draining all this :(

@shelley262 What a good idea to put olives instead of beans in chilli, will be stealing that idea! Yesterday family round Chilli con carne and all the sides, no one wanted to try my cauli rice Made a lemon meringue roulade for dessert but really wasn’t tempted to try it at all, hurray!
B Scrambled egg and mushroom on a slice of livlife toast
L Chilli, cauli rice,guac and sour cream, 1 dark choc truffle
D Seed crackers, cheese, salami, small salad
The trick is not to tell them low carb, low sugar, or whatever. I've been feeding my lot cauliflower fried rice for a while, and they don't notice it. It looks like fried rice, and the tamari soy makes it taste like fried rice. There's a number of desserts that are also low in carbs and sugar, lemon merengue is one.


Sorry, the curd, merengue, and final recipe are all separate.

This Christmas, I made them LC creme brulee and LC Chocolate Pear Sponge (only the words low carb are never mentioned).

Hope this is of use.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: LC roll with cream cheese and cranberry with a leafy salad.

@shelley262 and @MissMuffett I’m the opposite: I managed black coffee and now I much prefer it but after 5 years I’m still no closer to drinking black tea. I’ll have another go this year.
Also re cream - I bought a huge tub of clotted cream for Christmas and it’s nearly gone but I don’t think anyone else has had any! I also found Rodda’s Brandy Clotted cream this year. It’s heavenly! It does contain 1% sugar but still 4.6g carb/100g so next Christmas I’m just going to buy this and eat it on its own as a pudding without bothering with lc Christmas pud or mince pies.
Well, if there is any left in Waitrose when I go tomorrow, I might get some..... :)

Absolutely @maglil55, if you don't mention it, they're none the wiser. At any rate, it all disappears!

Forgot to add following yesterday's post, I savoured a glass of Armagnac with the bells and the fireworks. Zero carbs and I slept jolly well last night.

So very sorry for you, @MrsA2, with both so close together. Don't beat yourself up, just look after yourself.

Dinner was duck breast with cavolo nero & buttery, peppery mashed swede then an hmlc mince pie & dollop of whipped cream. Sadly, not Rodda's Brandy Clotted Cream.

Thank you, that is a good strategy.I traditionally always make a roulade as there are several Xmas pud haters. I will def try the low carb version.Some of the family did like the Olinas crackers

Evening all

Today, New Year's Day:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry sherry style Spanish wine
New Year celebration roast made with toasted hazelnuts, ground walnuts and almonds, chestnuts, cranberries, mushrooms, parsnip purée, eggs, sage and onion with a touch of mixed spice.
Steamed Brussels sprouts with toasted pistachios smothered with butter.
Vegetable tray bake using broccoli, cauliflower, red sweet peppers, onions and garlic.
Carrots, onions and apple sautéed in butter.
Water to drink.
Skipped pud.

D: Cheeseboard using three of my all time favourites and seafood salad made with crab, brown shrimps, lettuce, chicory, celery, baby plum tomatoes and Kalamata olives with home-made aioli for dipping, topped with roasted macadamia nuts.
Water to swallow tablets.

Father New Year delivered a surprise parcel containing Montgomery's cheddar, Beenleigh Blue, Gorwydd Caerphilly and Baron Bigod.

The first three, with their contrasting styles of cheese making, are particular favourites of mine, which I've enjoyed for many years. Baron Bigod is a Suffolk brie. Its makers have customers in France, which speaks for itself really!

Happy new year everyone. I’m only back when I go MIA again!
Anyway Sunday (NYE) ) usual brekkie of slice LC toast and two fried eggs to get me through to early supper but did snaffle a chunk of cheese along the line.
Supper was roast chicken, roasted veg (last carrot and parsnip inc) and Brussels sprouts which was the last of them, for some reason did t like them much this year. Was tucked up asleep by NY as only us two and we weren’t bothered.
Monday NYD was usual brekkie of LC toast and copious tea.
Lunch was using up more cheese inc Baron Bigod and Red Storm both fab and two water crackers. Tea.
Supper was prawn & avocado salad which was just what I fancied.
Today we had brunch out and I had scrambled egg on half slice brown toast, half tomato, mushrooms and one sausage. Supper will be chicken, chorizo & red pepper and paprika stir fry with cauli rice.
@MrsA2 once condolences for your loss you really are having a tough time of it.
@Antje77 your feasting sounded so much fun what with meeting new neighbours and their goats and swimming!
Hope 2024 is kind to us all.

Lunch - salad, boiled egg, mix veg fry, brinjal fry, low carb veg paratha.
Dinner - salad with raddish micro greens, boiled egg, ridge gourd fry, low carb home made roti with pickle.

Lunch mushroom and cheese two egg omelette with beetroot kimchi then a third of a Mandarin orange

Dinner had slow cooked beef casserole with cauliflower cheese and small glass of red wine followed by LC Blondie with cream.
Weather here vile today non stop heavy rain - so took opportunity to do lots of indoor based jobs. Flooding means many local roads are flooded including the road leading to the main bridge over the river in town which had been operating one way but is now fully closed. Relieved did a caring visit yesterday would have been very difficult today. At least forecast, crossing fingers, looking drier over next few weeks.

Catch up time again! Saturday 30 December Bed 7.4 FBG 6.6.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. Nothing.

D. Hubby was feeling a bit "off" and didn't want much. I followed suit and had a slice of ox tongue, slices of ham, mini German sausage, coleslaw, and a boiled egg.

I was out with my son this morning shopping so that I could stay at home tomorrow. From an early age, it was instilled in me by my mum & Grandma that the home must be cleaned on New Year's Eve. All trash must be out, all washing & dusting done. Old habits die hard!

Welcome back, @PenguinMum. I still read that as octopus tea! @DJC3 - If you make the chocolate pear sponge, the texture made as per my CMT is very brownie-like. If you want to lighten the texture, and make it more Sponge like, I'd suggest separating the eggs, beat the whites separately to stiff peaks, make the rest as per the recipe, then fold the egg whites in at the end. It's essentially making it a whisked sponge (which I've done many times), but it does give a lovely light texture.
