What have you eaten today? (Low carb forum)

Thursday 11 January - bed 6.2 FBG 7.4 BGs have finally stabilised. Another Aqua day. Hubby now wants to take me to buy a new range cooker. May as well strike while the iron (or rather the cooker) is hot.

B. TAG and DD keto egg muffin. Benecol dairy free

L. 2 M&S crackers with port salut

D. DD Asian chicken stir fry with broccoli. I put the remains of my cauliflower rice in it and some peas. CC little chocolate pot.

Gin & soda.

Friday 12 January - bed 6.6 FBG 7.2 Physio today, thank goodness. I'm not sleeping well with cramps in my legs, which is pretty common for me, so they do need work. I also have a bit of running about with the boys as son & DIL are going to a funeral today. It's one of my son's good schoolfriend group. He was only 42.

B. TAG only

L. After Physio, another DD keto egg muffin and Benecol dairy free.

D. Son wanted to go shopping. He was a bit the worst for wear. All the "boys" (I still think of them as boys) had been through a very stressful day with the funeral. It's hit them hard. When I got back today's DD meal was quick to make, I altered it a little again. Keto sesame and garlic prawns. Spring onion and peppers in with it, and I added some of SRSLY sweet chilli sauce. Hubby had noodles, I remade stir fried bok choi with garlic and exotic mushrooms. Definitely no nasties this week, though. CC little chocolate pot.

I discovered from Sainsburys that in my summary of 2023 shopping, I was No 4 in the whole of Scotland for the purchase of CC little chocolate pots. Hubby is astonished that there are 3 that buy more than I do!

We did buy a new range cooker. It arrives for fitting on Tuesday. A bit more pressure on my reorganisation. It is nice, though. The old one is getting a bit beyond repair now. This one has 5 gas burners, a ceramic plate for 2 more cooking areas, 3 ovens, and a grill. Should be plenty for me. That new stove sounds fantastic. Couldn't access the imaqge, but the description makes me envious.
 
@maglil55, both your Chinese looks delicious (- the peas, yuk!) & enjoy your new range, nice.

@MrsA2, fingers are crossed that you will soon be one stress less & I hope you're okay.

There was food today, but all carbs, so I had a gin & slimline then cold meat & cheese when I got home.
Sending you a hug for your carbs experience nearly every event with a buffet has a wide range of beige carbs. Very difficult unless someone is organising it who understands low carb it's unlikely to have many options for us. It is so lovely when someone does think about us and provides food we can eat but it doesn't happen often enough!

It can be frustrating & this one was catered but had nothing savoury that you could pick apart. It's when OMAD helps at least.

@maglil55 congratulations on being the 4th most prolific little cc eater in Scotland. I hope you get a certificate. The new range cooker is fantastic.
Todays food went well to start with - black coffee etc
Lunch - borrowed @Antje77 ‘s idea of putting the tuna muffin mix into 1/2 red pepper before baking. Lovely! Another borrowed idea for pud - mix mascarpone with cream and sprinkle a bit of instant coffee on top - tastes like tiramisu!
Mid afternoon cupboard clearing - cleared a lot of nuts and toasted coconut into my tum. V annoyed with myself.
D- lamb chump chop and a small bit of liver with garlic butter greens. 2 glasses red wine.

Oh well, at least it's gone now, and the proof of your crime is very well hidden!

Today was the third day of beef an onion stew, still ladled over a slice of low carb bread with mustard instead of the cauliflower purée I keep planning to make.
There is enough left for one more day, no use to make purée for only one day, so I guess I'll have to parboil the cauliflower and freeze it for another time.

Bought a large bag of cashews, wish me luck on portion control once I open it!

Breakfast: h/m sausage, bacon and eggs, as usual.

Some time later I will have some butternut squash soup which I found in the feeezer last night.

There is also some pork mince which needs to be used today. I'll make a kind of spicy mince and cabbage or Brussels sprout dish with that and keep it for tomorrow. I didn't ask Neil to get Brussels sprouts for me a couple of weeks ago, but he saw some and bought 3 packets. The last packet is still unopened but the sprouts are still in good condition, so I am gradually working my way through them. Discovered that sprouts parboiled and then dusted with curry powder before roasting in bacon fat makes a very acceptable side dish.
