What have you eaten today? (Low carb forum)

Hi, I am fairly new to going on a low carb journey, well lower than before at least. One of my goto breakfasts is poached eggs on toast or 1/2 english muffin. The only carbs in the meal obviously come from the bread (about 15g) which I know is not a major amount compared with the Weetabix diet I had previously. However am trying to substitute the bread with a lower carb similar alternative as the eggs in themselves do not fill me up. I would be grateful for any suggestions for something akin to bread to go under a couple of poached eggs.

You can buy low carb bread, it’s more expensive than regular bread and the slices are smaller but some are very good. https://lowcarbfood.co is one of the best, @Rachox has long been a fan and I’m converted.
Otherwise, how about bacon, smoked salmon, avocado, wilted spinach? Or just have eggs a different way, such as a cheese omelette?

Or an extra egg, or 2? Or on a nice thick slice of ham?
 
Like @DJC3 I'm a fan of the low carb bread from the low carb company but have discovered it's made by a bakery and cheaper direct from them plus lower spend to get free delivery Edit they have just recently put up their minimum spend for free delivery it used to be £20! so probably no advantage anymore!

You can buy cheaper low carb bread - but not as low carb - from a few supermarkets including
From Sainsbury's Hilo bread
From Waitrose liv life

I always split any low carb bread into portions and freeze them. I often toast from frozen and think it probably helps to lower impact on my blood glucose even more.

I really like them but they often sell out quickly plus one of most expensive.

B- choc chia pudding
L- at the beach hurrah! Food spread out over a couple of hours. Flaxseed bun with cheese and marmite, organic toasted coconut chips, pack of Cheesies.
D- M&S Collection IMG_1719779273.321768.jpgGreek Style Pork kebab ( yellow sticker bargain). Very nice, like the others in this range would easily feed 3 or even 4. It needed tzatziki or some yoghurt sauce I felt. Served with a Greek salad.
 
Hi LivingLightly I’ve learned to read nutrition labels very closely and compare brands. There seems to be quite a large variation.
These are the nicest and lowest carb I’ve come across. (1.8g carb/100g). https://www.buywholefoodsonline.co.uk/organic-coconut-chips-toasted.html they make a delicious snack.
Thanks for the recommendation @DJC3. I do order items I can't find locally from BWO every now and again and have found their provisions top quality, Those coconut chips are much better than banana chips, carb wise and I look forward to giving them a go.

My digestive system does not handle bread well, so I take the easy route and avoid it completely.
How about bacon?

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
Baked calabrese, cauliflower, leeks, garlic and bell peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, Welsh onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
 
Hi All, Thanks for all the suggestions re. low carb bread and rolls etc. I never knew there were so many choices to go for online and also never thought bread could get down to only 1.7g a slice. I will try some of the online options and other offerings suggested.

I have had a word with the head chef, housekeeper and reluctant carer and she has made a few suggestions of her own, not to be broadcast here on a polite forum and mainly to do with the room in the freezer or more to the point the lack of room. However once we get rid of the high carb stuff there will be plenty of room for your suggested alternatives and hopefully my better diet.

Dinner
Pork medallions in garlic, butter and cream, mushroom sauce with two hm new potato chips. ( cooked from frozen in goose fat) used pork medallions from Waitrose easy cook range which are pre marinated in lemon juice and wild garlic at less than 0.5 g of carbs for two steaks.

Coffee and unsweetened almond milk
Chicken salad
Was going to have tinned salmon this evening, but opened tin and salmon frozen! Turned the fridge down and ended up with tinned tuna salad and coleslaw.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: carbonara made with low carb macaroni with a sprinkle of extra mature cheddar.

L: Courgetti alla carbonara made with chestnut mushrooms, eggs, double cream, Parmesan cheese, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and flat-leaf parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with brown shrimps, mussels, shredded red cabbage, apple peel, celery, thyme and baby plum tomatoes with a dollop of aioli for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.
 
Yesterday, one of my better attempts, not low carb but according to internet moderate carb.

B-3 egg omelette, 2 slices smoked bacon
L- Skipped as not hungry
S- Snacked on a Kind bar (Dark Chocolate, Nuts and Sea Salt) 16g carbs with black coffee. A bad choice but I was starving. :confused:
D-Red pepper, radish, tomato and red onion salad with 4 fish/crab sticks. 2 glasses Chardonnay.

What's the difference between low carb and moderate carb?

On the odd occasion I’ve had one of this flavour Kind bar I thought they were about 8g carb, just checked on the Tesco website and they reckon 7.2g so not such a bad choice after all!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.

Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: corned beef hash made with cauliflower rice in place of potato with cauliflower, broccoli and carrots with a few dots of low sugar tomato ketchup.

Perhaps the reason you were ravenous @ChrisT2 was because you had skipped lunch earlier.

If you're not hungry at lunchtime, may be better to delay your meal rather than skip it altogether. Just a thought.

Quite chilly first thing. What a contrast with last week's soaring temperatures.

Today:

B: Two poached eggs smothered with butter and avocado seasoned with black pepper plus a wedge of Teifi (pronounced Tavey) an organic unpasteurised cow's milk cheese from Wales
Water to swallow tablet.
Espresso.

L: Wild Alaskan salmon baked with calabrese, chestnut mushrooms, double cream and lemon verbena.
Steamed French beans and mangetout with a knob of butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, rocket, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives, Welsh onions and flat-leaf parsley dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachio nuts.
Water to wash down tablets.
