What have you eaten today? (Low carb forum)

B- scrambled eggs with avocado and fermented red cabbage. My egg supply is drying up - daughter’s chickens have found a secret place to lay and nobody can discover it!
L- at a tapas place. We chose 3 small dishes each. I had smoked salmon with fennel and samphire, meatballs in a spicy tomato sauce and the simplest but most delicious salad of yellow and green courgette ribbons topped with goats cheese and sunflower seeds. The dressing was made from lemon thyme, ACV and olive oil. I could eat it for every meal.
Dinner at home - wild Alaskan salmon with airfried red pepper and patron peppers, kimchi and a mixed salad. Glass of dry white wine.

Today was the third day of zuurkoolstamppot. (Cauliflower purée mixed with sauerkraut and eaten with smoked sausaged and brined pork belly, both boiled and fried after boiling.)
Heavy on the meat this time, I'll be on holiday for two and a half weeks starting tomorrow, and if I have to choose between eating the meat and feeding the leftover stamppot to the chickens or the other way around, it's an easy choice. :hilarious:

Four dogs and a cat had a substantial piece of sausage as well.

@Antje77 wishing you happy holidays and really hoping that our UK weather settles for you especially as you are camping. Surely we've had our yearly rainfall already!
Breakfast kefir with low carb granola with the very last of the garden berries
Lunch one slice of low carb toast with scrambled eggs
Dinner wild salmon with a few garden peas and glass of dry white wine followed by LC blondie.
 
B- bacon and mashed avocado on l/c toast.
L- slice of spinach

frittata with kimchi. A handful of walnuts with some strong cheddar afterwards.
D- pork chop from local farm, mushrooms and purple sprouting broccoli. Glass of dry white wine. Some 100% chocolate buttons to follow.
 
Evening all

Thursday:

B: Two poached eggs with a knob of butter, avocado and three crevettes, with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Packed lunch of mushroom and spinach frittata, made with eggs, chestnut mushrooms, spinach, Cheddar cheese, onion, double cream and thyme.
Salad using chicory, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted almonds.
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, vine tomatoes, celery, Halkidiki olives and salad onions dressed with home-made mayonnaise for dipping, topped with roasted macadamia nuts.
Water to wash down tablets.

Friday:

B: Two poached eggs topped with a knob of butter and avocado, seasoned with a good grinding of black pepper.
A wedge of Gorwydd caerphilly.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover mushroom and spinach frittata.
Celery sticks and baby plum tomatoes with lettuce cups for scooping and a dollop of home-made mayonnaise.
Prawns and brown shrimps.
Almonds, hazelnuts. and walnuts.
Water to drink.

D: Smoked salmon and cream cheese salad made with rocket, celery, baby plum tomatoes, salad onions, Nocellara olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with pecan halves.
Water to wash down tablets.

Do you make the kimchi? I’m thinking of giving it a try.
 
Do you know why the lamb was tough? @IanBish. Was the lamb tikka a take-away or did you make it yourself?
It was a takeaway, @LivingLightly. I guess it's a bit like steak in so far as you don't know how tough or tender it will be until you eat it. I'll mention it to them next time I'm there.
