What have you eaten today? (Low carb forum)

Brunch: scrambled eggs topped with grated Parmesan.
Few nuts ( I must stop buying nuts!)
Lunch/dinner: roast pork loin, sprouts cooked with pancetta, buttered green beans and ( very unphotogenic)cauli cheese. A sizeable portion of crackling to top it off.
Couple of hours later I had decaf coffee and a DGF Crimbo Crumble with cream ( resisted the brandy @shelley262 )

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, sprinkled with chopped, flat-leaf parsley and seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed purple-sprouting broccoli smothered with butter.
A medley of baked cauliflower, leeks, garlic, red and yellow bell peppers.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
 
B: scrambled eggs topped with Parmesan.
L- tin of mackerel in olive oil with kale crisps, a hard boiled egg and courgette ribbons. DGF cookie to follow.
D- lamb and spinach curry, overdid the chilli a bit so had a dollop of sour cream on it. Served with half a toasted low carb pizza base to mop up the sauce.
A few minutes ago I was searching for something in a drawer and came across an opened bar of Montezuma’s AB so of course I had to eat a few squares

Hello all. Pensioners lunch today. Soup first. Baked chicken, cauli, broccoli and 2 scoops mashed potatoes. Pudding was sponge with custard, I know, not diabetic friendly. But it was very nice.
 
B: Two poached eggs with a pat of butter, avocado and three crevettes, with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Cheese-crusted omelette stuffed with chestnut mushrooms, cherry tomatoes, basil, spinach and cream cheese plus grated Cheddar for the crust.
Salad using watercress, Romano peppers, salad onions, Kalamata olives and mint, dressed with an olive oil, garlic and balsamic vinaigrette, topped with walnut halves.
Skipped pud.
Water to drink.

D: Seafood salad made with tiger prawns, crab, rocket, vine tomatoes, celery, sweet yellow peppers and salad onions dressed with olive oil and a squeeze of lemon juice, flat-leaf parsley and garlic, toasted almonds.
Water to wash down tablets.

D- a not very photogenic lamb stew, it’s been simmering away since yesterday, I did throw in a handful of lentils to help thicken it. My BG doesn’t seem to mind a few lentils.
I’ve saved a DGF Crimbo Crumble to eat with Bake Off tonight
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Was at a friend’s today so ate a small low carb lunch to keep her company: paté, Brie, ham and a big pickled onion.
On the way home my car needed a charge so I had a cappuccino and another carb killa bar while it was plugged in.
Late Dinner: scrambled eggs on Marmite on LC toast.

L: Wild Alaskan salmon baked en papillote with mushrooms, spinach, Kalamata olives, lemon zest, sprigs of thyme, sage leaves and butter.
Steamed asparagus spears smothered with butter.
Water to drink.

D Seafood salad using crab, brown shrimps, lettuce, cherry tomatoes, chicory, Romano peppers, Halkidiki olives and salad onions, dressed with an olive oil, mint, balsamic and garlic vinaigrette, topped with toasted pumpkin seeds.
Water to wash down tablets.
 
For lunch today I had a small, rather holey sourdough bacon sandwich.

And for dinner I had a sirloin steak with mushrooms and green beans.

Do you find sourdough affects your blood sugar differently to non sourdough? In my experience, which includes taking insulin, I still get a rise but the rise is slower to take effect and possibly a little less than non sourdough but I’m not quite convinced on that yet.

I think so. I had a supermarket sandwich fairly recently and the spike was faster and steeper. But it's bread, and it does what bread does.
