It seems quite simple, using sweetener and almond flour. I might add some vanilla extract too.
Looks lovely. Let us know how it goes. I've made a fair few almond flour \ ground almond cakes over my many low carb years and they taste lovely but can be a bit heavy in texture hence my switch to Panda Flour to make a more regular cake texture. I'd imagine that as it's a nutty cake anyway that this is one of the cakes that almond flour would work best in.

Breakfast kefir then mushrooms cooked in olive oil served on low carb toast
Lunch cheese, celery and LC seeded crackers followed by a couple of strawberries with yoghurt.
Dinner wild salmon with slightly over cooked salmon and asparagus - I got distracted while cooking! It tasted ok though! Plus glass of muscadet.

Followed by hm LC coffee and walnut cake and cup of decaffeinated coffee and cream.

Very filling breakfast of 3 egg omelette filled with cheese, mushrooms and shredded ham from the gammon joint if cooked yesterday.
Wasn’t hungry for lunch but had early dinner of very simple and tasty mince and cabbage curry ( made with hogget mince). I like one pot cooking. A DGF raspberry bakewell to follow.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: Brie and cranberry on a low carb roll with coleslaw.

Some strawberries and Greek-style yoghurt for a late(ish) breakfast, plus a couple of freshly-baked high protein rolls (17g carbs each) with Jalapeno tuna for a late lunch. I'm currently waiting for the butter to soften before I make my coffee cake, and I'll let you know what it's like. Wish me luck as I haven't baked a cake for a couple of years!

Or another way with Brussels is boil them until soft then puree in a blender with cream, butter and/or cheese. Add seasonings (nutmeg is surprisingly nice) Comes out lovely bright green colour and tastes amazing, nothing like Brussels
Thank you, you saved the remaining half pack of my Brussels. It was really delicious! I think I'll eat it with something meaty next time.

2 boiled eggs and a cheese ‘cracker’ for breakfast.
Listened to the livestream of this year’s PHC conference all day so lunch was quick - some of yesterdays leftover curry in a low carb wrap then a few squares Montezuma’s AB.
Dinner was a lovely grass fed steak and a large salad topped with seeds and evoo.

Lunch cheese, celery and LC seeded crackers followed by a couple of strawberries with yoghurt
Dinner chicken curry served with coriander, mint raita and hm LC mini naan.

I'm particularly pleased as I froze most of the made, but uncooked, breads and was worried that when I defrosted and cooked them they wouldn't rise like the freshly made ones last week but they did. Makes it more practical to do a batch, freeze remainder then defrost and cook as needed.
Also had a gin and soda water with the curry. Just had a portion of hm LC lemon cake with cup of decaffeinated coffee.

Well, my coffee and walnut cake sadly didn't work. There wasn't enough sweetener, or enough coffee, and it was too dense. And it just tasted odd. The instructions in the recipe weren't great. Were they flat or heaped tablespoons of sweetener? The ingredients listed baking powder, but it wasn't actually mentioned in the method. So this has been "What haven't you eaten today?" At least I have walnuts to eat tomorrow.

Not all sweeteners are the same, some are 4x as sweet some 10 x etc. And the textures are different. For coffee cake I use this one but double the coffee, leave out the filling and put walnuts in top, some inside too., as options
Use Truvia sweetner that comes in a square plastic jar

Such a shame about your cake @IanBish it’s so disappointing when you’ve been looking forward to something nice. @MrsA2 ‘s recipe looks great though. Let us know if you try it.
It was a shame, @DJC3. I saw a recipe for a carrot cake using wholemeal flour and sweetener - I love carrot cake. I might try that.

Nice easy recipe for quick keto carrot here, made with almond flour which will be better than wholemeal flour
