Thank you. :happy: I've not tried the clafoutis yet, but it is definitely on my list to try! I do have a copy of the recipe booklet, it's brilliant (thank you @shelley262 !). I've done the olive oil choc cake (in individual portions), lazy choc mousse and seedy crackers. Sadly my microwave blew up recently , so I can't do the microwave recipes at the moment.
You didn't put an egg in its shell in it did you?

Have I told you how wonderful your news and food were yesterday yet @DJC3?
Breakfast: 30 mins exercise bike on waking; Tea; Brunch: Cocoa
Lunch: 2 slices schendierbrot protein toast (from frozen) some smashed avocados, 2 poached eggs; dog walk; tea
Evening meal: Weights then Salmon fillet fried so skin crispy; very large salad with more avocado and chia seeds - I loiked that Miss Dianne
No idea if any of that food fits the the party line but I liked it anyhow. Highlights today have been 3 kinds of exercise, first batch of CCBs for some time, cleaning chicken coop and using manure as mulch for raspberries.
One does so hope your day was tickety-boo

Feeling a bit brighter and have shaken off the 'not quite ill but not right' feeling.

Breakfast - 'muesli' (oats, dessicated coconut, pumpkin and sunflower seeds, nuts) with coconut milk and blueberries. Tea.

Mid morning - phd bar. I'm trying some of the protein low carb bars but I haven't found one I like as much as 'Nutra go' wafers.

Lunch - various meats, celery, peppers, salsa, Mexicana cheese and nuts

Dinner - steak, tomato and courgette fries. Visiting made with almond flour and parmesan stuck on to courgette fingers with egg wash. Very nice, and will definitely do again, but needed a bit of salt!

Add some paprika to the coating mix for the courgette fries and, if you like them, sesame seeds and the crisping.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: ham, raw mushroom, cauliflower and broccoli salad followed by Greek yoghurt and blueberries.
Mid afternoon: 2 x LC lemon shortbreads and black coffee.
Dinner: cold Chinese style pork, cauliflower and broccoli salad, coleslaw and pork scratchings followed by coffee chia pudding and LC chocolate cake.

Evening all. My fast is over. From 1pm Wednesday to 1pm today i have had just water and black coffee
1.30 pm - cappuccino (6.6g)carbs
6.00pm - walked in from work and just had to have a piece of hotel chocolat 70% chocolate

Oh how I wish I’d just cooked myself a huge steak! It’s my first ever time even trying never mind cooking with blue cheese. The second it came out of the packet and the smell hit me, the heaving started :bag: I had to abandon the kitchen and send my stronger stomached better half in to finish off the recipe. I was all set to bin it and order takeaway but he assured me it tasted better than it smelt. He Cooked my courgette in just salted water as not quite sure about the cooking in hot sauce as per the recipe. So I braved it and tried it and it does indeed taste ok. If I’d have been served it in a restaurant I’d have been quite happy. As it stands, my house stinks of the awful cheese and so only for that reason this recipe won’t be making a reappearance. But can’t love ‘em all I guess. If I’m trying one a week there’s bound to be some failures. Better luck next time :)

@DJC3 You must be so relieved, so pleased for you. Your celebratory meal was absolutely deserved and the mezze sounded delicious!

Thank you for everyone's lovely kind words and well wishes. This forum well and truly kept me afloat in our darkest days and for that I am eternally grateful. It was a very long day for us, appointment slot at 1.15 and we didn't get home until 6.00. They were running behind and then we hit rush hour traffic. The good news is that there has been further improvement, the less good news is we're back there in 4 weeks to go through the whole process again. All the staff were lovely and know about his anxiety problems, which made it easier. This was the 7th set of injections....we're beginning to feel like we live there. Anyway....on today's fodder.....

Breakfast: Coconut chocolate chia pudding. Not for me I'm afraid, I found it far too rich. It might work for a dessert, but too much for breakfast. I only ate a few mouthfuls, which was probably a good thing because.....

Brunch / Early Lunch: We decided to pop to a local café for a cooked breakfast, as we needed to leave around midday for hospital. All the usual suspects, bacon, sausage, black pudding, egg, tomato and mushrooms. I succumbed to a slice of granary toast , but no beans (I've never liked them anyway). Mr BB kept it all low carb. It was a good decision, as it helped keep his mind off things for a while.

Dinner: Neither of us felt like cottage pie, so just a selection of 'bits'. Babybel, mature Gouda, sliced Cajun chicken, avocado, cherry toms, cucumber, baby spinach. @BibaBee -- Great that the treatment went well and that your husband's vision has improved. Did they tell you how many more treatments are required?

Today ...

Breakfast: Two double decaffeinted espressos with cream and erythritol.

Lunch: Soup and two scrambled eggs with cheese.

Snack: Too many low-carb florentines. Glad they are gone now, way too tempting.

Dinner: Lupin bean hummus, roasted vegetables, a bit of lamb. One glass of red wine.

@BibaBee -- Will be thinking of you and your husband tomorrow. Haven't gone through this myself, but can only imagine how uncomfortable it must feel.

Here's yesterday's menu (now past midnight here):

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A bowl of extail soup with Brussels sprouts, pumpkin, cream and various spices. Half a low-carb flatbread with butter.

Snack: Way too many homemade low-carb florentines (sliced almonds, erythritol, a bit of salt, clotted cream and 95% chocolate), just couldn't stop myself -- fortunately blood sugars barely moved.

Dinner: Lamb's lettuce with Caesar's dressing and parmesan. A Wiener sausage. Two sticks of manchego cheese. No wine today.

Ooh I love the sound of the florentines - do you mix all together and cook them and then coat with chocolate, like with regular florentines?

Hope everyone is now recovered from the various lurgy attacks. I've been dipping in and out desperately trying to catch up as I have a very busy weekend. @DJC3 - great news. I certainly know how you feel. It's a bit of a double celebration as my one surviving brother also got the all clear yesterday so he too is off the hook for another 6 months. We were up there today for arrangements for tomorrow. He still has all his family there but they'll be dispersing in a week or so hence the gathering tomorrow. So, meal out tomorrow followed by Bohemian Rhapsody. Would have been even better to have been able to do it tonight as it was the sing a long version! So tomorrow will be Nandos first - Anyone know if Nandos frozen yogurt is ok for us or is it sugar packed? @Goonergal - have a lovely weekend. Enjoy. Back to the catch up.
Wednesday
Bed 6.3 FBG 6.6
B. 2 scrambled eggs with 3 rashers of crispy streaky bacon. Tassimo Americano grande with a dash of cream.
L. The other half of that Phd caramel bar - definitely too sweet. I wont get that one again.
D. I'd been spicing ribs since yesterday so it was a rib fest served with nandos pirinaise (think that's how you spell it). Lots of water as it was hot stuff.
Thursday
Bed higher at 7.3 FBG 6.3. It's fine during the day but I still have a niggling sore throat. Aqua today. Should be aqua zumba but instructor has been struck down by the bug so it's my Monday instructor standing in.
B. 2 scrambled eggs and Tassimo Americano grande with a dash of cream. Then off to aqua.
L. Hubby had lentil soup made for the boys so I had a cup of it and it didn't do too much harm. It was chilly out so warmed me up nicely.
D. Was going to chance more soup but changed my mind and stuffed a small chicken breast with some haggis and had with a pepper sauce and vegetable chips. 6 raspberries and a spoonful of clotted cream.
Today - Friday bed 6.3 FBG 6.4 no DP today either.
B. 2 scrambled eggs and 2 rashers of crispy streaky bacon. Tassimo Americano grande with a dash of cream.
L. Nothing
D. More lentil soup but not so lucky this time hit 9 one hour on. Dropping quick though. 6 raspberries and a spoonful of clotted cream.
Plenty water again. Looking forward to tomorrow - a bit like my life little high, little low, Anyway the wind blows, doesn't really matter to me. Wish we were going to the sing a long now.

Some very funny stories on here today!
@Emma_369 well done on your significant fast - I now only fast daily overnight but do try to stop eating early and start eating as late as possible.
Breakfast bacon and egg and some mushrooms
Lunch bits of cheese, celery and a couple of lc herby crackers
Dinner turkey curry ( frozen leftovers from Xmas ) served with cauliflower rice followed by small slice of hotel chocolate Yule log with coffee
Hope everyone is having a great evening - bet you are still celebrating @DJC3 keep up the celebrations right through the weekend it’s important to celebrate good health news.

Thanks @ziggy_w . They usually go for a course if 5 or 6 injections every 4 weeks, then increase the time between treatment to 8 weeks, 12 weeks, etc. We're up to 7 now, still every 4 weeks. They are being quite cautious, as they know he has rapidly brought his blood sugar under control (down from 122 in June to 41 in November). Although good in the long term, such massive changes can make the maculopathy worse in the short to medium term. The time before last, his left eye decided to throw a bit of a wobbler, so it's a bit unpredictable. We see his consultant in just over a week, so she might be able to give us an idea of the longer term plans. Just hope he gets away without laser in the left.....he's already had it in the right eye.

I only discovered these last week and they were a revelation. I added a pinch of chilli too......delicious!

Hi @DJC3,

They are actually very easy to make. Melt erythritol in a pan, add a pinch of salt and clotted cream. Wait until it caramelizes and stops bubbling. Add the sliced almonds. Takes a couple of minutes until almonds are browned. Pour unto a wax paper sheet, spread out with spatula and let cool. Break into smaller pieces. Melt high cocoa content chocolate in pan (about 80 degrees) and dunk the bottom of the florentines in the melted chocolate and put bottom up onto the wax paper to let chocolate solidify.

Btw, was way less messy then trying to make the coconut bites.
