What have you eaten today? (Low carb forum)

B: on the road back home, found a greasy spoon type cafe. Brilliant mushroom and bacon omelette, so many mushrooms and the bacon was 2 thick rashers inside! Result!
Hubbys full English was very greasy and carb laden...beans and hash browns and fried bread and toast and cheap sausages. Why he still chooses it I don't know.

Skipped lunch but did bake some lc biscuits destined for the freezer. Yes, dear reader, you've guessed it, I ate half. :banghead: :banghead::banghead:
They were made with 10 crushed sugar free sweets, so loads of sweetners. No wonder my tummy has been rumbling, gurgling and windy ever since.

D: bockwurst with carrots and green beans and gravy

Later at an meeting, half a glass mulled wine. Everyone else had mince pies.
 
Break fast - 45grams peanut butter choco slab. Almond milk coffee
Lunch - 1 egg white fry, raw red cabbage, winter melon curry, cauliflower curry, chia seed pudding with pumpkin seeds.
4pm - 2 egg white omelet with spinach and tomatoes.

Dinner - konjac rice fry, winter melon curry, raw cabbage, mix veg fry. Washed down with soy milk coffee.

@DJC3 - Just in case. I've just had an email from Klarstein saying 20% off everything, so that brings that AF oven down from £249 to £199.

Timing is everything sometimes, but never mind. We were happy to pay what we did, when we did.

 
Had quite a large breakfast - the rest of the cabbage and sausage dish from yesterday with added eggs "poached" in it, to give it some volume. Ended up being quite a lot, but I ate it because I had to go out and that usually depletes BG level.

Went out to get my legs bandaged again and while I was there had a hypo. Luckily, I had thought to put a little box of oatcakes in my bag "just in case" so had one of those which put me up a couple of points. When I got home, another hypo hit so I had 4 dates (emergency supply fruit pastilles are in the car, which is in the garage!) Very tired and cold, I dozed until Em came in from school. BG now 7.3.

Cup of tea, tea and a KitKat biscuit for Em.

2nd meal, once Em has gone home, will be lamb chops and Brussels sprouts. Chops fried and sprouts shredded and braised - might put some garlic in and some lemon.

Thats impressive and looks like it would take a full size chicken. I currently have a Tower a/f-oven with rotisserie function but it’ll only accommodate the smallest of chickens.
I have high hopes for the ninja which at the moment is still in its box, but there’s no way I’m waiting until Christmas to try it.
 
Today was the Eden project Christmas fair/market. My intention was to have a good breakfast and take a packed lunch to avoid the carb fest of options there. Failed on both counts as I forgot to have breakfast, then although I’d made a chicken SRSLY roll to take, I forgot that too! It was a good day and we had free entry into the biomes with our ticket so spent the rest of the afternoon in the lovely Mediterranean biome.
I bought some local Ewes milk cheese from one of the stalls and ate that with the wine at lunchtime. ( @maglil55 they did let me have 2 glasses!)
Dinner was kobi keema I’d made in advance followed by tea and DGF Crimbo crumble.
I feel your pain with your up coming garage bill @Annb , but happy for you @ianpspurs that your old jalopy sailed through.
@maglil55 that soup looks just what the doctor ordered, delicious.
@JenniferM55 so sorry you are still suffering, not having a good nights sleep makes everything worse too.
 
@DJC3 well done on making most of your day out and getting two glasses of wine sounds like you had a little Mediterranean warmth thrown in too.
I was out first thing again so just small glass of kefir with my supplements
Lunch 2 egg mushroom omelette with spoon of kimchi and spoon of sauerkraut followed by a spoon of berries and yoghurt. Btw I have new plates from John Lewis and I have joined @ianpspurs and @DJC3 in the red and white kitchen stuff club!

One mug of tea before going over the fens - acres of Fen celery @shelley262 - for immunotherapy which was delayed 2+ hrs due to IT issues
Reheated Costa CWC, 3 babybels and KC cinnamon doughnut while being infused, They have tea, coffee, biscuits, sweets and all sorts but I take my own
Hungry when I came back so had 2 poached eggs on KC toast and 800 mls water. Didn’t do much for my hunger but lowered bg - the drip does as well
NLCK Chinese chicken - probably the best of their selection for me - and Orzo, added mushrooms then 64 gms strong cheddar and 30 gms Foodie Market mixed nuts and more water. No images I'm busy watching Thanksgiving NFL like about 12k people round here

Was nice to be back in own bed after 3 weeks away.

Not really breakfast as just grabbed a piece of cheese (blended with chives, not my choice, all there was in fridge) and a large handful almonds.

Coffee after. Ordered decaff black with cream, but the cream was squirty and sweet and think the coffee was caffeine filled as still energised now!

Mid afternoon
3 rashers bacon. 3 lc biscuits made yesterday.

D: 2 chicken thighs cooked in vinegar, sherry and tarragon. A Delia I hadn't tried before. I cut the sauce amounts by half as there were only 3 of us and the original called for 425ml of sherry! Interesting but not sure I'd do it again. Green beans and the boys had rice.

We haven't put a whole chicken in there yet, but we have a decent sized joint of beef to try, on the spit, on Sunday.
 
Had a wound review at the hospital today, all clean and tidy. Stitches will come out on the 4th Dec.
pain is much better, no “hard stuff” needed now, just paracetamol every now and again.

Breakfast: my usual low carb coconut ‘porridge’ with raspberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: Balti chicken curry with cauliflower rice.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes with a good grinding of black pepper.
Water to swallow tablets.
Espresso.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', garlic, stock and rosemary.
Steamed Brussels sprouts with toasted slivered almonds smothered with butter.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, mint and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts.
Water to swallow tablet.
 
Yesterday was the last day of neighbour's delicious slow cooked beef with onion and cauliflower mash.
There was a planned meal for today but I didn't have time to make it.

Sinterklaas is coming soon, and I had a plan for a gift and 'surprise' (Dutch, a sinterklaas thing) for my friend. I'll have to send it by mail and I suddenly realised I'd need to post it tomorrow because I still don't have a car, no idea when it will be repaired. And tomorrow I'll go to the pool with a friend so I want to have it sent off.

Surprise and poem takes time to make, so food was a quickly thrown together and not very tasty concoction, good thing I only made a little. Still, it filled a gap, and my present is ready to be sent so all is well! :joyful:

Some kind of 'grill cheese' which was ridiculously cheap (and tasteless), with some bell pepper and mushrooms.
Tried to save my meal from blandness by adding cream cheese and hot sauce.
After which it was a tasteless meal which was also too spicy and too claggy.
Doesn't matter, I'm very happy with my creative work on the present so it was a good day!

Thanks for your good wishes, feeling 'practically' back to normal again after a couple of good night's sleeps. Hope every one else is getting back to normal (whatever that might be).

John's succumbed to the lurgy now, and has lost his appetite, so I was off chef duties yesterday. I mainly had 'bits and bobs' such as a couple of chaffles with cream cheese on top, half a dozen pecan halves several times with one of those times the nuts were accompanied with a G&T. My finale was a 2 egg creamy cheddar omelette.

Talking of air-fryers, I've read that apparently an 'air-fryer' is being sold every 2 minutes in the UK this week, I'm afraid I'm one of them. My old one was the cheapest I could find several years ago as I wasn't sure if they'd be one of those passing fads. Yesterday I bought a Breville Halo for half MRP, and I'm dying to try out a rotisserie chicken on it, it's not a big one, but I've read on the reviews it'll take a 1.5kg which is large enough for John and I. Hoping enthusiasm for all things culinary will be rekindled, even if it only lasts over Christmas.
 
Yesterday I had a (“handcrafted”) cheeseburger and loads of crispy bacon (no bun), coleslaw and lettuce salad for lunch at a restaurant. No salad dressing as I didn’t know what was in it.

My Libre started shrieking within 20 minutes, startling the rest of the restaurant patrons and staff. BG continued to rise to 11.8 on my Libre which would have put it at nearly 13 on my meter if I had been able to do a finger prick test.
6 hours later the readings were still above 9. Finger prick test on getting home confirmed that. Baseline usually 6.5-7.0.
Libre graph shows the readings didn’t go below 8.0 all night. Currently 8.9 at 8:26 am.

All I had to eat for dinner was an avo with salt and pepper in an effort not to raise the readings.

What could have caused such a dramatic response?

I am gutted because it’s the first time I have eaten out since going back on LCHF and it looks as if it will be the last time.
