What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: corned beef hash made with cauli rice in place of potato with broccoli, cauliflower and carrots plus a few spots of sugar free ketchup.

Breakfast kefir then scrambled eggs on hm LC toast
lunch hummus and celery plus a few mixed nuts
Dinner roast chicken, sausage and salad with Sauerkraut followed by DGF crimbo crumble. Photo upload problems again don't know why. Will try again tomorrow.
 
Coffee and unsweetened almond milk
Apple x 2 small
Salmon and Balsamic vinegar
Coffee and cream

I often need easy hacks to have a meal, like today when my meal will be a fish fillet a la bordelaise from Aldis freezer section.
So how do you make your microwaved cauliflower cheese?

Pic of yesterdays meal for tax: A perfectly cooked pepper steak (lucky me, I never cook steak), a cob of corn with butter and salt, and a side salad of lots of onion, tomato, cottage cheese, balsamic vinegar, some leftover lemon mayo found in the fridge and salt and pepper. Salad not in the picture.

That steak looks fabulous!
Easy cauli cheese: just put cauli florets and cream in a microwave bowl, cover and zap for a few minutes until it’s cooked to your liking. When it’s done, stir in grated cheese, it’ll melt in the hot cream. Season to taste. Voila!
 
B- yoghurt and M&S grain free granola.
L- cheese, Serrano ham, olives and walnuts. DGF Crimbo Crumble

That sounds perfectly easy, and I've added it to my CMT. ;)

No cooking today so my main meal was two slices of LC toast with 7 different toppings. A very interesting and flavourful German liverwurst, store bought tuna mayo, German 'zwiebelmettwurst', stinky Muenster, a cheese I forgot the name of, a Dutch nettle cheese, and chorizo.

I completely misjudged and mistimed my insulin, so high carb additions halfway through and after my meal were honey and doritos to treat a nasty hypo.

Hugs for the hypo @Antje77 must be really scary. I wonder if your Dutch nettle cheese is like our Yarg ( it’s a hard-ish cheese wrapped in nettle leaves. They also make one wrapped in wild garlic leaves which is delicious)
Today’s food started with 3 black coffees until lunchtime.
Lunch was a leftover cold pheasant breast wrapped in bacon with salad.
Dinner- large pork chop, easy cauli cheese and sauteed veg which included the cauli leaves.

Thanks @DJC3 . The hypo wasn't scary, just very annoying and it made me feel like **** for half an hour, nothing worse. :)

I didn't find any when I was in the UK last year so I'll have to come back.

Today was another lazy meal, I seem to have lost momentum when it comes to cooking, must be the time of year.
Thanks Aldi, I still like your fish fillet a la bordelaise, and with those lemon slices it even looks like food! :hilarious:

B- Gk yoghurt with m&S grain free granola.
L- 2x tuna melt muffins then a hm L/c brownie with cream cheese topping.
D- pheasant breast (again! I’m fast running out of ideas to cook them) fried in ghee with bacon and leeks then served with a slice of cheese melted on top. Looks a bit odd but was v tasty. Purple sprouting broccoli. Crimbo crumble with clotted cream.
