What have you eaten today? (Low carb forum)

I am officially very stupid indeed.
Let's be officially very stupid together!

I did it again :banghead:.
Inject for a beer when on the high side, thinking I'd do some of the preparations for dinner first to give the insulin some time to work before opening said beer.
Once I'm busy in the kitchen I think 'Oh well, now I'm at it I can as well finish preparations so I'll only need to shove my food in the oven later on', ignoring the already injected insulin as if I don't know how the stuff works.

I scrolled back to check, and yes, it's only 4 days ago I did the exact same stupid!
By that time I noticed something was off, so I finished putting a dollop of mayonnaise on every piece of egg and every piece of tomato first (Why? I should know how this diabetes thing works by now, right?) before dropping on the couch to treat a 3.5 and to drink a beer.

On the up side, I'll only need to shove my oiled and spiced cauliflower, broccoli and carrots in the oven and put the prepared camembert next to it after 10 minutes for @Chook 's garlicky camembert dish :hungry:

But first another correction for slightly overdoing my hypo treatment :bag:.

Breakfast today was the fried mince, onions, egg and cheesy thing. Delicious.
Lunch was some salami and chorizo.
Dinner was corned beef, cheese and pickled onions followed by 2 squares Lindt 90%.
Also ate a pack of salted mixed nuts during a day long meeting with my boss.

Today has been wonderful. No work, so was out in garden (on recliner) by 7am and have pootled and dawdled and snoozed and dead headed and repotted and watered and read and snoozed and weeded and provided dog entertainment and snuggles.

my sandalled feet are even more striped from the sun. My Vit D is maxed out, and all is well with the world.

It was melt in the mouth fabulous. I meant to do a Parmesan/ lemon and herb crust but forgot it until halfway through cooking so most of it fell off!
An all day meeting?- that sounds torturous on a day like today. Just a bag of nuts to sustain you is impressive.
 
Any time since the chip shop reopened, we have done a click and collect order, as it's so very efficient. No more than a moment or two waiting, so we're ordered up.

On the one time I asked for a fish without batter, it had obviously still been dredged in flour. That wasn't any enormous crime, except for the gluten, rendering me a lump on the sofa for a day or two.. I seem to get away with the few pilfered chips, but as Friday isn't a gluten-free night, I'll stick with Plan B.

Serves me right!

A lot of places are really doing well at the c&c system aren’t they? We get steak dinners from a local restaurant that way sometimes - so efficient and the steak seems to travel well.
Hope plan B goes well.

Bed 8.7 FBG 8.6 - a DP rise to 10.1 but I felt pretty lousy all morning. Afternoon it started to drop back into the low 7's mid 6's so I'm hoping this was something short lived. Paracetamol and water is the order of the day again.
@DJC3 - excellent looking lamb. Rack is my favourite of the lamb cuts. @Chook - you've certainly exceeded my Hubby on the talking in sleep stakes. He yaps a lot! Longest was when he thought he was back at work and there was a lengthy, coherent health & safety lecture. Worst is when he sits bolt upright and tells "Boo!". Never had a German lecture though.
B. TAG, a fair bit water and a slice of LC toast with ham & coleslaw.
L. Nothing
D. Lidl noodle carbonara. Probably the last 4 strawberries and cream.

Are you low carb because I can't cope up with the baked crisps either? :hungry:

Which fishless fish do you have? I tried the quorn version but it didn't taste much like fish.
Hello, i seem to be ok with 1/2 a banana, time will tell, i bought the chrisps because i had been walking for about 2 hrs by then and had forgotten my nuts and seeds...i think this is ok now and again...just learning about things...i read it's ok to eat fruit sometimes...x
As for the fish, I was bold over by the smell, texture and flavour of the Quorn fish i thought it was out of this world...then i read about Quorn and it seems there's a few problems it can cause...with some people...so now i am eating Linda Mccartney products, not as tasty but ok...had it with some cauliflower and broccoli mash and a few minted peas...not bad...x
 
Funny day today which involved a neighbour,who currently lives alone, needing emergency ambulance - fall and inebriation a complex story - but wonderful sunshine too which definitely helped me enjoy the day more! Started getting stuff ready for holiday on Sunday - not long now.
Lunch smoked salmon and scrambled eggs with a few walnuts
Dinner sea bass in lemon butter with celeriac chips and green beans plus glass of verddichio dry white wine followed by sf jelly and double cream. Just had decaff coffee with 100% montezumas with mint oil two squares.
Just about to nip for short walk I had intended to do earlier before ambulance drama!
Son and partner on holiday just now went paddle boarding today with their poodle Cooper or as they called it poodle boarding!

For as long as we have known them, these have always done click and collect, but we never used to bother. Following lockdown they opened only doing C&C, so we tried it and have stuck with it.

I love your dish (the added carrots worked well too), very festive feeling food :)

A bit messy too, after eating I had sticky camembert in my left eyebrow, in my decolleté and I think behind my ear as well.
On the other hand, doing the dishes consisted of one plate and one knife :happy:. I served on the dish I used to cut my vegetables and I decided it was finger food. I roasted everything on a baking sheet so no washing up there. The dogs took care of the eyebrow and such, so a winning meal altogether!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and Mississippi phd bar
Very Late Lunch, more like afternoon coffee break: a small packet of Cheesies and a pack of coconut bites with a creamy coffee.
Dinner: Prawn cocktail, leafy salad, pork scratchings and coleslaw followed by orange SF jelly, Oppo chocolate ice cream and LC chocolate granola.
 
Breakfast today was about 50g smoked salmon, Hb egg and mayo plus copious coffee of course.
Lunch: my daughter cooked me one of her Gousto meals which appeared pretty low carb. Halloumi with a warm salad of roast and fried veg. I didn’t have the dressing which contained some sort of tomato chutney.
Dinner: 3 fried scallops, a flat fish ( think it was a sole) with lemon butter and wilted spinach. 2 glasses dry white wine.

@Goonergal I’d love to be in a meeting like that!
Im enjoying the sleep talking stories @maglil55 and @Chook . I shared a room at uni with a girl who once, when asleep, sat bolt upright in bed and sang Edelweiss
 
I meant to ask yesterday, does anyone have a tried and tested recipe for lamb shanks? Cant contain wine, and preferably instant pot or slow cooker. TIA

MrB slow roasts shanks, but there are lots on the UP IP Facebook group @DJC3 . If you're looking to swerve the vino, just swap it out for more, fairly intense stock, and I'm doubtful it's possible to have too much garlic with lamb.

At the thick end, I'd push a boning knife down the surface of the bone and and stuff a garlic clove in there.

Alternatively, if you're slow roasting lamb, isn't it mandatory to just take to top off a bulb and lob it into the roasting tin? 'Tis in our house, and will be happening tomorrow.

Thanks. I always forget to look in the fb group for inspiration. Your right - no such thing as too much garlic with lamb.
 
I like lamb with rosemary, preferably fresh - the dried herb is always disappointing. Or I would imagine that any North African/tagine style herb combo would be a marriage made in heaven for lamb shanks.

Thought you might all be amused by these recipes. Haven’t opened the book in years, but was reminded of it this week (on another thread) and thought I would see if anything still appealed. Have been slipping into same old same old eating habits lately and could do with a shake up.

All recipes are low carb, and can easily be tweaked lower, if wanted. It has a full year of LC recipes. Book is called ‘Saving Dinner the Low Carb Way’.

These are the 3 recipes I picked out of the ‘summer’ section, and we will be having each of them over the next few days.

Soup or omelette? Both very soft. It's strange that when we are told "don't" we automatically "do"
Thank you I didn't even think about making an omelette I was going to make soup but was so exhausted for some reason and it seemed to be an effort to chop up my vegetables etc. But do need to get back into routine again as seem to be staying away from low carb and eating high carbs again. I'm my worse enemy
