What have you eaten today? (Low carb forum)

Yes I buy the Mrs Briggs AC vinegar and also drink at times an apple cider vinegar fire tonic. Last night I went to bed with BSL of 7.2 and before going to bed drank AC vinegar my BSL this morning my was same so I'm going to try keep doing it.
 
Morning! Didn’t get to posting yesterday - very long and draining day.

Ate 3 meals as was suddenly very hungry around 10am. M&S near the office to the rescue with a pack of manchego cheese and Serrano ham rollitos.

Then on the way to my medical appointment picked up half a rotisserie chicken in another M&S.

Dinner was air fried pork belly pieces.

Working from home today so these beauties have just gone into the Instant Pot.

 
Hi All
Yesterday and today brekkie was a slice of HiLo toast and lots of tea. Take my meds and then ready to face the day.
Lunch yesterday was 3 scrambled eggs creamy with big lump of good butter followed by a cup of tea and a DGF Raspberry Bakewell.
Supper was Chunky Fish Fingers with buttery swede mash. Haven’t bought swede in a while, its so difficult to cut up, but have really enjoyed it this week and it doesn't raise my BG like butternut does.
 
Wet dull weather definitely influenced what I ate today - moved away from my salads more to hot comforting food!
First thing a few spoons of hm yoghurts with my supplements.
Lunch mushrooms and two eggs all cooked in butter and served on one slice of livlife lc bread toasted followed by some stewed rhubarb and hm yoghurt
Mid pm succumbed to a lc choc chip cookie with my afternoon cup of tea
Dinner wild salmon in lemon butter with cauliflower mash and asparagus with glass of dry white wine followed by warmed lc blondie with a few berries and spoon of yoghurt.
 
Breakfast; paleo granola, slice of low carb toast and butter
mocha
Lunch; scrambled egg and bacon on one slice of wholemeal toast (out and about). lots of tea
Dinner: m and s seeded crackers, pate and a few cherry tomatoes, berries and cream and some 90% lindt

An interesting challenge tomorrow, lunch out with in laws at an Italian where everyone will be munching pasta or pizza followed by tiramisu. Found a nice starter with meats, cheeses, peppers and artichokes which should do nicely with a gin!! Should help me cope with the looks of sympathy and 'poor you not being able to eat normal food' comments
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and phd bar.
Skipped lunch.
Mid afternoon: black coffee and a DGF orange and lemon cookie.
Dinner: mushroom paté sandwiches made from LC bread with coleslaw followed by DGF lemon drizzle cake with cream.
 
B: blackcurrants ( a big handful as hubby got them out of the freezer and doesn't understand "a few"), ff greek, seeds and a splash double cream
L: more of a moving snack of 1 slice ham, some cheese, seedy crackers
Mid afternoon: 2 hm lc ginger biscuits (should have eaten a better lunch!)
D: neighbours arranged a social event so tried to avoid the leek and potato soup, crusty bread, Welsh cakes and tiramisu! Had just a mouthful of each and kept eating cheese and seedy crackers. 2-3 glasses red wine.
 
dinner Thursday night
vegetable and puffed tofu Laksa (I made the puff tofu myself never knew how easy it is to make puff tofu so at least I know when I have another craving for laksa which is not that often and can't found puff tofu)

scrambled eggs made using 2 eggs and about tablespoon cream cooked in some ghee and a few slices of tomatoes, had no bread so had my eggs with, to be honest I can' remember if I had 1 or 2 Pureharvest organic rice cakes so it is important to jot down what you eat straight away sometimes so you remember what you ate and how it will affect BSL.

when grocery shopping so when I came home was a bit hungry

~~~lunch~~~~ tin tuna on two slices of thinly sliced sourdough bread with butter and some lemon juice and a cup of coffee and a slice of watermelon which needed to be eaten and a glass of ACV.

~~~dinner~~~ heated up leftover laksa but didn't finish only ate half. I also took some melatonin to help me sleep and normally just makes me sleepy but this time I fell asleep in front of the TV something I rarely do and woke up at 11pm and don't know why but had a few squares of chocolate so of course was wide awake so when I did go to bed at 1.30 am I couldn't sleep LOL....

been having issues using the diabetes forum app on my phone sometimes it will not open and tells me the site is down but if I log on using my computer it works any one else having issues. Thanks
 
Apparently, BBC Scotland News is doing a special on the disaster that is the ferry service (or lack of) to and from the islands.

I'm back! Yes, I saw that there had been something about the ferries on the news. The Southern Isles seem to be worse off than we are. Certainly part of the problem is old ships, badly designed ships for the Minch crossing and badly maintained ships. Some of it may be insurance issues and some may be people complaining about getting tossed around on a rough sea on a badly designed passenger space. It's not just the wind, it's also the after-effects of it on the swell - it can get pretty bad out there in the middle of the Minch but ships used to sail, even if passengers were pretty green when they got to their destination. But then, the seating was more comfortable and you could just shut your eyes and forget about it while it was bad.

Having to think about today's food - BG has been low to too low over the last day or so. I guess stress can put it down as well as up, which I hadn't realised. Neil managed to get me a kipper when he went shopping - so that will be breakfast.

2nd meal will be steak, I think, with some kale. That should be good for the iron levels.
 
morning all. didnt post yesterday, was having a bad day. my good eating yesterday was no bf, belly pork done in air fryer for dinner and air fried chicken drumsticks for tea. in between came the bad eating which i won't bore you with! today, bg was 8.3 so no bf, dinner cottage pie with steamed kale and tea last of the crustless quiche my friend made for me. fingers crossed i can keep to it. the Montezuma with lime is very moreish!
 
Sorry, did you use coconut milk or coconut cream? I have both

Well it took me a while to work this out, the names coconut milk and coconut cream seem to be interchangeable, but I realised what makes this ‘porridge’ better tasting is to use the small cartons or tins of around 160 - 200ml with a high % of coconut extract. The large 400ml tins are generally lower %. If you’re in the U.K. here are four different products I’ve used successfully, the top two from Tesco the bottom two from Waitrose

I used a coconut milk with a high % am sure but chucked tin . It was creamy but I must admit I need to aquire the taste lol

You should be able to get a veal or chicken dish. Also Italian's I frequent offer some lovely seafood dishes or an Aubergine parmigiana?

Bed and FBG on Friday were both 4.8. Still cannot face coffee. Boys will be fit to return to school Monday.

L slice of ox tongue.

D. Courgetti carbonara. 4 strawberries with a dash of cream.

The App apparently goes weird after 11pm for a while. I don't know if that would be whatever time you are on when we're at 11pm (I've kind of lost track of the clock changes).
It's 11PM UK time, for me in the Netherlands it starts at midnight, lasting for 20 or 30 minutes.

It seems that apart from the regular 11PM glitches the forum has had some more hiccoughs yesterday or the day before. If it's just a one off thing I wouldn't worry about it and just assume it's our techies doing something, well, technical, causing the forum to stutter a bit. But if it happens more often, please let us know!
 
I forgot to take the steak out of the freezer. Idiot! So I had a small piece of cod which I pan fried and put into a sandwich with Neil's wholemeal bread.

Great improvement on an omelette made of rubber and scrambled eggs which didn't taste of anything at all (hospital fare). Actually - there was another meal of a kind of beef stew which looked as though it had come out of a tin of dog food and a scoop of mashed potato. I hadn't expected to be eating lunch at the hospital, so hadn't asked for anything but they brought it anyway, so I ungratefully pecked at it. Didn't taste all that bad - a bit salty but edible.
