What have you eaten today? (Low carb forum)

Well done @ravensmitten - it’s so easy to throw in the towel over one tiny slip up.
Today’s eating window started at around 1ish with mince and broccoli fried together in butter and with a splash of soy sauce at the end. Sometimes the simplest things are the best. I think I could eat this for every meal.
Pottered in the kitchen preparing stuff for the next few days when I’m away and Paul will be looking after the grandchildren. Too much tasting and snacking but never mind.
Dinner was supposed to be salad with leftover salmon fillet but I was too full for the salmon so it’s back in the fridge. Not too full for a couple of glasses of white wine though sadly. View attachment 59511

There are lots of things like this on the menu here, with varying levels of heat! I love them, almost all, except, for me, minced chicken just becomes a textureless nothing.
 
Morning all. Haven't eaten since 11.30 yesterday when I had some fried-in-butter-veg mixed with the last of the beef casserole. I had such a bad head I went to bed and slept like a log and still slept well at night. So tiredness could have been the cause of the bad head. Couldn't face food but have just had a cwc so that has broken my fast. I have some chicken drumsticks for today with some of my hm sauerkraut and a slice of cheese at teatime. As to not get in trouble for going blatantly off topic: So far I've had lots of coffee with milk and a stolen small bite from a pear meant for the guinea pigs. Will have a cracker with blue cheese and a cracker with liverwurst shortly but needed to share my happiness first. :)

Geezzz! Your neighbour in the Garden always makes me think of Alan Bennett's Lady in the Van starring Maggie Smith. Maybe you should offer it as a sequel?

It seems to be on youtube, but in a blurred version as to not get caught breaching copyrights.
I'm also happy to inform especially @maglil55 that it looks like I'll finally have the chance to watch The Lady in the Van in the near future, thanks to @Annb !

Took the mail over two weeks to get it to me and the package looks like it's been having a very hard time traveling all the way to my place. But thanks to the sturdy wrapping, the contents are still in perfect condition. :)

So glad it finally got to you Antje. Take the evening off and settle down to enjoy it. I hope, after the wait, you do enjoy it.

Food today so far has been 2 RyVita with mackerel pate. One cranberry and raspberry tea and 2 cups of ordinary tea. That's because there was no ordinary tea left in the tea drawer and I didn't feel up to struggling around to the larder to get a new pack out until after the pills had kicked in.

2nd meal will be curried chicken - made with pre-cooked chicken. It will be a quick meal to make - the "gravy" is already made and the chicken is cooked. Just need to add some onions and maybe some peas as well as some spices.

BG's a bit on the high side today. I seem to have days when, whatever I do BG stays high and other days, doing the same things, it goes low. There's more to this than meets the eye.

Cream cheese and Porchetta
Cheese slices
Smoked salmon
Overdid it on the cheese me thinks
 
@Annb what a lovely thing to do and @Antje77 I'm sure you'll enjoy the film - I certainly loved it. I was listening to a podcast yesterday evening about the secrets to living your longest, healthiest life the latest podcast from Dr Rangan chatterjee interviewing Dr Mark Hyman and amongst many things it highlights the importance of friends and supportive people and I count this forum as one of the things that helps me to feel supported well done @Annb what a lovely gesture.
Very busy day so easier to eat less!
10ish small amount of kefir with grated frozen lemon zest
2ish two cold boiled eggs taken out with me to keep me going
5ish had put dinner in slow cooker before going out hm passata with venison meatballs and glass of red wine followed by LC chocolate brownie and some yoghurt.
Excited this evening as collecting Cooper the minature poodle tomorrow for a few days stay not had him to stay over for a while should be fun. I've already cooked him a free range chicken as he loves chicken.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and DGF raspberry cookie.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: cheesy scrambled egg on marmite on LC toast followed by SF strawberry jelly and cream.

The film will have to wait a bit, had a long and hard fight with my computer to get it to play the DVD but the computer won.
I can borrow a usb DVD player to connect to the computer from a friend this weekend, so just a little more patience.
And @shelley262 , I completely agree, it's being supported and being supportive that makes life good, and those spontaneous acts of kindness are the cherries on the cake to give us happiness. :joyful:

Dinner was the same as yesterday, steak (a bit more well done than yesterday but still very tender), snow peas, and a creamy thing of onions and mushrooms. :hungry:
 
B: ff greek with milled chia seeds, 6 walnut halves and a sprinkle of cinnamon.

L: 2 hard boiled eggs, hm lc seeds crackers and a little pate.

Spent the afternoon preparing food for a meal we are hosting tomorrow , mainly chopping citrus fruits which is impossible to do without getting juice everywhere and eating up the oddbits.
Didn't dare test.
Irony was I listened to podcasts about fructose, statins and motivation!!! Goes in the ears, never reaches the brain!

D: cauliflower cheese with 2 rasher bacon. 1 sq 85% choc.

Sorry the DVD is being awkward. I didn't think of that. I used a DVD player attached to my little TV.

Pretty simple too, had the same again today this evening, the grilled halloumi was sooo good.

First meal of the day wasn't really much of a meal just grabbed some meat/cheese/deli bits from the supermarket as the family went for a burger while out at half term activities and I decided to have that instead.
 
B: all-bran with blueberries
L: Fried sardines, lettuce, tomato, onion, pumpkin chips (won't be having those again anytime soon)
D: meat pie filling (minced beef and gravy)
Post-dinner "snack" (lol): glucose gel, toast with honey, orange juice
 
Breakfast: a buttered crumpet and a cup of tea. Em was in for breakfast and it was what she wanted - I gave in to temptation.
Lunch will be the breakfast I meant to have: smoked haddock with an egg on top.
If I have a meal later it will be a mixed meat hash - bits of left over bacon, Lorne sausage and rare steak with some onion and garlic. It's in a bowl ready to go, bu I may not have a third meal. Depends, to a degree, on BG at that stage.

Just found a recipe for almond bread whidch looks simple and has no ingredients thaqt I can't take - that's assuming I am OK with almonds these days, which I think I am.
 
Phoned for test results, HbA1c was up 2 to 47 from 45 in 2022. :/

Doc also wanted me to book a routine appt 2-4 weeks to discuss something about a bone profile blood test that was done, no idea what that is about but hoping its nothing to worry about, but obviously plays on the mind in the interim.

Was a bit disappointed in the raise, though I only need to have hbA1c checked yearly (maybe it hasn't gone up at all but gone down as last one was June 22 and was out of control eating all the until the end of last year, when I started feeling really rough from eating carbs.), I guess also I've only gone low carb for the last 6-7 weeks, and lost 20lb so far, so hopefully next years one will be lower, unless I am able to request one sooner.

To get back on topic

Breakfast: Coffee with cream
Lunch: 200g of minced beef and onion in the pan, plum tomatoes, mixed peppers, mixed herbs, garlic, sweet paprika, salt, pepper, and a bit of grated cheese on top.

Probably be it for the day but might have a plate of spinach with some mackerel mixed in later if hungry.

Then Off to pick up our very welcome doggy guest
2ish when back had mushrooms fried in butter and two fried eggs our doggy family member tucked into two cold boiled eggs
6 mile forest walk together built up an appetite
5ish salmon and peas plus a couple of hm new potato chips followed by warmed LC blondie with yoghurt meanwhile our poodle pal tucked into free range chicken clearly enjoyed he's now snoozing
