What have you eaten today? (Low carb forum)

Love the name! Is it bacon wrapped round cheesy mince wrapped round sausage?
Yes, smoked streaky, 20% mince, Gouda cheese slices, some garlic mushroom & half an onion fried & some homemade tomato sauce & mustard with 2 Heck sausages. I used to do a lot of food smoking & this was one thing I did, can't do that now, but was fine done in the air fryer. Went well cold in an LC roll tonight for dinner.
 
Back posting on here though my meals contain a lot more carbs that the majority . I love reading about what other members eat and hopefully it will encourage me to eat less carbs and more varied low carb meals .
Wednesday got back on the "wagon " Breakfast was 2 whole toast with pate fresh garlic and sliced tomato .
Tuna salad with more of the demon bread and 2 squares of orange chocolate .
1/2 a banana mid afternoon .
Evening meal 2 low carb sausages broccoli and cauliflower mash with grated cheese and sauerkraut.
total carbs for the day around 122.
Thursday Breakfast 2 wholemeal toast with crunchy whole earth peanut butter . coffee .
Was running around most of the day so just grabbed some low carb sausages ( cooked last night I like them cold ) in sandwiches .
Evening meal was grilled chicken thighs and stir fry peppers in sesame oil . Then succumbed to the chocolate.
Total carbs for the day were 130
Today Breakfast was dry fried mushrooms, fried egg in olive oil and 2 grilled bacon rashers 2 slices of wholemeal bread and butter . coffee and tea .
Lunch cheese salad ( more bread in the form of crusty wholemeal roll )
Raspberries and chocolate for a mid afternoon snack ( really do need to get rid of this chocolate , and not via my stomach .
Evening meal had the same as breakfast .
Total carbs for the day 130 .... drinks are herbal teas and water .

I might try the skin only apple I don't suppose it would be possible to work out the carbs .

Maybe weigh the peel to calculate carbs I only peel a small Apple and always a sharp local in season Apple this article linked above gives details of carbs per 100g but obviously more fibre in the skin rather than whole Apple and majority of nutrition. The other factor is testing your reaction 're quantity and your personal tolerance. Hope it works for you. You also need someone, or a rabbit or guinea pig! who is keen on eating rest of the Apple - I hate waste so pleased my OH is happy to eat rest of the apple!

Other way around here, I buy apples for my guinea pigs and rabbits, but I might start stealing some of the peels for myself!

Same here. I feed apples to our garden birds through the coldest months of the year. Blackbirds and starlings tackle them whole, but bluetits grab their share too, if I remove the peel first.

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Teifi.
Water to swallow tablet.
Espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast. l
Lettuce, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise.
Almonds, hazelnuts.
Water to drink.
Strawberries to round off lunch.

D: Smoked salmon and cream cheese salad made with chicory, celery, baby plum tomatoes, salad onions, mint and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Breakfast: Crustless quiche with sun dried tomato and mozzarella. I made some mini quiches yesterday for guests on Sunday and had a lot of filling left over. For the sake of the lady who won't eat wheat but will almost only eat oats, I made an experimental oat short pastry so I wasn't sure how many mini quiches it would make. Turned out very well (I tasted one) and the pastry was very yummy! It didn't go as far as I had hoped though. Still, I'll stick with the crustless version.

2nd meal will be duck breast in an orange sauce and Brussels sprouts.

Thank you for the link, it's interesting. Funnily enough I bought a Chayote squash from Ebay yesterday, couldn't find a supermarket near me that sold it, hope to receive the chayote on Monday. I saw a youtube from the 'keto twins' where they made an 'apple pie' from a chayote, using no apples. Believe the secret is in the flavouring, they added cinnamon, but the texture is just like cooked apples. It'll be an interesting experiment.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: the other half of last night’s LC pizza with a side salad.

B: Two poached eggs and scallops with chopped, flat-leaf parsley, asparagus spears smothered with butter, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and rosemary, baked with sweet red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with tiger prawns and brown shrimps, avocado, cucumber, baby plum tomatoes, mint, salad onions and Halkidiki olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.
