What have you eaten today? (Low carb forum)

Today I had a few black coffees until lunch at 13:30 which was a cheese omelette and asparagus.
Dinner was chicken in mushroom sauce ( excess pie filling from yesterday). Looks a bit beige and boring so instead here’s a photo of the keto hummus I made. It uses cauliflower ( of course!) but once the tahini, garlic, lemon and olive oil are added it tastes just like the higher carb chickpea version. Even no 3 daughter who raided my fridge looking for a snack didn’t realise it wasn’t made with chickpeas. IMG_3671.jpg
 
@DJC3 your cauliflower hummus looks amazing presume you use same weight as you would chick peas with other ingredients as per a normal hummus - must give it a go.

Today's food
B kefir then two boiled eggs and buttered keto roll
L small amount of kefir and sauerkraut with bit of stilton and 3 lc seeded crackers followed by spoon of my winter mixed berries and yoghurt
Mid pm had to try my Montezuma s chocolate which had just arrived - really happy with two small squares taste is complex and satisfying and very low carb

I switched from Montezuma s to lindt 90% earlier this year for cost reasons as lindt cheaper on supermarket offers ( 1.95 at moment versus 2.50) but think will get the chocolate hit with less chocolate so Montezuma will work out cheaper,with fewer carbs and probably better for me too.
D hm chilli con carne and one slice of garlic bread using a KC slice of bread with some butter mixed with garlic and herbs. Had pudding of LC crumble.

3 mugs of tea (750 mls) until about 10.00 am
2 slices of KC toast with about 28 gms peanut butter - no palm oil, no added salt
Midday ish - CWC with s/f syrup and Ceylon cinnamon. KC lemon drizzle cake <45 gms
Tin of mackerel in evo with 1 avo; tea
Venison and pancetta casserole/stew/instant pot slow, low jobby: knorr chicken no salt stock cube, veg were green lentils (much < 50 gms), mushrooms, butternut squash to thicken with the lentils, few gms onion, thyme, oregano, rosemary then Dr Almond speculoos (67 gms) as I was still hungry and well under my cals - still am; Casserole looks uninviting and the table covering is JKP going feral but grandchildren will like it - well the girls will
Cronometer makes that just under 30 gms carbs if scales are accurate

Here’s the link to the hummus ( also on my CMT) I think the key is steaming the cauli then leaving it a few mins for the steam to evaporate.


I also received an order of Montezuma’s Absolute Black today. I bought the plain, orange and almond varieties. That should see me through Christmas. ( miss the mint though)
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: cheese, tomato and mushroom omelette.

All set for tomorrow, ward and time of arrival confirmed this afternoon. Alarm set for 6am :wideyed:

B: Two poached eggs with a knob of butter, slices of avocado and crevettes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom and spinach frittata made with eggs, Cheddar cheese, onion, double cream and thyme.
Vegetable tray bake using broccoli, cauliflower, sweet red peppers and leeks.
Steamed French beans smothered with butter.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, baby plum toms, celery, Halkidiki olives and salad onions dressed with home-made mayonnaise for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Supermarket shop. Thought I'd been quite restrained but still shocked at £50, estimated 30!

L : 2 pieces of a new to us Swiss cheese - Schlossberger, regular and vieux, It was nicely mature and very flavoursome, reminded of of a good gouda but different, 2 cherry tomatoes

Dry dog walk yay!

D: 2 chicken drumsticks, 4 chipolata sausages, cabbage , green beans. I glass red (hubby poured it so larger than usual)

Not been keeping my food diary up to date, my eating has been so erratic from the norm due to me 'experimenting' with food and having visitors staying. I've now got a clear run up to Christmas, this should put me back on track. I've also learnt quite a few 'lessons' along the way though.

Tuesday - did quite a bit of baking and preparing,

- made an almond pastry base for a lemon cheesecake that was made with eggs and baked. That was a success.

- Also made coconut flour pastry for the hm mincemeat for pies, the pastry turned out to be not so good a success and I won't bother doing that pastry again, though the fruity filling was that flavoursome it didn't need much for each pie. Have got some 'leftover' mincemeat in the freezer, I'm planning to make almond flour pastry mince pies on Christmas Eve.... keeping traditions going ;)

- Tried to make a Victoria sponge with almond flour, the sponge was a success, but the tins I used were too big so the layers were too thin. To rescue I cut the layers with a round pastry cutter to make small individual Victoria sandwiches, the 'off cuts' were used in a trifle.

- Trifle was made with sherry soaked sponge from above, a layer of two sliced pears previously cooked in a few tablespoons of brandy, a layer of sugar free jelly, a layer of custard using a sweetener with whipped cream on the top.

Didn't eat a 'meal' on Tuesday but did a lot tasting, it was impossible to keep track of carbs, but I don't think I was too wildly off.

Thursday had the planned 'pretend' Christmas dinner of turkey etc., with a slice of the cheesecake for afters. Again, this was a day that was practically impossible to keep track of carbs.

Yesterday had 2 back bacon rashers for breakfast with one 97% pork Heck sausage, and two fried eggs. Dinner was cold bits leftover from yesterday such as a couple of pigs in blankets, chipolatas and turkey slices, and another slice of cheesecake.

On the whole, think I exceeded expectations of 'navigating' away from carb overload.

Just about to have a couple of RyVita with cheese for breakfast. It's quick and I have to go out shortly to get my legs rebandaged.

2nd meal will be salmon, if Neil can get me some when he does the shopping for me. Intending to make a salad with little strips of salmon fried in butter. Just fancy the idea. Would really prefer it to be whitebait, but can't get that here. Needs must.
Well. That was a bit of a disaster. I ended up with too little time for any breakfast so just grabbed 2 home made digestive biscuits on the way out of the door. I wouldn't have done, but I had taken insulin to deal with the intended RyVita. Had my legs done while Neil went shopping and then headed home, but I asked Neil to stop off at the butcher's on the way so I could go in and buy enough meat to tide me over until we can go shopping again. I didn't have my Libre with me (forgot it) but as I walked into the shop I felt a bit dizzy - that would normally mean that BG is too high. By the time we got home, about 30 minutes later, I was in a full hypo. Grabbed 2 chocolate digestives and hoped for a rise (chocolate wasn't the best idea in the circumstances), B G stayed in the 2's so, after a while I had another 2 and waited. Next thing I knew, my Libre was shrieking at me because BG was too high (11.7). Still feeling really grotty and not hungry so thought I would just rest, watch some TV and then go to bed. Eventually, about 2130, I did decide that I should eat something and quickly fried off some thin strips of haddock with some salad. Went to bed after that, still exhausted.

BG this morning (early, of course, after the early night) was 7.9. So far, only 2 cups of tea but I will have some bacon and egg soon, before my cleaner arrives. Have to get the kitchen organised after yesterday's shenanigans first, though.

Making no promises about later.
 
Saturday 11 November bed 7.3 FBG 6.9. Another busy day transporting Hubby back and forward to the football, fitting in my shopping, and nipping into DFS to get the measurements of individual modules in the sofa (to work out best order well in advance).

B. 2 slices of SRSLY toast with back bacon and the usual TAG.

L. Nothing, too busy.

D. After bringing Hubby back, usual cold cuts. Deli roast pork, pork and apple, ox tongue, small slice of chicken breast, ham, coleslaw, veggie salad. CC Little chocolate pot.

Sunday 12 November - bed 8.8 (no idea) FBG 7.8. Grandson has another swimming meet, so there is no swimming lesson today.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Nothing

D. Usual campari and soda. Roast rib eye, GF Yorkshire pudding, sprouts & green beans. I sliced a potato then roasted it. CC little chocolate pot with raspberries.

Grandson got another PB - 50M Butterfly this time. He was asked at the last minute to swim the final leg (freestyle) leg in the mixed medley relay. DIL told me they had been last from the first leg, but he managed to overtake 4 of them on his final 50m leg to earn points for his club. He was quite popular! FreeStyle is certainly not his best stroke either.

Monday 13 November - bed 7.6 FBG 7.3. @ianpspurs I am awaiting an order from NLCK. They are quick at dispatching as I've had notification from DPD. I particularly liked the look of their pasta, so I'm hoping it works. There's quite a few things of interest in KC, too.

B. TAG and 2 slices of SRSLY toast with pate pate. Benecol dairy free.

L. Nothing. I had to cancel my Aqua slot today. Something is up with my left ankle, and I can't put any pressure on it. I decided an energetic Aqua class was not a good idea. I'm hoping it's not another gout flare up.

D. Just leftover cold cuts. Ox tongue, ham, deli roast pork, pork and apple, small bit of chicken, veggie salad, coleslaw. CC little chocolate pot with raspberries.

Tuesday 14 November - bed 7.6 FBG 6.2. spent a lot of time today convincing grandson's Grammar school that there was an issue with the App they use for homework. Eventually, they agreed but it took another day to fix. To grandson's horror, I got him to do a substitute exercise on IXL maths that I have. It was more difficult than the class homework but, it paid off when he agreed the class homework (when they got access) was easy compared to what I do to him!

B. TAG and 2 slices of SRSLY toast with coronation chicken. Benecol dairy free.

L. Fulfil bar.

D. I made another aubergine hash. This time with just aubergine, halloumi, and woodland mushrooms. Herbs and added tabasco as well. Fried egg on top.It won't let me post the photo, but it doesn't look much different to the last one. CC little chocolate pot.

Ankle is a bit easier today.
