What have you eaten today? (Low carb forum)

Today, for Sunday lunch, I had a lamb shank with red wine gravy, accompanied by Pembrokeshire chipper potatoes roasted in coconut oil, plus carrots, peas and green beans. I know it's not strictly low carb, but I par-boiled the spuds yesterday and refrigerated them overnight thereby rendering them starch-resistant (allegedly). Plus I don't have roasties often, and a Sunday lunch doesn't seem quite right without them. So those are my excuses.

Morning all. Yesterday I had a sirloin steak done in the airfryer, (marinated first in Lea and Perrins which is supposed to tenderise it). It was tasty but not as tender as I hoped. Today I have some chicken, cauli and broccoli and also some hard boiled eggs to have with a couple of Ryvitas. Enjoy your weekend folks. :happy:
Did you cut it against the grain too, that can make a big difference
 
Breakfast kefir then bacon, egg and a fried tomato in olive oil
Lunch same as yesterday - tuna in olive oil with kimchi and LC crackers followed by a few garden berries with hm yoghurt
Dinner roast chicken with one high meat content sausage, hm chicken stock instead of gravy and sweetheart cabbage with one small roast potato ( pre cooked and open frozen then cooked from frozen in goose fat) and glass of dry white wine.

Don’t usually post on Sunday as my routine during the day is always the same and dinner on Sundays is at the in-laws, and I’m not at ease taking pics of my food there. However today I have a cold/sore throat going on so have stayed at home.
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: low carb roll with a smidge of pickle, ham and baby tomatoes with coleslaw. Missing my Sunday Jaffa cake :(

My food today started with glass of goat milk kefir.
Brunch was 2 eggs fried in butter on l/c toast.
Big Sunday lunch - forgot photo. Slow roast belly pork with lots of crackling. Cauliflower cheese, buttered cabbage and green beans in garlic butter. Strawberries and cream to follow. Few glasses of wine as we had guests and it turned into quite a boozy afternoon.
 
Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed samphire topped with a knob of butter.
Baked calabrese, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
Water to wash down tablets.

Today Breakfast just had a massive bowl of watermelon weighed in at 270g. I would never have eaten that amount normally but my wife insisted as had to be done before it went "off" in the fridge. Combined with Metformin I know from bitter experience the consequences will be ravaging.

I expect never to eat again (at least for today) as my digestion will likely confine me to only a few yards from the loo.
 
B- 2 boiled eggs mashed with butter.
L- Cheese, ham and mustard sandwich in low carb bread. ( gentle reminder @LivingLightly for your bread recipe using oat fibre when you have a minute please?)
Mid aft- 2 heaped spoons peanut butter. Why did I buy it? I’m an idiot.
D- A fry up! 2 high meat content sausages and 2 rashers streaky bacon, both from local farm. 2 eggs fried in butter plus mushrooms and a cherry tomato.

I'm a metformin user too @ChrisT2. Much as I hate to waste food, consuming more than you want seems just as wasteful as disposing of it some other way, especially if it spikes your BG and gives you the trots afterwards.
