Black coffee x 2 and a Croque monsieur with low carb bread for breakfast.
Lunch out at Nando’s again: butterflied chicken breast, broccoli and rainbow slaw.
Dinner was a BLT in l/c seedy roll then 4 squares Montezuma’s Absolute black with orange. View attachment 68650

Can I ask... Where are you getting your low carb bread? I am desperate for a decent bread :(

Today I made a smoked bacon, mushroom and cheese omelette. In a failed attempt to compete with @Rachox's creation, I'm presenting said omelette in cinemascope. I did cut it so you could see inside, but it didn't really work, so you'll have to take my word for it. On the plus side I found a newish frying pan, so my omelettes don't stick any more.

Can I ask... Where are you getting your low carb bread? I am desperate for a decent bread :(

There are a few on line suppliers but I use this company now, as recommended by @Rachox and @shelley262 as the ingredients are cleaner - no preservatives, emulsifiers or the like. https://lowcarbfood.co their pizza bases are very good too!

Breakfast of one slice of bacon and egg with one slice of low carb bread toasted ( @Dave1975 I use liv life bread,mainly for toast, that I buy from Waitrose and I separate slices with bits of cut up kitchen towel I then freeze and toast a slice from frozen when needed. Rolls I mainly use the low carb company or deliciously Guilt free)

Dinner pork Bolognese with small amount of low carb pasta and small glass of red wine

B- DD breakfast sandwich ( slice of ham and cheese sandwiched between 2 fried eggs)
L- small portion of yesterdays leftover l/c lasagne ( served cold - even better than hot)
D- chorizo crumb topped cod with buttered green beans. 2 glasses dry white wine

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and another carb killa bar.
Dinner: LC fish pie with broccoli, runner beans and carrots.

That actually looks like really nice bread! I'm sick of getting nothing but cardboard! I'll check these out. Thanks for your reply :)

A slice of wholmeal bread contains approx. 28 grams of carbohydrate depending on how thickly it's sliced.
My body does not handle bread well @Dave1975, so I take the easy route and avoid it completely.

Evening all

Today:

B: Two poached eggs with a knob of butter and avocado, seasoned with a good grinding of black pepper plus a wedge of Teifi (unpasteurised cow's milk cheese from Wales).
Water to swallow tablet.
Espresso.

L: Salmon fillets baked en papillote with mushrooms, spinach, Kalamata olives, lemon zest, thyme sprigs, sage leaves, olive oil and butter.
Steamed carrot batons and French beans smothered with butter.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Halkidiki olives and salad onions, dressed with an olive oil, balsamic, lemon verbena and garlic vinaigrette, topped with toasted almonds.
Water to swallow tablets.

L- the last little portion of leftover lasagne cold. I liked it better cold than hot. 30g Montezuma’s.
D- duck breast, airfried for lovely crispy skin. Cauli cheese and a dull salad dressed with olive oil, s&p
Decaf coffee and cream.

Sadly, most supermarket bread isn't good for anybody, diabetic or not @Dave1975. It's virtually all made using the abominable Chorleywood process nowadays, because production is much faster.

You can always tell if you read the wrapper. The inclusion of a list of additives, such as acidity regulators, emulsifiers, flour improvers, flour treatment agents, bleaching agents, soy and ascorbic acid are a dead give away. That's a Chorleywood loaf.

Apart from the dubious additives and fats it contains, the short fermentation makes the wheat harder to digest and IMO it tastes about as interesting as cardboard.

Home-made bread has just 4 ingredients and tastes a whole lot better.

Even so, I don't miss bread during the warmer months @Dave1975 , but once the temperature drops, I sometimes feel the need for a slice of something with my breakfast eggs. Then I make Nordic bread. My recipe contains almond flour plus oat fibre; a combination that also makes good pastry. and is diabetic-friendly.

Lunch out at a friend's but I forgot to take a photo. it was delicious and low carb - salmon oven cooked on a bed of low carb veggies with some olive oil followed by some cheese
Dinner left over pork Bolognese with some chilli added followed by a few garden berries and hm yoghurt.

Vegetable tray bake using calabrese, cauliflower, sweet red peppers and leeks.
Steamed French beans smothered with butter.
Skipped pudding.
Water to drink.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, oregano and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to wash down tablets.
