Didn't go for a cheese crust then? @IanBish.For tea tonight I used up a few things from the fridge and made a rather scruffy-looking bacon, mushroom and cheese omelette, and served it with some garden peas. I tried to get its best side, but it didn't actually have one. Regardless, it was lovely!

Wow! Paper bag baking, so the food cooks in hot air and the steam generated by its own juices, is a wonderful way to cook fish, IMO @shelley262.Breakfast had kefir with low carb granola and a few garden berries
A fishy day today!
Lunch similar to yesterday -smoked trout with kimchi, artichoke and olives but also added some leaves, celery and radishes

Dinner wild salmon (picture just before popping it in a baking parchment parcel in the oven - dressed with dill, lemon and Olive oil) served with some peas and glass of dry white wine.

There's nothing much the matter with the appearance of your omelette, cooked until golden, certainly not scruffy-looking. I bet it was scrumptious.
It's tough when you can't get hold of food items that work for you.You put me to shame, @shelley262. That spread looks lovely. Feeling a bit deflated today, I had a red salmon sourdough sandwich earlier. I can't seem to get my artisan sourdough. They always seem to run out. So I got some from Aldi. But they didn't have the one I like. So I got the seeded sourdough. But it tasted gritty, and I didn't enjoy it. So I'll probably get a takeaway this evening. Carby or not, I haven't quite decided yet. I may just have some carbs tonight, to add to the others I've had today, and start afresh tomorrow.
Breakfast kefir then fried a slice of bacon, one egg and a few mushrooms in olive oil.
Lunch a few pieces of cheese - comte and Shropshire Blue - with low carb seeded crackers and kimchi, olives,radish and celery followed by a few garden berries with spoon of yoghurt

Dinner home made chicken curry - I usually use homemade chicken stock as the base but hadn't done any recently so it was a good opportunity to use a new -to me - product from M and S. They now do a beef bone and a chicken bone broth - both are low carb and fairly few ingredients and are frozen in portions that you can make into broth with hot water- perfect for me to keep in freezer. Not cheap but bone broth tends to be very pricey and this is cheaper than others and convenient to keep in freezer.

I also added a spoon of the new Zoe 30+ product from Waitrose to my curry on serving. Hoping it adds some extra diversity to my food for my gut health. It added a bit of texture to the curry. Planning to add this supplement to one of my meals a day while pack lasts to see if any health impact but it's pricey so would need to be convinced it made an impact before I bought another pack!
I reckon you need a good 3 ounces of grated Cheddar @IanBish to coat a two-egg omelette with a nice cheesy crust. I like to fill mine with some full-fat cream cheese as well. It helps keep some of the diced ingredients from escapiing when you flip it over and it eats well too.I didn't, no, @LivingLightly. It could have done with more cheese, though. I did enjoy it, mind.
I hope Paul is doing well. That does sound like you have a BG nightmare to manage.@shelley262 your smoked trout and kimchi lunches look fantastic!
@IanBish your omelette looks great to me, not at all scruffy, and they are my favourite fillings.
Today I had fried eggs, avocado and a cheese ‘cracker’ for breakfast ( slice of Gouda microwaved for 90 secs until bubbly and crispy)
Lunch was cream cheese in celery sticks and lettuce boats filled with M&S prawn and crab cocktail. DGF brownie and cream to follow.
Dinner DietDoctor Chinese style pork stew with cabbage noodles which was really tasty. Few almonds and tea with lactofree milk.
I’m trying to get back on track. Food has been erratic the last few days and BG sky high as Paul collapsed at work on Wed and has been in hosp on the cardiac ward since then. He’s ok and in good spirits but it was a horrible shock.
