What have you eaten today? (Low carb forum)

Yesterday
Breakfast scrambled eggs then couldn't resist lots of nibbles ( especially nuts and also had to taste test things like the ham, potato salad and hummus etc as I prepared and served a birthday buffet for youngest son!)
Lunch and dinner grazed on lots of the buffet food for both meals bits of: home cooked meats - ham, chicken and sausages, salads including a spoon of the potato salad ,nuts, hummus with celery and cheeses. Also had a glass of white wine and a glass of red. Puddings also of berries and cream.
Blood sugars higher than usual this morning as a result but I had a wonderful family day.

Going for a carvery today with the family. My son and Dil are not staying as long as I thought so I'm going to make the most of my time with them. I'm disappointed but looking forward to a longer time at Christmas. Have a good Sunday all. :)
A carvery is a wise choice for diabetics when eating out @RosemaryJackson. Most offer a range of meats and poultry and some include seafood and vegetarian options. The best ones provide steamed or baked vegetable side dishes cooked from fresh seasonal produce.

If new to low-carbing, I'd avoid Yorkshire puds and roasties and go easy with gravy and sauces.

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Whole sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
A medley of baked calabrese, leeks, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.

Hi @IanRob and welcome to the thread. That seems quite high for the low-carb forum. I'm not sure if there is a definition of what low-carb is for this thread. But I would imagine it's less that 50g. They sound like nice meals, though.

According to Diabetes UK (the ‘other’ site) low carb is under 130g. Of course it’s all about finding a level that suits you and your diabetes best.

Edit for clarity.

Makes sense @RosemaryJackson if you can handle a boiled potato as part of a LCHF lunch.

Before diagnosis, I used to enjoy an occasional jacket potato with lashings of butter. The last time I indulged myself when eating out, the spud tasted as though it had been reheated a dozen times. That cured me!

Today:

Water to swallow tablet.
Espresso.

L: Cheese-crusted omelette stuffed with woodland mushrooms, cherry toms, spinach and cream cheese plus grated Cheddar cheese for the crust.
Salad using lettuce, watercress, celery, salad onions, Kalamata olives and mint, dressed with an olive oil, garlic and balsamic vinaigrette, topped with walnut halves.

Evening @IanRob. Welcome to our forum and this thread for diabetic foodies.

When diagnosed with diabetes in 2003, while in hospital undergoing treatment for another disorder, almost the first drink I was advised to cut out was orange juice, which contains much the same amount of sugar as Coke. In fact all fruit juices are off limits as far as I'm concerned because of their high sugar content.

Once again, welcome.
