What have you eaten today? (Low carb forum)

Welcome back it’s a difficult one to deal with but not always easy to avoid eating completely in situations like this. Always good to be back and in control again!
Until I did 2 fasts in April and May I might have found it difficult but now I know I can do this I suspect that is the route I will go down. Bit worrying really but it has definitely become worse since I have learned I am ok 3 days fasted.
Edit: I did ensure my wife drove back from Southampton. I wouldn't feel happy fasting for a day or more and driving.
 
I added some mushroom as it was just a Marguerita, the base was very acceptable, good for a lazy night cooking. Blood sugar was only up 0.1 2 hours post meal, so happy with that :)

Haha, I did think it sounded a little too good to be true! Still thinking about cooking one up and putting it in the fridge for a few days worth of lunches though. Would make a tasty change.
 
Good luck getting about during marathon @maglil55 and hope your Ill health resolves soon. I read about why bgs go up during illness today and learnt that it’s because of the stress hormones released as a reaction to infection so decided to tackle my stress more than usual and did a bit more resting and also three sessions of mindfulness only 10 mins each but got big results with all bgs back nearer normal again. This also helped the stress! Did not enjoy seeing high readings over past couple of weeks. Not better yet but improving slowly and enjoying the enforced rest ( ps don’t tell my OH) a bit weird for me though! I’m usually always rushing around. also I decided that I need a break from caring so passed the baton a bit more today and encouraged outings without me !
Breakfast boiled egg and one slice of buttered low carb bread
Lunch small mackerel salad
Dinner small chilli with low carb garlic bread and low carb raspberry mousse.
Glad to read that you are feeling a little bit better. Interesting about stress increasing BG, I think I have read that somewhere before too, that’s why I try to do a little bit of mindfulness when I can. I think it’s important to have a little bit of “me time” and to let go of the reins now and then, it doesn’t do any harm to let others walk a few steps in your shoes, so enjoy your rest while you can. My perfect way to relax is to lie on my Pranamat, it’s so relaxing and allows me time to just be still in mind as well as body, moving about on these mats is definitely not for the faint hearted.

Hi everyone,
Breakfast today wasn’t really a breakfast as I just had a small pack of pork scratchings, reason being my manager was taking me out for lunch and I was a little bit worried that I might end up eating a months worth of carbs in one meal!
Lunch turned out to be a great success, we went to a local village pub, close to work, we were able to sit outside too as the sun decided to join us. My heart sank initially when I looked at the menu, but thankfully I saw the specials board, chose scallops wrapped in bacon, served with a small salad and chilli mayo, it was delicious
Coffee with cream this afternoon
Late evening meal as other half worked late so we had an Indian takeaway, I did my own cauliflower rice and didn’t eat the full curry portion, this has been fairly successful before, hopefully tonight will be ok, BG before eating was 4.9 will update later the 2 hr reading
 
Late posting as visiting my other Cornish dwelling daughter and grandkids. Decided to stay over.
B: halloumi, poached egg and spinach

L: 2 chipolatas mushrooms and a fried egg. Sf jelly and cream

D: daughter very thoughtfully tried to cook a low carb dinner - chicken stir fry which was nice of her. Took my portion before the sauce was added. Still got a fairly large bg rise, maybe due to the fairly large amount of veg. Had a couple of glasses of wine too - dry white, but didn’t taste really dry so maybe that was the culprit.

Haven’t been able to read everyone’s posts this evening but I’ll look forward to browsing through tomorrow. Night all.

That’s interesting and makes sense re the stress hormones and rising bg but even more interesting that your 3 x 10 min mindfulness sessions bought it down again, that’s great. Do you use the Headspace app?

Yes it is Headspace I use - especially love the targeted sessions - have used the pain and under the weather sessions over last day or so but find them all helpful to me and my bgs when find time to do regularly. My bgs seem to jump easily with stress but so does my blood pressure must be a very reactive person! Enjoy rest of Cornish family visit.
 
Just been looking for a means to ween me off of fasting when not at home. I have found 2 products which seem as though they might work. I don't know if others have tried them so here are the links if people want to check them out:

I have very low expectations these days I am often finding myself not thinking in terms of enjoying food rather just looking for low bg numbers. I must rethink as the tail is wagging the dog here.:)
Edit: 2 hours after eating the fulfil bar bg was 5.6 so very disappointed by that.

Hi all. An OMAD day today.

Surprised I made it as was unusually hungry by 7am. Managed to fend off the hunger with a low carb hot chocolate. Saw @Brunneria talking about drinking hot chocolate from a bowl on another thread and that gave me the idea. Mixed a heaped spoon of cocoa with some cream - didn’t so much form a smooth paste as a large mousse-like ball. Added more cream, didn’t improve things but once the warmed almond milk was added, all was well. Added a teaspoon of erythritol and a chia shot to thicken it up a bit. Delicious.

Dinner was roasted pork belly - managed to get the crackling really crispy - followed by sugar free jelly mixed with cream and chia seeds: made for an interesting texture, with extra clotted cream on top.

@ianpspurs hope you can find foods you really enjoy that also let you meet your BG targets. I don’t think this would be sustainable unless I was enjoying what I’m eating. Menu often feels pretty indulgent.

Well done @Goonergal on your one meal. I find these days I need three regular small meals it’s all about finding what suits you.
I’m a bit better today bgs ok but still in some pain, borderline dizzy if move quickly and very deaf. Distracted myself with some cooking this am. Did low carb choc olive oil cake in two loaf tins frozen one and diet doctor keto rolls. They are really good this time see below for my adapted recipe if interested

Breakfast one each of sausage, bacon and egg
Lunch one and a half of the DD rolls with home made mackerel pate followed by small slice choc cake
Dinner chicken curry with a dd roll as a naan replacement - raspberry mousse planned for later.
Hardly left house in days now so not like me but determined to rest it out and go with it. Must catch up with work soon preparing for big conference in mid June and lots to do but health comes first so another rest on agenda for tomorrow

Currently it seems dominated by keeping bg as low as possible rather than taste or properly researched nutrition. That way either madness, health issues or both lie. Bit of an attempt to let go a little today so menu below:

B: 2 X pint mugs Tea with almond milk:
MMS: Travel mug coffee with double cream; Cookies and cream Fulfil bar. Taste ok not worth 5.6 @ 2 hrs
L: 2 X pint mug Assam tea with almond milk and splash double cream; 9 salami crisps with 20 gms philadelphia ( Seems now I have worked out correct thickness and timing I understand their attraction); 30 gms Jarlsberg; 5 cherry tomatoes; 40 gms cucumber; chicken thigh; 2 radishes 0.1 rise from Fulfil bar so rise OK just the level too high (5.7)
MAS: Lemon drizzle cake with clotted cream . I liked that combination a great deal; not sure it has any nutritional value
D: 8 oz burger; cheddar cheese; fried egg; florette salad; vinagrette; 2 X Mugs Tea; filling but dubious about nutritional value
Looking back at that list it gives the impression of someone who doesn't aim to live long :banghead: Hopefully back on track tomorrow.

@DJC3 Were your DD keto rolls normal size or about the size of a satsuma/rounders ball?

Smallish but not ridiculously so. Small orange size rather than satsuma I’d say.

Can’t comment about rounders ball - I hated the game so much at school I seem to have blocked all memory of the ball apart from how much it hurt when I fumbled a catch.

That menu looks fine to me, low carb and high fat, and 5.7 is a great level. I agree with @Goonergal in that if you don't enjoy what you eat then this way of eating just isn't sustainable. I hope you manage to find the right balance for you soon!
 
Hello all, hope you're all enjoying your bank holiday weekend! Currently got a great thunderstorm outside, I am enjoying it very much.

L: Two low carb bagel pizzas topped with tomato & pepper sauce, mozzarella, chicken, sausage and pepperoni
D: Chicken and chorizo kebabs with some spinach leaves and cucumber on the side
Snacks: Adonis blondie, peanut butter cheesecake fat bomb, Cadbury's Highlights mocha with double cream.
 
That menu looks fine to me, low carb and high fat, and 5.7 is a great level. I agree with @Goonergal in that if you don't enjoy what you eat then this way of eating just isn't sustainable. I hope you manage to find the right balance for you soon!
Thanks @vanillapie. The bar was slightly better @ 5.6 but for a simple bar that doesn't work for me unless there is no other option - that's just me I guess. The bar was a trial to see if they would work when travelling - so now I know it won't. Again, the menu was LCHF I just have worries with so little veg and no fruit. Thanks for the useful/helpful comment I'll just keep tweaking.
