What have you eaten today? (Low carb forum)

Breakfast: home made 'muesli' (small amount of oats, desiccated coconut, pumpkin and sunflower seeds, chopped nuts and extra pecans. Had coconut milk and blueberries. Absolutely delicious! Alpen has nothing on me

Lunch: smoked cheese, chicken, celery, salsa and guacamole. SF jelly and 2 cubes of 85% chocolate

Dinner: spag bol without the spag (baby corn instead) and fathead dough garlic bread. It was my first fathead - it was *ok* but had a very slightly odd taste which I wasn't sure was the baking powder (which I hate) - daughter thought it was coconut flour. Anyone else make it, and do you use coconut or almond flour?

All in all quite a good food day
 
Wonderful sunny day managed to get out for a few hours this afternoon
Breakfast lodough eggy bread and fried egg
Lunch veggie soup
Dinner two lamb chops on bed of buttered mushrooms and small glass red wine followed by raspberry clafoutis with yoghurt

All in all quite a good food day

I make fathead dough with mozzarella cream cheese and ground almonds. Have ditched the egg. Tastes great. Next time will be experimenting with a no flour option which is 2 parts mozzarella and 1 part Parmesan for the base. Again no eggs. Will report back.

I think I'll try again with the almonds. Coconut flour does have an odd twang to it somehow
 
Chilly and damp letting the chickens out first thing and securing them in the evening. In between warm and sunny. Liked the taste of what I had today but, realistically, all that matters are bg numbers. I think Mrs P having a few issues getting off to sleep is impacting me and making me query the effectiveness of this WOE for "wellness". Hopefully that will pass - mainly so Mrs P sleeps better,
Breakfast: Tea (5 pints)
Dockey : Soya milk latte with cinnamon
Lunch : Salad with Mackerel in olive oil and avocado; plenty of chia seeds and tsp psyllium husk powder; diet coke
Mid Afternoon: Tea
Evening meal: Fluffy omelette with cheese and garlic salami; mushrooms; tea
 
Evening all posting from train - just been to pick up some travel money for a brief weekend jaunt to Germany. Flying tomorrow night. Will be thinking of you @ziggy_w Weather looks set to be very warm, which will make up for being stuck inside working today. Two pairs of shorts optimistically being packed.

As of tonight the Lidl rolls are officially finished. Another hungry day. Lunch was M&S Serrano ham and manchego rollitos and a bag of pork crunch.

Dinner was the last Lidl roll with a bacon and fried egg filling and 50g macadamia nuts. Treated myself to 5 hotel chocolat buttons and 2 Ghirardelli 92% squares retrieved from the freezer - proving to be a good tactic as just prising the box they’re stored in was a major effort ( resistance exercise?)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over gammon cold with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: sweet and sour chicken with cauliflower rice and garlic and coriander ‘naan’ (it was actually a LC Joseph’s pitta bread grilled with home made garlic and coriander butter!) followed by SF jelly with cream and LC chocolate granola.
 
Evening all, lovely sunny day here too.
Didn’t fancy eggs this morning so had coconut porridge for breakfast instead, with 4 raspberries and a spoonful of cream.

Went to Aqua aerobics this morning - much more energetic than I thought but very good. I’ll def be going again.

L: very hungry after all the exercise. Made 90 sec bread, split and toasted. One half with almond butter , the other with Waitrose potted crab. While waiting I ate some roast sprouts I found in the fridge, cant remember how long they’ve been in there.

Late afternoon a CCB
Early evening 2 decaf coffees and cream in Pret.

D: Instant Pot roast chicken with cauli cheese and asparagus.
Natural yogurt ( also made last night in instant pot, it’s light and fresh, not creamy like Greek yog. Nice though) 2raspberries and a spoonful of @Rachox ‘s chocolate granola with it.
 
Evening everyone i have arrived safely to my first pit stop on route to my holiday, here until Friday morning.
Gorgeous day weather wise but most of it spent either indoors packing or driving.
As always when travelling a bit random regarding food choices
Almond milk cappuccino and a cheese omelette for breakfast
While travelling tucked into a bag of pork scratchings
L was the remaining half of a pot of whipped cream cheese with some chicken and a Costa cappuccino
D chicken leg and small salad
 
I just wanted to say thank you to everyone for the safe travels and happy holiday posts, I will miss being part of this community while I am away and will have lots to catch up on when I get back. Internet will be limited while I am away but you will all be in my mind, I hope everyone continues to have good days, enjoyable meals and reasons to be happy.

Another nice plain food day, today.

No brekkie, but 1 coffeesubstitute and 1 LC hot choc, both with cream.
Also more prawns in mayo for lunch. So easy. I buy the good value frozen small prawns, and when I fancy some, i throw them in a sieve, and dunk them in a bowl of cold tap water. 3 mins later, perfectly defrosted and ready to drain and eat. Then, half an hour later, needed more. So had a small tin of wild red salmon.

Supper was lamb shoulder, reheated in microwave.

Staying with relatives next week. Have to prepare my polite but negative response if i get offered cold sliced belly pork again. :nailbiting:

Seem to have reached a new stage with this carnivory. Probably due to the herbal treatment i have been on recently. Certainly feeling better for it. (Long story short, the herbs are supposed to have been helping my malabsorption gut issues, and seem to be working very well) i have been more energised, more... engaged. Housework has been effortless. Dogwalks easier. Knees and joints better. Stamina at work and in the evenings, greater. Considering redecorating a room or two...

Which suggests that better nutrition is getting through, and giving me more oomph. And with the carnivory... I am starting to get signals from my body about when, what and how much to eat. I think the signals may have got switched off, when the malabsorption meant that whatever I ate, some essential mins and vits weren’t getting through. Interesting experience.

Really interested in this. Working on resetting my food signals which have definitely been disrupted by recent issues with sweeteners and other dessert like foods triggering cravings.
