@DJC3 3 I updated my reply basically begging for how to get keto rolls to work. You made me think of my all time favourite sandwich - Marmite and tomato on granary or rye bread but keto rolls might work

I don’t know what to advise re making the rolls work - I do exactly what the recipe says. Maybe its the bit about not overworking the dough, I only beat for 30 secs or so. I usually beat the egg whites slightly before adding and the water is added immediately the kettle boils.
They always look horrible before they are cooked, the dough does look and feel like play- doh but they rise during cooking.
Well worth another try I think so you too can enjoy Marmite again.

Hi All,

Yesterday was
1pm salami crisps with cream cheese. Haven’t had them for days. Even nicer than i remembered!
7pm pulled pork and ‘square sausages’. Mr B’s sausage obsession continues. These were really disappointing. Even he admitted that he doesn’t want them again.

Today
1pm crustless quiche with feta
7pm 4 gf sausages
Unfortunately, still peckish. More salmi then. :D

I don't need a development plan and since I facilitated Mrs P's dishwasher training I feel I have helped her development :angelic:

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Mid-morning: at local coffee shop Americano, milk served separately so just added a dash then I ate a chocolate coconut bite from Prèt that I bought earlier in the week!
Lunch: was at my sons, realising he wouldn’t have suitable food I chucked pork scratchings, PhdCaramel bar and a pot of Greek yoghurt in my bag last minute!
Dinner mushroom and mozzarella omelette with cauliflower, brocolli and red onion salad followed by strawberries and chocolate hazelnut Oppo

Bed 6.7 FBG 7.4. My rushing around continues. Yesterday was another early morning transition session at school with No 2 grandson so it was a case of pick up both boys and get them to school before 8.30am. Then No 2 was given a taste of Assembly before being returned to pre school. In between I made it off the reserve list and into my Aqua Zumba class so I had 10 mins after getting back from pre school to get changed, get bag ready and out the door again! Driving was fun avoiding acorns and branches in the gales.
B. Adonis greenie on the way out the door.
L. 1/2 avocado and tablespoon prawns. Tassimo Americano grande with a dash of cream. This was after swimming. Got changed again and off out to visit my surviving brother in hospital following his surgery on Tuesday. Hubby handed me an Adonis brownie on the way out the door.
D. Hubby had been busy making mince while I was at the hospital. Got back and picked up both Grandsons as we feed them most Thursdays. Mince, carrot, peas , baby corn and cauliflower mash for me.
I did have 4 squares of Lindt 90% later after the boys went home before conking out at 9.30pm.
I have no idea what I will have today since my head is still full of an early morning conversation with youngest grandson that it was silly for the current P1s to even say the moon is made of cheese as everyone knows it isn't so there is no need to get blown away by the gales to see if it is made of cheese because it isn't! My mind is still trying to rationalise why when he knows the moon isn't made of cheese he still thinks it is possible to be blown to the moon by a gale? Ahh the workings of a 5 year olds mind.

Hi all.

BG all over the place today and took forever to come down to something approaching normal. OMAD day. Dinner was fathead pizza with pepperoni and salami topping followed a few broken up Hotel Chocolat 100% buttons mixed with extra thick jersey cream.

That sounds an awful lot but what do I know! How many Carbs do you average per day Rachox? I always feel that I don't get it right but my weight HAS come down ... albeit slowly.

That sounds an awful lot but what do I know! How many Carbs do you average per day Rachox? I always feel that I don't get it right but my weight HAS come down ... albeit slowly.
I’m not at home, so can’t look at my spreadsheet which is on my iPad. I have between 40-60g carbs per day. If I recall yesterday was 48

Gorgeous day weather wise here so I hope y'all had similar. Bearing in mind maths was my kryptonite I really am having trouble with this equation. The one where the nutritional value or pleasure of food and drink intake balances level of blood glucose one is prepared to live with. Some parts of today's menu totally confound me. I know I need to bend not break but I am blowed if I know which way to bend:banghead: Preoration over menu and comments may or may not make sense:
Fbg 4.8 so OK
B: 2 pints tea with home made almond milk; at breakfast equivalent 5.4 - absolutely no nutritional benefit for that level. Only reason for that arrangement is to follow IF
MMS:Travel mug coffee with double cream
L: Slice ham; small slice asparagus quiche with keto pastry base; Low carb inulin toffee, flaxseed and 100% chocolate bar; Iea with h/m almond milk; absolutely no reason that should end up 5.3 @ 2 hrs just so frustrated. Attempt to have enough fibre and some fat in the diet. It was neither substantial nor worth that level of bg
MAS: Water after a good workout to quell frustration
D:Salmon fillet; Mushrooms; Cherry tomatoes; 10 cal raspberry jelly; clotted cream; 8 raspberries - The one meal I can see the nutritional benefit of so lets hope the reading is not infuriating.
Sorry if people think I am whinging but I am very confused about where to go next :doctor:

I discovered a new recipe today in my quest to find a cracker or similar that would work and I could put filling on top ( the keto seed crackers I find break easily) and also had cholesterol busting ingredients! I did this one

I did adapt it by changing seeds to two thirds mixed seeds and one third ground flaxseed as too many sesame seeds for me and halved the cheese but they are wonderful very crispy and substantial good I think to take out with you as needed too. They are 1 g of carb per crispbread and I think are delicious. Should work for my conference.
Breakfast one boiled egg and one slice low carb bread and coffee with inulin
Lunch tin of wild salmon mixed with seeds, nuts and apple cider vinegar and one slice lemon drizzle cake ( nearly didn’t get lunch as couldn’t open can - had to ask for assistance must work on my arm strength! @ianpspurs as per our chat on the weekly weigh in thread!
Afternoon two pots of green tea brewed with mint
Dinner omlette with mushrooms cooked in advocado oil served with 3 of my new crispbread and a small glass of red wine followed by 3 strawberries, sugar free jelly and dash of double cream

Well I know how well you are doing, so I guess you are on track. I always worry that I'm eating too many but perhaps I'm just panicking

Your meter will tell you if you have too many carbs :)

Hi @Mal37 its all individual how low you need to go. Important thing is to cut the carbs enough to make progress on lowering your bgs. I started out at a 100g per day but realised quickly would need to lower and have stuck with a keto way of eating of usually less than 20g per day and never go above 30g ! The more you test after meals the more you’ll know what level of carbs works for you. Good luck

Thank you for your kind words @shelley262 it felt good to write the story and hopefully it will give new members some confidence to try the LC way of life. The cracker recipe sounds good, they are something I will try, as you say it’s nice to have something that you can add a topping too without falling apart. Thank you for sharing the link.

Hi everyone,
After my slighted elevated early morning reading, which I attributed to being anxious about clinic appt and the fact that I needed to deliver 3 separate training sessions to European based staff today, things settled down with some 5’s and a 4.9
B- cheese omelette made by my partner which was a nice treat, think he was trying to ease my anxiety
L- sliced roast pork with salad and yoghurt and herb dressing
Snack after work of a coffee with cream and small piece of choc oil cake
D- livlife bread made into a bacon butty with reduced sugar ketchup, well today was a special day after all

Lunch: 2 x boiled eggs with marmite soldiers made from HiLo toast followed by Greek yoghurt and raspberries
Mid afternoon: Hartleys 10cal Jelly and black coffee.
Dinner (Grabbed from the cupboards and fridge as roadying for my son’s band for a performance at a pub which I found out just in time only serves pizza!): pork scratchings, PhD bar, Greek yoghurt and raspberries.
