@jayney27 Hi thanks i'm fine it was just a bad day i shouldn't have posted that.I think i was becoming obsessed with all the finger pricking so decided to cut back on some of it. Feel a lot better about that decision. Thanks for the concern.:happy:

For those of you with a courgette/zucchini glut, I came across a couple of interesting looking recipes.

Really like the look of these. No nutritional info (will need to work it out) but I don't see anything in there that will cause problems.

This is just a variation on @jayney27's halloumi fries. I also noticed they do it with avocado too.

(I'm having a keto recipe rake).
Hadn’t considered this option but anything wrapped in bacon is a winning combination in my book
 
@shelley262 This is where the pastry came from - we didn't use the filling just the crust. Appears it was a combination of almond flour and coconut flour. As I said, we felt it would be good in sweet dishes - looking to make a Normandy Apple pie in the autumn as there is biggest crop of apples I have ever seen. I will try to make apple cider vinegar with some but in normal years there are plenty for 10 gals cider and barrow loads for help yourself and give a quid if you feel like it.

Mrs P felt it was a bit stodgy for a quiche. I found the base went crisp when reheated.

Thank you for referencing this recipe am keen to try a quiche of sorts as I could take a slice cold for lunch maybe, be a change from meat or fish

@jayney27 bade = base:angelic: I am .sure you guessed but just incase . Also, the only reason we didn't make the filling was we didn't have goat's cheese and it was after 4.00 on a Sunday and we live just beyond the edge of the world

Hi no worries, I’m quite used to having to decipher misspelt words so had worked out “bade” :) like you I live fairly remotely, so much so that the village pub sells emergency milk, bread and the like but don’t think they would have goats cheese. Wouldn’t swap where I live for a town though, you can’t beat the privacy, peace and well being feelings from living in a rural location :)

I agree. Our grandson has just spent at least an hour watching the huge field just beyond our land being combined - at one stage he could touch the tractor collecting the grain from our fence. he was very jealous that his dad and uncles had been in the cab of one but the h and s laws wouldn't allow that now
 
@maglil55 those bacon zucchini fries look delicious. I’m just off to Waitrose to buy ingredients for the sesame chicken strips so bacon and courgettes will now be added to the list. And I have now figured out how to use copy me that to pick up recipes in these posts!

In other news today’s menu was:

Breakfast - none

Lunch - M&S Serrano ham and manchego cheese rollitos and a 30g portion of mild Cornish cove

Dinner - small fathead pizza with pepperoni and Polish sausage topping followed by 25g Sainsbury’s 85% chocolate
 
Good evening all, hope everyone has had a funky Friday. Fascinating day for me. Never saw myself as a man who would succumb to bulletproof coffee or resort to weighing 100 gms of ice cream and feel guilty of eating that much:angelic: Then played "golf" with my grandson using 1 golf ball, 2 walking sticks and coloured plant pots. Final fascinating event was grandson just transfixed for about an hour watching combining. Menu below:

Breakfast+Mid morning snack: 3 pints tea with almond milk; bulletproof coffee with butter and 2 tsps inulin
Lunch : 2 pints tea with almond milk - I seem to be in "nothing tastes as good as lower bg reading feels" moe; I recognise a danger can I deal with it?
Afternoon snack: Can of exotic, mango diet coke; 100 gms combined Breyers choc and Halo top sea salt caramel
Evening meal: IP short ribs in h/m barbeque sauce ( short ribs were something I did think IP would be useful for); 2 tomatoes; broccoli with butter

Yes, it was @jayney27 and again, yes I id enjoy it. To update my last post, butter on broccoli was a step too far for me BUT live football tonight so all good
Edit: Had to dip into grated cheddar and have high fibre choc bar so a bit of a failure in some ways but 1 short rib is not a portion - more just a way to dirty a plate.

Breakfast - wholemeal toast and raspberry chia seed jam, tea

Lunch - satay chicken salad

Dinner - Argh Pizza Friday!! ... or it always used to be. My turn to have someone cook for me. Saved by Pizza Hut chicken wings and a huge plate of spinach salad.

There is going to be ice cream fail though, as there's a mobile ice cream 'deli' in our area tonight and I'll be having one!

I'm pre-diabetic (just barely) and have been quite strict as I'm keen to reverse it, so I'm not going to beat myself up about the ice cream

Happy Friday evening, I was lucky enough to get the afternoon off from work so have used the time wisely, 2 nice dog walks in the shade and through the woods, slow cooker on with gammon in Diet Coke, never tried this before so hoping it turns out ok. I’ve also made a batch of the low carb seed crisp breads, did a quick taste taste before transferring them to a container, I don’t imagine they will be there long!
B just a coffee but took my smoothie concoction to work to have mid morning
L 1 gherkin sliced and wrapped in sliced roast beef, some feta cheese cubes, couple of cherry tomatoes, mayo and small pack pork scratchings
Afternoon treat of a bullet proof coffee and half of a PhD smart bar
D will be the gammon with a small salad once my partner gets home
 
Hi all busy day today where did Friday go?
Breakfast a quarter of piece of lo dough eggy bread with one slice bacon and egg and my usual coffee and inulin
Lunch 6 low carb seeded crispbreads with pate and selection of cheeses
Dinner chicken breast and broccoli with butter and glass of red wine followed by sugar free jelly and spoonful extra thick double cream yum !
Baking and some shopping tomorrow to prepare for my birthday on Sunday. We are going out for a late lunch on Sunday with family but I’m doing the low carb birthday cake for afters as others claim they can’t take this on! Planning large lc chocolate olive oil cake with cream and strawberries. At least it means I will be able to have a cake!
Btw I am currently compiling a collection of ideas and recipes based in part on this thread. Intention is to pull together lots of ideas tips and recipes into a document that could be used as a resource by new low carbers and/or those moving on to trying out some low carb baking. If I included a recipe put on this thread from an individual I would acknowledge them. If it is an adapted recipe I will also acknowledge where it’s from originally with the adaptation. If any of you do not want me to include any recipes would you please pm me and I’ll make sure you are not included. I’m also happy to receive any of your popular recipes or ideas to include in the booklet - just pm me and I’ll add and put the acknowledgment in! I’d really appreciate help and ideas. The final resource I hope will be available for members as a resource on this site. We are often asked the same questions and requests for recipes for things we eat on this thread so hoping this will meet a need. Hope you can help.

What a great idea, so many people struggle at first with ideas of what to eat so a recipe document / resource of tried and tested foods is a brilliant idea.
I’m sure your chocolate cake will be a runaway success and it’s so nice to know we can still eat cake on our birthday.
 
Thanks @Brunneria yes they are excellent currently working through own stuff and this thread to start with and then may move on to those threads Or may just mention these threads as resources will see how it goes as I’ve got some time limitations! Thank you.
