What have you eaten today? (Low carb forum)

Are you coming down with something? Hubby has gone thermo-nuclear lurgy now and it didn't take long.
Could be a combination of things such as batteries in meter need changing, duff strips and 4 days OMAD and 3 waking around 3.30. However, some readings appear spot on so very confusing.
 
Hello all. Missed two days and it's surprising how much I had to catch up on. Quite prolific posting.

@Kingmidas -- So sorry to read about your mum. This must be quite a tough time for you.
@jayney27 -- Hugs. This is quite a difficult decision. I don't know how I would decide if I were in your shoes.
@ianpspurs -- Very happy you have decided to keep posting. It would have been a much lonelier without you.
@maglil55 and DJC3 -- Croissants were my favorite before diagnosis. Too bad there isn't a low carb version.

Monday ...

Woke up with a gigantic headache (maybe the beginning of a migrane). Had some ibuprofen, an espresso and a neck message by my OH. Went to back to bed for another two hours of sleep.

Breakfast: Some calf-tail soup (with red curry paste, sambal oelek, beef broth, and adobo paste as a base, also some vegetables) a low carb flat bread (DD keto bread recipe) with chicken liver pate. A small piece of low-carb carrot cake.

Lunch: Nothing.

Snack: A couple of pecans and 3 squares of 85% chocolate.

Dinner: Low carb flat bread made into a small pizza with cream fraiche, cheese, beef salami, onions and four tiny yellow tomatoes. Still hungry after this, so had a cheese platter and some chicken liver pate right from the container.


Tuesday...

Breakfast: Fried chicken livers in a mustard-pastis cream sauce. Two double decaffeinated espressos with cream and erythritol.

Lunch: Nothing.

No snacks.

Dinner: Fried chicken livers with mustard-pastis cream sauce. Half a low-carb flatbread with goat cream cheese and smoked salmon. Some slices of beef salami.
 
Ooooooooh. A big wheel.
Star Rider is more scary. Chair o planes that go way, way up (higher than the helter skelter - yes one of them too). Wouldn't like to get stuck up there!
Main market stalls are in Princes Street Gardens. Santa Land and the Santa train ride should be down there too.
 
Havnt posted on this thread for some time but as Im in a phase of more aggressive dietary management due to my intake of dairy having risen with the sadly predictable outcome that the symptoms related to my dairy intolerance (chronic rhinitis and joint pain) have flared up again I thought Id jump back on for a bit
Breakfast - unsweetened soya yogurt with berries, toasted flaked almonds & chia seeds
Lunch - slice of homemade low carb berry sponge
Dinner - is planned to be Natto (Japanese fermented soya beans) with eggfried mushroom Konjac rice and Korean radish Kimchi (fermented daikon radish - hot, spicey and delcious)
Drinks - 2 x almond milk cappucinos

No brekkie, as usual.
Lunch was a 10oz ribeye out for pub lunch with family. V interested that not one single person appeared to notice me offloading tomato and onion rings onto Mr B, or ignoring my chips, peas and mushroom. In fact all I ate was the meat. Ace, eh?

Then I undid it all by having a raspberry creme brulee (which was awesomely delicious). Just 5 raspberries, and the rest custard and brulee crunch. 4 hrs later, my bg is still OK. Result!

Doubt if I will need anything else today, but if I do, i think cream and a bit of goatsmilk yog will do the trick. :D
 
Hi all hope good day had by all
Breakfast two egg mushroom omelette cooked in ghee.
Lunch range of cheese and a mix of Brazil and walnuts
Dinner slow cooked pork shoulder with butternut squash and celeriac chips and glass of red wine followed by lc raspberry pudding and fage yoghurt.
Yippee Pilates in the morning - remaining work project to complete over next 2/3 days so will be good to get out and stretch before I get glued to my PC I just need to remember, if things go well, I should be completed on paid work by middle next week and then can focus on mum, all the family and Christmas! Hoping to have paid work break for a few weeks until early January when completed outstanding stuff.

@ziggy_w your menus sound so exotic and I’ve never heard of some ingredients, such as sambal oelek. Funnily enough I saw adobo paste mentioned in a recipe today and wondered what it was and if Asda are likely to sell it. Ive made chicken adobo in the IP and that was good.
@Boo1979 I hope the reduced dairy intake is helping your symptoms.
@ianpspurs your salad sounds good with the recent addition of stilton. I love stilton

@shelley262 my menu was pretty similar to yours today. Hope you manage to get everything done this week.

B: Omelette with mushrooms, cheese and a very small amount of ham

L: none but had coffee and tea throughout the day

D: Pork shoulder made into stroganoff in the IP with celeriac mash. Sf jelly and cream afterwards. Glass of red with it.

I’m trying a mix of @maglil55 ‘s and @shelley262 ‘s systems. So skipping lunch ( rather than breakfast which sees bgs rise too much) and keeping eating window narrower. So 16:8 fast if possible. Seemed ok today but I think I should eat breakfast a bit earlier.

Correction Star Flyer and They've moved that and the shelter skelter to the Gardens. Makes no difference though the flyer is still pretty scary. Have a look at this link. He goes on it and the Scott Monument looks a wee bit close!

They have a skating circle in the Square now.

Today was day 8 of being completely dairy free - my nose is no longer impersonating a tap and theres been some improvement with the joint pain - I expect that to improve further the longer I stay dairy free, but being 61 will also be having an effect!
As usual, paying close attention to my dairy and nightshade veg intolerances has seen my blood sugars back to pretty much flatlining

@DJC3 -- I find most of the ingredients in Asian food stores, they are usually very inexpensive. Sambal oelek is just a chili paste (from somewhere in Southeast Asia -- that's why it has a strange name).

Today ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Three scrambled eggs with okra. A small bowl of mushroom-zucchini cream soup. A slice of low-carb carrot cake. A glass of red wine.

Dinner: Philly cheese sandwich (made with keto flat bread). Some creme fraiche and half an avocado. Five squares of 95% chocolate with about 5g of carbs.

I didn’t know that food intolerances could affect bgs, but I’m not surprised - everything else seems to!

Ah! That’s what I miss about being far away from the Metropolis - nothing like that near me now.

There's certainly a lot there. When I passed earlier, everything was lit up, and the food stalls were going great guns, but not much action on the big wheel or the tall skinny thing. Probably the high winds were influencing things.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: chorizo and Gouda rollitos with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: peach chia pudding and black coffee.
Dinner: gammon steak, fried egg, small portion of petit pois and celeriac chips followed by SF jelly, cream and LC chocolate granola
 
Evening everyone. I’m feeling very Christmassy today - picked up a Christmas tree and it’s installed in a corner of the sitting room awaiting the ministrations of 2 small girls at the weekend.

B: 50g smoked salmon, spoonful of cream cheese, 1/2 avocado and scrambled egg.
L: nothing
Various drinks throughout the day, tea with almond milk, coffee&cream, peppermint tea and sparkling water.

D: 3 rashers streaky bacon and Instant Pot Cauliflower Mac&Cheese ( not too sure about this one, I think I prefer the microwave cauliflower cheese). Glass of red. Probably sf jelly and cream in a bit.
 
Breakfast: - Water; later tea
Dockey : Exercise bike; hot chocolate (7 hills organic raw cacao powder, soya milk, cream)
Lunch : 3 egg, portobello mushroom and cheese fluffy omelette fried in avocado oil and finished in oven; Avocado and h/m mayo OK at that stage; lemon drizzle cake and double cream quite an unpleasant experience; tea
Mid Afternoon: Tea
Evening meal: large salad with avocado (tomatoes picked yesterday); Large Salmon fillet fried in avocado oil- that was a pleasure ( Watched Bodyguard - it wasn't very good was it?)
