What have you eaten today? (Low carb forum)

@maglil55
Which Dr Almond bread are you using?
After seeing you mention it, I went Google-scouting and found the website. Ended up ordering 3 different bread types for Mr B to try, plus (be still my heart) their version of a choux pastry mix, suitable for (hear that heartrate rising to dangerous levels?) profiteroles.

Yes, my friends, PROFITEROLES

These have always been my bête noire. Utterly irrisitable on a menu, but usually disappointing when sampled. Often because of foul vanilla sickened cream fillings, and poor quality choc sauce. Of course MY profiteroles will have neither of those two failings. Will probably save the pack to make up at Easter.
Should have also said they benefit from extra mixed seeds on top of the seedy bread. They also benefit from some rock salt sprinkled on pre baking. Be very accurate with the water and I use a dough hook on my mixer to mix it.

@shelley262 warm fresh crispbreads Do Want!!!! I have to try those. Ugh re rescheduling entire life. I’m so very glad for US healthcare sometimes!
@Listlad how beautiful!! I can smell the razzberriez all the way over here.
Thanks @Brunneria! No, I am Calamity Jane for the past 15 years. Glad to know I’m not the only one. “Lamburglars” makes me laugh every time you use it. I get this fleeting image of fluffy little darlings creeping around on their little fuzzy bellies like the dogs who herd them.
@BibaBee is that the same as my seltzer water? Just carbonated water that would be used at a bar but with umpteen different flavors. My current favorites are Dr Pepper and root beer! My older son (32) used to go through a liter of any red flavor every night doing homework. It’s been around for a long time but the brands and flavor choices are multiplying. I looked at your link, and it must be the same thing. I thinnnnk...here mayyyybe if you say “sparkling water” it has to be naturally sparkling? Is that even possible?
@BibaBee CMT’d that pulled chicken. I might use jerk flavoring, can’t handle Mexican heat! And ewwwww cucumber water!! Perrier otoh I love so long as somebody else bought it$$$$
@SlimLizzy stress justifies everything from screaming weeping prayer to a whole box/bar/case of chocolate.
@dunelm I have to love your description of your lunch. So true of so much boughten food here.
Good night all. Early to bed hopes here zzzzz

Yes, I think it's the same as seltzer. There's a very popular brand in the US called Le Croix which has taken off and all the rage with millennials apparently! https://www.theguardian.com/lifeandstyle/2018/jul/04/la-croix-fizzy-flavoured-water. I've just drunk a raspberry and rhubarb flavoured one today (Le Joli) which was lovely.

1 meal today- just finished and off onto exercise bike. Meal was chicken thigh in sweet and sour sauce - Uncle Ben's reduced sugar approx 5% Carbs - with Edamame stir fry veg Not stir fried. That was a taste I have wanted for 4 years. We made some - 3 or 4 - that struggled to deserve to be called foul. Then had stewed rhubarb, 2 tsps of extra thick double cream with 1.5 dessert spoons of W1 Greek yogurt also had a tsp psyllium huskpowder and 1 of inulin in there - that is 3 tsps inulin today - could be fun.

Okay, posting earlier tonight before I either get too tired or distracted.

B: Mocha chia pudding and black coffee
L: Nothing but black coffee and water for me. Mr B had mortadella, brie, olives, radicchio and tomatoes and a wee square of 85% M&S choc.
S: Almond milk cappuccino.
Dinner: Leftover pulled chicken baked with mozzarella served with avocado, sour cream and the rest of the LC tortillas. Small chunk of some Willies Cacao chocolate. Washed down with a can of rhubarb and raspberry Le Joli.

All this talk of profiteroles is giving me ideas. They are Mr B's favourite and would be ideal for a birthday treat (not until June, so time to experiment).

To divert from sweeties, ever how L C they may be, who is it here who IP’s meat from frozen? @maglil55 ? I have this very local frozen chicken... I’m afraid though that there might be little paper bags inside the cavity with the organs and neck. Don’t want to be cooking paper!
Back to @Brunneria you have me drooling! Maybe I’ll look for an ice cream-ish recipe with all cream, egg yolks, and I suppose a sweetener. Who am I kidding. I’d eat it all if it was any good! How about sorbet then? I ate a huge amount of that last summer...
I have IP'd from frozen but not with chicken. I always thaw poultry.

I can never remember what I ate earlier in the day. Alzheimer’s setting in I think.

Okay...

Breakfast : Corned beef on livlife super ultra low carb toasted bread. Chunk of Brie.
Lunch : Camembert cheese and an apple.
Dinner : Minced beef and roast chicken with cauliflower rice. Fresh strawberries and greek yoghourt.

Tea

Have eventually ordered psyllium husk. I need to get some double cream, Thanks for reminding me.

Hi all back to three small regular meals again today - def suits me best!
Breakfast one slice of bacon and one egg
Lunch tin sardines in olive oil and a few lc seeded crispbreads followed by six 100% choc buttons
Dinner beef shin with cauliflower cheese and glass red wine followed by sf jelly with spoon of yoghurt and spoon of cream.

Just realised I didn’t post yesterday. Spent the afternoon and evening at my son’s house, got home just before midnight!
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Chinese style pork with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon at Starbucks: peanut PhD bar and a coconut cappuccino.
Dinner at Whetherspoons: mixed grill with salad in place of chips with a Diet Pepsi.
Think I spotted some lower carb granola but whilst it was lower carb it wasn’t lower carb enough so I put it back on the shelf.

Strange you quote my one day when I didn’t have any LC granola this week. However I do have a dessertspoonful every night I’m home after dinner with sugar free jelly and cream. The granola I use is home made.

I remember your recipe from a few weeks back. I haven’t had a chance to have a go at it.

@Goonergal hope you feel better now?

Thanks, I am. Those profiteroles look amazing.

@BibaBee those carbonated waters look good. I’ve moved away from using Ocado so will need to track them down elsewhere.

We liked the restaurant. I had to ask them not to include some fancy seeded croutons in my meal. If you are low carbing, look at their latest menu first. However; https://www.thebutchersdaughter.com/menus

Thanks. Will look into it.

My BGs still seem to have a mind of their own and definitely aren't behaving in an orderly or predictable manner! :banghead:

Hugs.

Today started out looking like a minimal food day and turned out quite indulgent.

Late lunch of M&S Serrano ham and manchego cheese rollitos.

Dinner at Five Guys - bunless bacon cheeseburger with mayonnaise and a touch of onion. Then purely in the name of research and in the interests of visiting friends in May (one of whom won’t be able to walk far), scouted nearest Hotel Chocolat cafe and sampled their 85% hot chocolate (made with melted chocolate, not cocoa) which they kindly mixed with cream rather than milk. Rather good. And I may have eaten a pack of 3 65% super milk batons. AND stocked up on tea.

Walked some of it off by dropping down to the river and wandering along to Cannon Street to catch the train home.

Now I’m craving cauliflower cheese!
It’s so easy the way I do it - I just mix a bit of full fat cream cheese with double cream, grate some vintage cheddar - put a few cauliflower florets in a casserole add the cream and soft cheese mixture, add salt and pepper sprinkle with grated cheese and cook 180 fan for about 40 mins till cooked and brown - I’m hooked on it as I find it a comfort food.

Thanks re thawing @maglil55
@Listlad I read “GeekYoghourt”!!
@DCUKMod after I’d asked, I remembered it might have been you. Guess chicken-thawing will commence tonight.
Bfast usual 1/2 avocado, egg, added a little sauerkraut; DWSAC but no chocolate. The meal had zero effect on BG which was good bc it was already very high. Ugh.
Lunch seltzer, Salted DWButter
Starving. Plan to take a different (but still free!) Barre class tonight. Starving!!!!! Might have to take a spoon kf butter or olive oil....
Supper will involve celery, wilted spinach, hm dressing and either more sardines, or egg whites. If it goes as last night, a manchego-on-manchego “slabito”.
Cannot break this fast just bc I’m hungry. This is a serious Lenten Lunch Fast. Hungry is good.
Early to bed I hope!
