What have you eaten today? (Low carb forum)

How do you use the nori sheets?
I bought some the other day but I have no idea how to use them really! :hilarious:

You might find you're already controlling it by changing the things you eat, even if you haven't lost weight.
Do you use a glucose meter?
I make "sushi" by mixing the mayo with the cauliflower rice, and spreading it over the nori sheet, then putting the salmon, and cucumber in and rolling it up. I sometimes will add kimchi if I have made some recently, or I will add avocado if it hasn't gone off and turned brown.

My numbers have been between 6.4 and 7.8 for the past two weeks I test once a day as directed by my doctor, and I have been taking 500mg of Metformin twice a day. I saw her today and she raised the dosage to 1000mg twice a day for the next 3 months. I am wondering if the only way to find out how the diet alone is doing would be to not take the medication for a few days and test, but I don't want to do any harm.
 
@Cherianne40 welcome to the thread difficult to give advice re your meds but I can tell you about my experience and what worked for me. I initially was on 2 X 500 tabs of Metformin with hba1c of 97 on diagnosis but since going low carb and managing to get my hba1c into 30s and keeping it there for 5+years I've not needed Metformin for that whole time but know several people who find Metformin is useful in their health journeys. I also had digestive issues on Metformin so pleased don't need it. Others tolerate Metformin better.

3ish Low carb shortbread finger
5ish hm passata and venison meatballs with small dry red wine - I try to not have any alcohol 3 days a week but unusually decided this week would be a 2 day abstinence - just a bit too much caring stress today and really enjoyed putting my feet up and sipping my wine!. Love the sound of your low carb sushi. I would never have thought of using cauli rice for it.
 
Black coffee until 11 then brunch: DGF wrap filled with roast beef, Emmental and turmeric&ginger sauerkraut. Unfortunately my order of Buy Wholefoods Online arrived then. It consisted of loads of nuts and the biggest jar imaginable of almond butter. I must stop ordering food at night when I’m hungry. I ate quite a lot of the nuts while decanting them into their new home.
D- salmon with lemon and pepper butter, samphire, baked mushroom and celeriac chips. DGF cake, now black tea with a slice of lemon. I’ll look out for that Twinings one @MrsA2

Still on holibobs, so usual breakfast, coffee shop coconut cappuccino and a carb killa bar, late lunch of spicy chicken wings with salad and coleslaw. Dinner at an Italian restaurant, here’s what I had, pizza in the background was hubby’s, honest!

First meal about 11:30 was 2 scrambled eggs with ham and brie. A nut bar

Depressing trip into town to collect an order. So many shops closed down.
Cheered myself up (the wrong way) with 2 éclairs.

D: 2 97% sausages with roasted carrots and sprouts with parmesan. Ff hm greek with berries
 
Small slice of rib steak, fried up leftover mashed veggies for breakfast.
Pork shoulder chops, green veggies, butter muchroom sauce gravy for lunch.
Home made fishcakes, bit of salad stuff for supper at six.

Couple of glasses of single malt before bedtime.
 
Wednesday food was: Breakfast 1 rasher of bacon 1 fried egg a wholemeal roll with butter plus tea and coffee(28 carbs)
Went for a 3mile walk dodging some of the heavy showers, felt shaky on return so tested blood sugars and they had dropped to 4.2 far too low for me .
Early lunch of tuna ( tinned ) salad wholemeal roll and coffee.(25 carbs )
Mid afternoon half a small orange and some nuts (5 carbs )
Evening meal 3 grilled low carb sausages veg and 2 very small new potatoes with butter .(18 carbs ).
FBG This morning ( Thrusday ) was 7.6 not sure why but then sometimes its not just about carb intake .
 
Today was a bit more over the top because I had to go with my husband to his ECG appointment.

Breakfast was the same - Premier Protein shake with a triple shot of espresso
Lunch - Container of Mixed Olives with Provolone from Waitrose and 2 hardboiled eggs (Feel a bit nauseous that was a lot of olives)
Dinner - Buffalo chicken pizza with spinach on it (the crust is made from chicken)

I am well within my carbs for the day, but my protein is a bit high. Will the higher amount of protein hurt anything? I have 137.6g of protein, 93g of fat, and 11g of carbs for my full day.
 
Breakfast: kedgeree made with cauli rice and with a fried egg on top. Good for BG - it dropped from 13.4 beforehand to 7.9 2 hours after breakfast, but not so good for taste. Cauliflower has a very distinctive taste which, for me, overpowers the spices, smoked fish and onion mixture. Even the fried egg didn't improve it much. Well, I tried.

2nd meal will be ratatouille. I saw a programme in which Michel Roux made a delicious looking ratatouille and I want to try it his way.
 
Yesterday - lumpy soup, small Greek yoghurt for brunch, and roast chicken with cabbage and sprouts (running low on green veg.) plus a glass of red wine.

Today will be (not brunched yet) lumpy soup (different style) small Greek yoghurt, and as an experiment, dinner will be a Not-Pie like my fish Not-Pie, but this time comprising left-over chicken with mushrooms, Tabasco and vegetable stock cube, topped with thinly sliced leeks, butter and cheese. And another glass of red wine (bottle lasts me 5 days, then I have a teetotal week).

Chicken bones and scraps are being brewed up into the base of tomorrow's lumpy soup.
 
@Cherianne40 a high protein diet suits me better than traditional keto macros. I don’t count or track any more but I always prioritise protein in a meal, add lots of green veg and keep carbs low. It works for me.
Todays food-
B- 2 H/b eggs
L- smoked salmon pate with the last of the M&S seedy crackers and salad. Followed by nuts and a Montezuma’s Absolute black snowman.
D- M&S ‘Fully loaded chicken shawarma’ as recommended by @maglil55 a couple of months ago. Wow! It was great, no way it would serve 6 though, Paul and I ate all but 2 bits between us, but then we are both big meat eaters. Mine with iceberg lettuce and turmeric & ginger sauerkraut. (I went back for seconds after the photo plateful)

@Cherianne40 like @DJC3 I'm a big protein eater - for me it doesn't raise my bgs, keeps me full and , I understand,that as you age you need more for good nutrition and muscle maintenance. Initially I under ate protein when low carb until started reading and listening more about importance of protein.if you listen to podcasts do a search on Dr Ted Naiman. His one on diet doctor in particular talks about ideal protein intake.
9ish small portion of kefir with my supplements
1ish a low carb wrap with a 2 egg omelette and spoon of beetroot kimchi
3ish Low carb ginger cookie
5ish steak with mushrooms and onions and glass of red wine followed by low carb lemon drizzle cake.

I've always assumed that I was OK with cows' milk - one of the things which reliably do not cause an allergic/intolerance reaction but reading your post, @Goonergal, I wondered. BG dropped to 3.9 on the Libre (4.1 on the fingerprick) after breakfast and I thought a cup of cocoa would be just the thing to warm me up (just cocoa powder and milk) and give my BG a little lift. 11/2 hours later it was 5.9! 2 whole points on one cup of unsweetened cocoa.! May have to rethink dairy products, but that's a whole area to check over the next while.
Cow's milk sends me through the roof (and I loved a glass of cold milk). I'm fine with Alpro sugar free coconut milk.
