What have you eaten today? (Low carb forum)

I love Leerdammer!
It has a very distinct flavour and large bubbles/holes inside. (It's nicknamed 'gatenkaas', 'holes cheese' around here.)
My mum told me the holes/bubbles and flavour are created by special bacteria letting out delicious farts. No idea if this is scientifically correct though, it's a very long time ago she told me this.

The texture is alike to a young Gouda, so I suppose they may need a bit longer in the microwave if you want to crisp them. They may stay a bit chewy though.
No reason not to buy it, it's a very tasty cheese just like it is!

Brilliant! I can’t stop laughing at the idea of delicious farts. I’ll probably laugh every time I see it in a shop now. ( I also think it’s delicious)
 
All this talk of making cheese crisps\toasts - wonder if a compte cheese would work it's all I have in fridge - will try later! Looks like thinness is crucial thing I have baked parmesan ones in oven but never tried the microwave version.
Difficult day yesterday involved a vet visit as we were so concerned about Cooper who had a gastric problem - seems nasty bug doing rounds and he may have picked it up on his walks. We were really affected as he's a very special dog and all our efforts yesterday were put into keeping him cool, comfortable and as hydrated as possible. vets are so expensive but she was so reassuring and thorough and gave him anti sickness jab etc and he seems much more himself this morning. He's now on a little but often, plain chicken diet today and crossing fingers but no walks for a few days.
So yesterday
Breakfast of kefir with shelled hemp seeds
Nothing in day apart from water and black tea and coffee
Late dinner sea bass and asparagus and much needed glass of chilled dry white wine.

Re cheese crisp, thinness is important but I’d think that evenness is probably more crucial, otherwise some parts will be burnt while other parts still soft and chewy.
Fingers crossed for Cooper’s full recovery. Dennis was sick yesterday morning too, I wondered if it was the heat, even though he only goes for walks early mornings and evenings atm. He’s a scavenger though so prob ate something disgusting when I wasn’t looking. He’s fine now.
 
During lockdown, I had a Significant Birthday, which I was therefore unable to celebrate as I had planned. In the subsequent couple of years, various friends moved away (was it something I said?) or became embroiled in personal matters that precluded joining me in celebrations. So today - finally - I managed lunch with a dear friend at a rather nice hostelry.

For the first time since leaving hospital after diagnosis, I had some carbs! Not a lot - just the crumbs on my whitebait starter, and a small amount of dressing on my crab salad. I didn't test before and won't be testing now. The venue staff were unphased about my T2 requirements and perfectly happy to accommodate. You CAN eat out with diabetes, and have a very good meal.
 
Yay Comte worked probably wouldn't leave skin on cheese in future when making but always eat the skin and would also cook them that little bit longer but lovely and crispy, however only got two as OH found them and couldn't stop eating them! Lunchtime a couple of the cheese crisps and a strawberry from garden with yoghurt
Mid pm LC ginger cookie
Dinner duck leg with salads and LC roti and glass of red wine followed by LC cake and decaffeinated coffee.
Cooper much better this evening and was pleading when we had our duck but we had to stick to the plain chicken diet prescribed by the vet! Good to see him though getting his appetite and energy back.

Yes, Leerdammer sounds interesting. I'm always on the lookout for vegetarian cheeses.

My late MIL used to enjoy Jarlsberg which also has holes; all the shapes and all the sizes. MIL reckoned it tasted like Gruyere, but not so expensive and doesn't contain animal rennet. She would have revelled in your explanation for the holes in Leerdammer.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and crevettes, seasoned with a grinding or two of black pepper.
Water to swallow tablets, followed by espresso.

L: Crustless quiche using asparagus, broccoli, red peppers, leeks, eggs, cream and parmesan cheese. Salad made with watercress, chicory, oregano, cherry tomatoes, radishes, salad onions and black olives, topped with toasted pistachios and dressed with an olive oil, garlic and balsamic vinaigrette.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lettuce, fennel fronds, celery, Romano peppers, salad onions and mustard cress, with a dollop of aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Read today of pizza cheese crisps! Just a tablespoon of grated cheese of your choice topped with a single slice of pepperoni, then microwave or bake it until crispy (obviously make several at once)

I think the Maasdam cheese that Lidl does in slices (and makes good crisps and rollups) is their take on Leerdammer/gouda/emmenthal.
 
B: a 90 second bread toasted with butter and marmite on.
Made some marmite brazils to take to a poorly friend. Too many tastings.
Mid afternoon a small chunk cheese and 2 proper biscuits (was hosting an event and couldn't resist)
D: slow cooked short ribs. Very soft and tasty but more winter fare than heatwave! Served with courgette and green beans. Coffee icecream topped with pecan nuts, 1 chopped sq 85% and a splash of cream. Drinking a water kefir. Tastes OK, not sure that the sugar has fully disappeared though.
 
B- cheese crisp soldiers and dippy eggs
L- h/m scotch egg. I can’t figure out why this was so filling, whereas a single egg and sausage wouldn’t be.
D- Short ribs, snap @MrsA2 and I agree, probably more winter fare than summer. Still delicious. I spent the afternoon at granddaughter’s school fete. They have a polytunnel and the children have been growing veg from seed, today the first crop was ready to sell, I bought a turnip ( kids said it was a radish!) chard, carrots and lettuce and sampled most of it with dinner. It was superb. Glass of red and berries and yoghurt later.

Morning all. Beautiful day again. My readings are down, altho not as low as Iwould like, but gives me incentive to be good. For lunch today I'm having 2 turkey burgers with either veg or salad. Depends on what I fancy. I actually prefer veg to salad. Not keen on lettuce, cucumber upsets me, so I'll probably fry some cauli and broccoli with onion. Have a nice day folks. :joyful:
 
Weighed myself this morning - first time in about 5 weeks and delighted to find I've lost 5lb since the last time. Wasn't expecting that because I look just as gross as I did when I weighed 20lb more than I do now. However, it's all to the good.

Breakfast, shortly, will be chicken mayo on a slice of RyVita. I would prefer egg mayo, but eggs are still in short supply here, so I'm conserving them as much as possible.

2nd meal, if I have one, will be smoked mackerel with blitzed veggies (cauliflower, broccoli, carrot, caleriac, spices) maybe with some nuts and/or peas mixed through. I'm liking the sound of it, but whether I can be bothered to make it is another matter, especially if I'm not feeling very hungry.
 
Right back to Wednsday.
Brekkie usual slice LC toast, butter, copious tea.
Lunch chopped salad with egg mayo.
Supper chunky cod fingers and cauli cheese.
Yesterday same brekkie.
Lunch was chopped salad with Emmenthal and bit of crustless quiche.
Supper was bbqd sausages 2), plant burger topped with Portobello mushroom and small bit chicken. A dessertsp of Stokes Ketchup which is so tasty.
Today same/usual brekkie.
Lunch was 3 scrambled eggs with knob of butter, 3 strawberries.
Supper will be leftover cold bbq meat, roasted asparagus, side salad maybe.
I keep forget that I am nearly at the end of my first bottle of organic “with mother” AVC. I have been taking 1 tabsp. In water before lunch every day and while I haven’t seen any discernible difference in BG I have seen a reduction in waist size with clothes fitting better. So no reason not to continue.
@DJC3 those veg look so fresh and full of goodness. Bet they tasted amazing too. What a great thing for the children to do.
 
Yesterday FBG 7.7 ...breakfast was bacon 2 rashers 1 fried egg whole meal roll ( butter ) coffee ( 30 carbs )
Lunch was sausages ( not low carb ) and another roll (45 carbs ) . Gave into cravings for something sweet and had a big bowl of chocolate ice cream ( 50 carbs or more )
Had a late evening meal consisting of 2 100% beef burgers with fried onions and fresh tomatoes ...wouldn't have been so bad but had more whole rolls ( theme of the day or so it seems ) roughly 150 carbs throughout the day . Must do better again .
 
Must have got the insulin dose wrong again. I decided to have 2 RyVitas for breakfast so injected for what I would normally have needed for that much carb (15g). Almost 3 hours later I had a hypo. Got to the stage of sweating and shaking before I realised (I thought I was just too hot with the warmer weather). Libre went off at what it said was 3.9 but at that I shouldn't have been feeling the effects - didn't bother with finger prick to check - too busy taking remedial action (fruit pastilles - not as effective as I had hoped). Just about recovering now but felt very shaky for quite a long time.

All this means that I will have to have that second meal, whether I want to or not.

Lunch tried making more cheese crisps using Comte cheese but using @Antje77 s recommendation of grating cheese and worked really well.

Just had two as OH was keen to have some as well. Also had a couple of slices of Coppa ham followed by two strawberries from garden with yoghurt and 100% chocolate

Dinner ACV in water before meal of salmon in lemon butter with roasted asparagus and a few hm Pre Cooked and frozen new potato 'chip's and glass of dry white wine Also LC cake and decaffeinated coffee
Cooper still improving and I'm hoping sun drops soon to allow some fun outdoor time with him . Looking forward hopefully to some rain for the garden.
