What have you eaten today? (Low carb forum)

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Salad using salmon fillets poached first thing with black peppercorns, salad onions and lemon juice, then refrigerated. For lunch, combined with lettuce, watercress, avocado, tomatoes, celery and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almonds and walnut halves.
Raspberries and Greek full-fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lettuce, fennel fronds, celery, Romano peppers, salad onions, black olives and mustard cress, with a dollop of aioli for dipping, topped with toasted pine nuts.
Water to swallow tablets.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a PE protein bar.
Dinner: chicken supreme with roasted Mediterranean veggies.

What about a very short break from diabetes? Maybe that was the treat, and not the actual food.

Made tomato soup today, didn't taste nice at all.
Any good suggestions for very easy to make foods that taste good with the lurgy?

Just in case the type of lurgy makes a difference in food preferences, here are the symptoms:
Bit of a fever, snot, don't fancy any food really, lots of coughing, feeling like a wrung out dish cloth, and breathing has been pretty hard work for days. The last has gotten much better after I've got my GP to prescribe me a salbutamol inhaler over the phone yesterday though. :)
Must admit I'm a tomato soup person if I'm unwell, although chicken soup works too. Toast & scrambled egg, or "nursery food" - boiled egg mashed with butter and eaten still warm.
 
Long train journey today so prepared with 3 scrambled eggs for breakfast.

Packed lunch of cold chicken, hard boiled eggs . Drank only water.

Delays meant rushed straight to a "do" so ate several things made of pastry and quite a few strawberries. 2 bits of cake and some wine.

The carbs stop here! I have hba1c test on Monday....
 
Have you tested for covid?
I haven't. It doesn't feel at all like the times I did have covid, and it does feel a lot like the awful cold I get once every 3 or 4 years. (I suppose a 'cold' is a nice euphemism for bronchitis in this case, but treatment stays the same - have patience and wait until it gets better, treat symptoms if needed - so I guess it doesn't matter much what you call it.)

Had a slice of low carb bread with hot fried bacon for my first meal, which tasted remarkably good considering my lack of appetite, and a slice of LC bread with mayo, lettuce, and 2 small chipolata sausages for my second meal.
Also had two Belgian specialty beers, and I'm sure I'll manage a fair portion of chicory leaves with hummus and some chocolate before bed. :)
BG is behaving pretty well too, so I'm not complaining too much.

I am annoyed about not going swimming or going to the gym though, right when I started to build some routine. But it's clear that going up and down the stairs is more than enough exercise at the moment. Living room/bedroom is upstairs, kitchen, bathroom, garden are downstairs, so I'm reminded multiple times a day.

so back to Tuesday
Brekkie slice LC toast, butter, copious tea.
lunch 3 pieces Dr Almond bread with butter, small salad, tea.
supper chilli mini meatballs, 60g spaghetti as didnt have another option.
yesterday same brekkie.
lunch 3 thin slices Dr Almond break with salmon pate. Tea.
supper was lightly spiced chicken breast roasted with asparagus.
today same brekkie.
lunch will be small plate chopped salad, small bit quiche.
supper will be chunky cod fingers and cauli cheese.
 
It was my eating day yesterday and my creative juices were well and truly flowing. With success at hand I enjoyed a nice low carb version of greek snackery for my dinner.

I do hope people will try these because they did turn out very good and frankly I thought Tomato Keftdes really were at par with the traditional and authentic dish.

More importantly, no spikes after eating both the dishes.
 
It was my eating day yesterday and my creative juices were well and truly flowing. With success at hand I enjoyed a nice low carb version of greek snackery for my dinner.

Those both look fantastic. Sadly both contain almond. I wonder if they would work with ground hazelnuts or ground pecans.

Well for Tomato Keftedes - there is no reason why you could not do it with just Vital Wheat Gluten alone. I was of two minds on that and will prbably try just with wheat gluten next time round anyway.

For Cheesy Bites - I am sure any low carb flour should work becuase it just gives a bit of bready feel and isn't there for any other reason really. I have never used ground hazelnut or pecans as flour so I can't comment with any authority but I can't imagine a reason why that wont work. Worth a try.
 
Breakfast kefir with hemp seeds
Lunchtime one slice of LC toast with pate then a couple of squares of 100% chocolate
Mid pm slice of LC fruit loaf toasted and buttered.
Dinner ACV in water then shredded pork shoulder with salads and a LC roti and glass of red wine followed by LC cake and decaffeinated coffee.

L: Roasted cauliflower 'tabbouleh' using goat's cheese, salad onions, tomatoes, flaked almonds, flat-leaf parsley, mint, olive oil, lemon zest and seasonings, topped with toasted pistachios. Salad made with cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.
Skipped pud.
Water to drink.

D: Seafood salad made with king prawns and mussels, lettuce, fennel fronds, Romano peppers, celery, cherry tomatoes, mung bean sprouts and salad onions, with a dollop aioli for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

Weighed myself first thing. Not good!
1 mint tea
1 black coffee
11:00 a seed bar on way to do a big supermarket shop. Going empty would not have been good for either bg, waistline or purse

1pm the crusty end of a low gi loaf smothered in butter and wrapped in camembert . 1 apricot, 3 strawberries and a mini icecream (11g carbs)

Meant to be doing admin and paperwork but pottered in the garden instead. Di d eat a few raspberries and alpine strawberries

D : 2 kofta on salad of lettuce, rocket, cucumber and spring onions. Dressing of yogurt, mint, cucumber and radish. 1 mini icecream (11g carbs)
 
Back from hols today, the week went too fast, but it was a week filled with good food and a lot of laughter, best holiday I’ve had for years.
B- our hosts sent us off with a cooked breakfast, bacon, poached egg, mushrooms and grilled Tom.
Plenary of coffe
L- snacks in the car, nuts, snacking salami and Lindt 99% Dark Absolute.
D- cobbled together from the freezer, chilli using @shelley262 ‘s tip of edemame beans in place of kidney beans. 1/2 avocado which I found in the fridge, still rock hard. Couple of glasses Malbec.
No photo of my food today as I have a much nicer photo of my food ( a handful of sunflower seeds) being eaten by a red squirrel (who are native to the Isle of Wight where we were on hols). I couldn’t believe how tame they were. IMG_2929.jpg

@Antje77 I hope your horrible cold gets better soon and that the meds help. Can you make/buy some chicken soup?

So pretty!

When I finally visited the UK last year, Goonergal took me to see the squirrels in Greenwich Park, which was pretty much on the top of my wish list for my holiday. :joyful:

Breathing is still hard work, and I still feel pretty wrung out, but I'm starting to enjoy food again!
Too bad this doesn't mean I also found the energy or motivation to cook. :banghead:
Still, I had a pretty decent evening meal of a slice of LC bread with bacon, egg and melted cumin cheese, and a plate of tomatoes with mozzarella, balsamic vinegar and olive oil. :)

Contemplating going to the pool tomorrow for my class of doing funny stuff in the water on music with mainly older people. Pretty sure it will end in lots of coughing and not being able to even remotely keeping up, but I'm also getting pretty bored at home and I like being in the water. So I might just go and see if I can actually do something.
