What have you eaten today? (Low carb forum)

B: 2 scrambled eggs. We have care of 7 chickens for the next couple of weeks
Lovely autumn colour dog walk
L: ham and cheese with lettuce and coleslaw. 1/3rd of a pear, a nut bar and 3 sqs caramel chocolate . Something in that took me past 9. Only know that as I had to change the batteries in my Tee2 after 3 and a half years and did a test test.
D: 3 90% sausages with cabbage and a tablespoon coleslaw.

I think I could easily manage that and still need the lamb later on. Or maybe I'll have the lamb now and hope it will keep me going for the rest of the day. Could always have eggs later, if it doesn't work out. No carbs though. I really mustn't.

Hubby was told in the "York Incident" that he had emphysemic areas in his lungs (common in an ex smoker apparently). It doesn't bother him currently, but the A&E doctor suggested that if he becomes breathless in the future, the GP might want to consider an inhaler. Do you use one @Annb ? If not, has it ever been considered?

If you watch the YouTube channel Serious Keto he does a series of videos testing these theories. Well worth watching.

Agree . It's interesting,but not surprising, my favourite fruits when I was an undiagnosed overweight diabetic were figs - especially dried I could eat 5\6 , dates and bananas as well as orange juice! Wonder why I became diabetic! Worse thing is that I thought I was eating healthily and low fat !

I love figs. I have a fig occasionally, but I limit myself to one only. Thankfully, they are not as delicious as the figs you can get in Europe. My first encounter with figs was in Spain. I ate rather a lot of them the day before we were flying home. I do mean A LOT! I'll let you work the rest out
 
Breakfast: cocoa keto granola with coconut milk washed down with a black coffee. Where was my coconut ‘porridge’ I hear you ask! Well I had an early pre op appt with my surgeon in preparation for Thursday and this was quicker to make, plus I wanted to try it as this will be my hospital breakfast.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and a carb killa bar.
Dinner: corned beef hash (corned beef, cauli rice and onions) with green beans, brocolli and a spot or two of low sugar ketchup!

I'm well versed in resistant starch. The theories are fine, but I wabt to know what IP base their claims on their results.

Let's face it, "Up to 40%" could be a big fat 0%, because that's less than 40%.

I'm awaiting a response from Instant Brands.
 
Wednesday 1 November - bed 7.8 FBG 7.6. No boys this evening since I'd had them staying over on Monday. Still the usual school runs, though.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. One of these little Lidl bars of dark chocolate and raspberry.

D. Another ostrich burger. Emmental cheese slice and a salad of avocado, tomato, and lettuce. CC little chocolate pot with 3 raspberries.

@LivingLightly - a very belated Happy birthday I'm still catching up. There is nothing wrong with Affogato for a birthday meal! I'm rather partial to one, too.

You all seem to have had quite a time with the storm. Apart from more heavy rain, it rather passed us by.

@Rachox - all the best for the operation (and your hospital stay).

Thank you. One way and another, we made this year's birthday celebrations stretch to 6 days, but I kept the food treats to just the one.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns, seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti con sugo di melanzana made with aubergines, celery, carrot and onion, passata, garlic, rosemary, butter and spiralised courgettes, finished with Parmesan.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes and mustard cress with a dollop of home-made aioli for dipping, topped with parsley and toasted almonds.
Water to swallow tablets.
 
Not going to make anymore lc cinnamon biscuits, or lc ginger nuts, they're far too moreish. Made them really for hubby as he's decided he's joining me on lc, but he apparently didn't think much of them. Seeing that there were quite a few left, and seeing that they kept teasing me, I ground the whole lot up in the grinder/chopper, added melted butter, and they became a base for a hm blueberry cheesecake.

No breakfast or lunch, just those d**n biscuits.

2 Gin and Tonics.

Had some mince in the fridge and looked for inspiration on The Diet Doctor's website. Italian Keto Meatballs With Mozzarella Cheese won 'the chosen recipe contest'. It turned out delicious. Didn't take a pic as the meatballs were really meat-squares, and the mozzarella cheese became stringy with a mind of it's own, not appetising to look at.

Had a slice of hm lc blueberry cheesecake for afters.

No. I've never had an inhaler although I've asked about my chest issues from time to time. First time just after I retired when I realised that I couldn't hold a note as long as I used to, when singing. That's when I was told that my lungs were those of a 90 year old. I should have followed up on it but (foolishly) assumed that if there was anything to worry about the GP would get back to me. When Covid struck I began to have more serious breathing problems which didn't go away. I asked, but the doctor thought it would pass. Recently I have felt decidedly breathless so asked again. An oximeter was showing readings in the 80's so I thought I needed some advice. I had to get around in my wheelchair so was panting quite a bit and the doctor's oximeter showed 95%. \he did listen to my chest and thought nothing to worry about but he ordered a blood test for next week. I told him that I had been told about the 90 year old whose lungs I seem to have and he reckoned more like 98!

I've been doing some breathing exercises and today, for tghe first time my oxygen level is in the low 90's. Not feeling quite so uncomfortable either, so either I'm doing something right or it was some minor infection which is passing.

That's a lot to have written off topic. Sorry.

Just baked my fish after all for my 2nd meal today. Too much other stuff to deal with to get around to making fish pie.
 
Hi All back to yesterday
Usual brekkie of slice LC toast, cooled with generous butter and copious tea.
Lunch was two scrambled eggs with a spot of parmesan grated in and a knob of butter. Tea.
Supper was chilli beef and cauli rice.
Today usual brekkie.
Lunch likely to be the same as really enjoyed it yesterday.
Supper will be roasted lightly spiced chicken breast, cauli cheese & broccoli.
@Rachox good luck for Thursday hope its not too uncomfortable and you can navigate the hospital food. @Annb well done for being proactive with your breathing exercises. Now I want fish pie!
 
Shopping day today - for Neil, not me, so there's not much left in the fridge or cupboards which means a limited choice for today's meals, which is fine by me.

Breakfast (soon) will be bacon and eggs - last of the bacon - and some mushrooms.
2nd meal: there's a packet of pork sausages left, so it will have to be a couple of them plus the remaining Brussels sprouts. There is still some mixed salad from Sunday, which is still OK so will have to use that up as well.

When I had duck breast a few days ago, instead of putting orange sauce with the duck, I decided to put the juice of one fresh orange in with the Brussels sprouts and make it a sprouts and orange sauce (butter, garlic and onion in it as well) and cooked it down to a thick consistency. It turned out to be a very tasty way of cooking the sprouts. In fact, I really didn't want to bother with the duck, it was so good on it's own. Left half of the duck and had it sliced, cold the next day.
 
Thursday 2 November - bed 8.2 (no idea why) FBG 7.9. I think this mucking about with low purine is perhaps causing issues. I've ordered a couple of anti-inflammatory/anti gout cookbooks to see if it gives me any ideas that I can make low purine and low carb. It's driving me nuts trying to combine them currently.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw.

L. 2 squares of that Lidl raspberry/dark chocolate. Before that, a bit of crustless quiche.

D. Yet another ostrich burger with Emmental and a salad of avocado and santini tomatoes. CC little chocolate pot with 3 raspberries.

This was an Aqua day. Pool was a bit chillier.

Friday 3 November - bed 8.2 FBG 7.9. Still sitting a bit high. Half day Friday.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. A bit of crustless quiche

D. One of these Mexican melt things (haven't made them for ages). Form a rissole shape around spicy Mexican grated cheese, with a mix of pork sausage meat (seasoned) and a little egg. Dressed in my crispy not breadcrumb mix with added paprika. CC little chocolate pot.

I thought I'd taken more photos this week. Obviously, I haven't! I did get to the butcher's today. Hubby is at football again tomorrow (an all-day hospitality do) so I'm left to my own devices for a change.
 
Hi ll. Bit late today. @DCJ3, have had a lovely weekend with son thank you and he's now gone back to USA. I know I've been fairly good with food but DN has given me 3 months to get my diabetes under control without meds. She's going to put me back on them if I can't. I have made some s/f jelly so I can have it with yoghurt or cream and am trying some Keto bread. I have sausages and green veg for lunch today and pink salmon with mayo for tea. I have just made my Christmas cakes (presents for friends) and I didn't lick the bowl or spoon! That's a start! Have a great day folks. :)
 
Breakfast kefir then fried one slice of bacon, egg and mushroom served with one slice of LC bread
Lunch sauerkraut, guacamole and LC seeded crackers followed by one small Apple peel and two squares of 90% chocolate
Dinner slow cooked brisket of beef with cauliflower cheese and glass of red wine followed by LC brownie and decaffeinated coffee.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: chicken chasseur with Brussels, broccoli and carrots.

No breakfast, but I did have a smoked mackerel fillet for lunch.

Had a Dairylea Triangle while clearing out and cleaning the fridge - how could I not?

Afternoon Gin and Tonic

Rib eye steak, with hm coleslaw, bit of lettuce, 2 mini plum tomatoes, cauli rice sauteed.

LC and hm blueberry cheesecake for afters.

Bit of a heavy calorie day, but most importantly carbs were about 16g.

Saturday 4 November - bed 8.3 FBG 7.8. Off to Edinburgh to drop Hubby at the stadium for this hospitality day. Picked up son on return to get his shopping out of the way. I didn't bother shopping. I had stuff in from the butcher trip, so I decided to get a delivery on Monday of veggies, etc.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. After return from taxi duties! CC little chocolate pot.

D. I really couldn't be bothered, so I made a cheese and ham toastie with SRSLY bread. Another CC little chocolate pot with a raspberry on top!

Had to head back to Edinburgh to collect Hubby (they lost, which rather spoilt their day).

Sunday 5 November - fireworks really ramped up today, and son's animals were really upset. The trouble is that they'll have a few more days of this yet. Bed 7.7 FBG 7.9.

B. TAG and 2 slices of SRSLY toast with ox tongue and coleslaw. Benecol dairy free.

L. Nothing. Back at swimming lessons with the youngest grandson.

D. Campari and soda. Black garlic chicken breast with cauliflower fried rice. I put peas, spring onion, and mushrooms through it. CC little chocolate pot with raspberries.
