What have you eaten today? (Low carb forum)

B: ff greek with chia seeds and strawberries
Managed to find a dog walk that was invigorating and not too muddy. Only minor slippage today.
L: 2 slices Livlife bread toasted with cheese. My first livlife. Very like the HiLo, but a bit lighter in colour and thinner so made a crunchier toast.
Ff fat greek with ginger and turmeric
I'd found a little pot of ready made ginger and turmeric paste in Waitrose so am trying it in all sorts of things. Just a little in yoghurt goes a long way.a half a teaspoon in hot water makes a tea.

D: just a chunk of cheese, some ham and a few almonds. Also had half a pack of chicken skin...like the pork crunchies but made of chicken. Could only eat a few but quite a nice crunch. £1.69 from a farm shop. Will post a pic later. Comes in various flavours
 
Neighbour-in-the-garden gave me a call to tell me that he'll be unexpectedly away for work until thursday, and to ask me to take care of his dog, cats, turkeys, ducks and chickens.
And he also told me there was a pot of slow cooked beef in his kitchen. :hungry:

I don't have much veggies left but I still have a couple of onions. I think simply boiled onions will go very well with the beef. :)
Doesn't look too appetising now, but I'm sure this will change when it's reheated!
Reheated the meat and boiled the onions with the last veggie stock cube, meal was absolutely utterly delicious!

Neighbour will have to share his recipe or I'll evict him.

I know some people feel that onions have too many carbs, but they don't seem to affect me much.
I ate at 9:15 PM, and my last insulin was taken at 4:20 PM, so hardly any active insulin left.
(Remember, I'm an hour ahead of you, so my meal was over an hour ago.)

It has been one of those weeks here, but topped off by a Doozie Monday.

New air fryer oven delivered. It is,…. Erm,… mahooooooosive at 30 litres. Test run done, then the meaty elements of our tray bake part cooked in it, before adding the Med Veg.

This morning, at golf o’clock, aka 05:30, the tv in our bedroom (on for morning news with tea) became possessed, scrolling through random menus, searching for alternative inputs and cycling power on/off. After exhaustive tests, it was declared ** broken (** insert expletive of choice).

One trip to mega Currys (poor choice), then nearest Costco (excellent choice, but sold out of the chosen one and sold out online too), and home to eat. Next nearest Costco has stock, but will not hold it, and cannot take payment on the phone. After an early dinner, using new AF (very fast, whizzy thing) a trip to next nearest Costco.

its been an expensive 7 days, but tonight’s traybake was super delish.

That was some problem phone line, @Annb, glad your guy was persistent & got you connected to the virtual world again.

Dinner was belly pork (no crackling :() with my fav, cavolo nero. Followed by some seedy Fage with a couple of teaspoons of hm blueberry coulis.
 
Breakfast - 85 grams peanuts and cashews with 60ml almond milk coffee
Lunch - avocado salad, raw red cabbage salad, greens fry, chia seed pudding with almond milk. Washed down with almond milk coffee.

Morning all. Lunch yesterday was sausage pie. I ate the sausage but left the pastry. Today, I'm fasting as long as possible then eating as little as possible. I need a kick-start so today that's my plan. I had hardly any sleep last night and I'm under a bit of stress right now, so my levels are high. @Annb, glad it's all sorted for you. @Rachox glad you are home. @maglil55 beautiful peaceful photo. Have a good day folks. :)
 
Sunday 19 November - bed 8.1 FBG 7.2. There is so much going on. Welcome back, @Rachox . It seems BIL is a partial detachment in the bicep. Swelling is going down, and thankfully, they've been able to take him off Endone and put him on non addictive painkillers. The area where they swim is along the east coast called the Boat Shore in the Cockenzie area. It is a peaceful area, but not "Sunshine on Leith" although I agree @ianpspurs , it is a great song (especially with the fans in full voice).

B. TAG and the NLCK seed & chocolate granola with sugar free coconut milk and 4 raspberries. Benecol dairy free.

L. After taking grandson to swimming lessons and back, 1 slice of SRSLY toast with egg mayo.

D. I put together a mix of chicken breast, thyme, leek, woodland mushrooms, peas, and used a chicken and mushroom soup as a sauce. The pastry is a bit of grandson's JusRol GF. If you fold in into a small triangle, it puffs up into a hollow, crunchy thing. It doesn't do much to my BGs either. I also chopped up a boiled potato (makes it look more!) CC little chocolate pot. Usual campari and soda.

@DJC3 - your vertigo attack sounds awful. Is there a chance it's an inner ear infection? We have all sorts of bugs doing the rounds here. 20231119_185812.jpg

Glad to hear you’re back home @Rachox and your recovery can begin in the comfort of your own home. @maglil55 the news of your brother sounds better and @DJC3 sorry the vertigo is still causing you so much trauma. @Antje77 your neighbour sounds a good one, that beef looked melting. @RosemaryJackson well done for separating the sausage from the pastry and hug for the stress. @Annb glad you are back in the internet.
So yesterday usual brekkie of slice LC toast, butter, copious tea.
Lunch was sliced ham, tomato, chunk of Emmenthal & coleslaw.
Supper was two Green Cuisine plant burgers topped with Portobello mushrooms.
Today same brekkie.
Lunch same minus the ham.
Supper will be stirfried chicken, chorizo, red pepper & paprika with cauli rice.
 
Monday 20 November - bed & FBG both 7.9. DIL has a sore throat plus back spasms, so getting grandson to swimming training and back falls on me. @JenniferM55, I hope your sore throat is finally improving, and well done, that man @Annb for reconnecting you!

B. Just TAG. After delivering the boys to their schools, I was straight to Aqua (the strenuous one). My ankle was a little niggling afterwards, but not too bad.

L. 2 slices of SRSLY toast. One with egg mayo, the other with Philly and ham. Benecol dairy free.

D. Leftover cold cuts. Deli roast pork, ox tongue, pork & apple, small bit of turkey, coleslaw, vegetable salad. CC Little chocolate pot with raspberries. Gin and soda.
1/3 of a Fatt mint bar. I did have the other 1/3 yesterday.

@PenguinMum, the heat in Lanzarote, I found very deceptive with the wind that had the "cooling" effect. Glad to read your legs recovered.
 
Breakfast: microwaved some salmon last night and mixed it with some cream cheese, yoghurt, and double cream as a kind of salmon spread. should have put some salt in. Spread some of it onto 2 RyVita. I imagine that puts me right up to my 20g carb limit.

I added some tomato puree and a little salt, some eggs and baked the rest as little crustless quiches.

Unfortunately Libre has just warned me that BG is too low, so will have to do something about that. Probably one of the quiches.

2nd meal: there are 2 options - do something with cold pork and onion/pork stock or use some of the slow cooked beef shin. It's beginning to look like the pork and divide the beef up into small boxes for the freezer.

I packed away the beef in 4 boxes of one serving each, and cut the roast pork into cubes - enough there for 3 portions, so 2 of those into the freezer as well. The other portion I added to some cabbage, onion and garlic which I'd cooked in the pork and onion gravy. Feeling fairly full just now.
 
Here are the pictures of the Chicken Cracling snack type product I found at a farm shop.
Like pork scratchings/crunchies but made from just chicken skin and seasoning. Tiny amounts of sugar, oils, rice flour..
Under 2g carbs entire packet, though I could only eat a third at a time.
If anyone finds them any where else please let me know.

Two mugs of tea and 800 mls water until 10.00 am then 2 x babybel for tablet taking
Blueberries, Fage 5%, Foodie Market mixed nuts and mixed seeds (linseed, pumpkin, hemp, sunflower) as breakfast and another 800 mls water
Almond milk latte with s/f Monin and Ceylon cinnamon- bean to cup hors de combat so used JKP’s Nespresso machine - its coffee not tea so only an environmental issue but they collect and recycle
KC seeded roll, butter, strong cheddar. The cinnamon doughnut I defrosted was actually a bagel - mixed up the wrapping - same carbs but I’d have preferred split and toasted - with water for lunch 14.15
Organic, grass fed beef mince ( Ocado flash sale so cheaper than standard but with UK laws probably just showed cattle a Youtube vid and it qualified), Mutti tomatoes, mushrooms, roasted Punjab masala, NLCK orzo/rice - 1 pan wonder, - a bag of salad leaves, more water. 2 grandchildren here so slightly earlier 17.15

Which new air fryer did you get? I’ve just bought a Ninja dual (a pre Christmas present for me). And one of their biggest newest ones for no 1 daughter. I’m keen to try a roast beef joint in the dehydrate setting which people on various fB groups are raving about.
 
@Antje77 that’s great news re the onions. I’m often wary of adding too many but have never checked specifically.
Feeling so much better today, thanks all for your good wishes.@Maglil55 I did wonder if it might be viral as a friend had similar a couple of weeks ago. Or perhaps a delayed recovery from @aylalake ‘s exercise. Who knows?
I spent most of the day cooking - our garage freezer packed up at the weekend but I didn’t realise until everything was half defrosted.

Proper breakfast today of scrambled eggs on lc toast.
Dinner - roast chicken with mushrooms, onions and broccoli stalks cooked around it. Steamed broccoli florets. IMG_3685.jpg
