What have you eaten today? (Low carb forum)

It's early but I've put the pork in the oven on a trivet of onions and pink lady apples (they will go into the apple sauce) so I'm hoping for some decent crackling later on. That just leaves me the vegetables to prep so I should manage that by the time they are needed. I've also put some shin of beef in a pot with some vegetables to slow cook for some other meal, some other day. I have decided to get myself another slow cooker and try again. I really didn't get on with the one I had before and gave it away. But it does seem daft to have a pan on the stove for hours. I just need a small one so it shouldn't cost too much and should save fair bit in running costs.

Edit: The last time I had a slow cooker, I also had a solid fuel stove which I could just sit a pan on all day with no extra cost. Got rid of that because I couldn't clean it's sooty cavities any more.

Breakfast: cocoa keto granola with coconut milk washed down with a black coffee.
Late morning: black coffee and a Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: same as last night, cheddar omelette with coleslaw, but more nicely cooked tonight.
Fingers crossed, home tomorrow if consultant is happy.

Evening all. @Rachox praying for you to be allowed home tomorrow. Today was a 10 person family meal with diners from 2.25 to 93.88 years. Portion sizes are probably slightly over estimated (except maybe cognac) and suppliers for convenience of database. I also had a heaped tsp of l/c apple sauce (frozen apples in case that lowered impact) #1 son poured the cognacs. #1 grandson was having a day early birthday celebration.

@Rachox I do hope you are well enough to be able to carry on your recovery from home tomorrow - I'm sure you'll be happier at home.
@DJC3 really hope vertigo going away for you. I've had it in the past and it's so unpleasant do take care.
@aylalake interesting your link to the u tube video on correcting vertigo will remember if happens to me or anyone in family in future makes a lot of sense.
B one slice of bacon and egg plus a mushroom and lc toast
L I love fenland white celery and found some at Waitrose this weekend so put some in slow cooker to braise in chicken stock for dinner but also kept some fresh for salads. Added some chopped to my sauerkraut for lunch it was delicious. Also had three lc seeded crackers and stilton then spoon of my winter berries and yoghurt
D roast chicken with braised celery ( yum) and cabbage plus home made pork stuffing( mixed pork sausage meat with fried onions, seasonings and LC breadcrumbs and baked as a loaf - think I'd serve as a meatloaf main it was so good) also had glass of dry white wine. Decaffeinated coffee with two squares of 100% chocolate.

Winner just for the word Fenland :D . Must have the authentic presentation though. Classic combination (raw) with Stilton (in Cambs since 1974. The cheese was just sold there) I forgot to say I hope @DJC3 is feeling better today.

B; 2 rashers of bacon, poached egg in a buttered LC roll. 3 x cherry tomatoes and 2 teaspoons baked beans on the side (experimenting with these), kefir
L: handful of mixed nuts, biltong, 2 x dates (another experiment)
D: w x multi grain Ryvita thickly spread with Salmon Philadelphia (yet another experiment).

None of the experimental food had a huge impact on my BG, Breakfast shot it up to 9.5 but it was back down within 2 hours. Yay!

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, sprinkled with flat-leaf parsley and seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, cauliflower, onions, and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

I suffer from vertigo and it used to hit me every couple of months or so. My doctor recommended the Epley Manoeuvre which definitely works but hurts my neck. Then I found this video which shows you how to do it kneeling down and I found it easy to do. I am probably going to tempt fate here but I haven’t had a bout for almost 8 months since doing the exercise.


Thank you so much for this. I was also recommended the Epley manoeuvre but found it made me feel so awful, it was worse than the vertigo it was trying to cure! This looks simpler so I’ll have a go. Do you practice it regularly as a preventative measure too?

Result! The Waitrose near where we are staying has restocked the Olinas seed crackers. Bought all remaining 8 packets, which brings the stash to 10 with end date of next June.
Edited to add, also bought my first livlife loaf. Looking forward to cheese on toast tomorrow.

If I turn over in bed and have that horrid whirling feeling, the first thing I do in the morning is a couple of reps, yes. If I wait until it’s full blown vertigo, I still want to throw up when I do them but nowhere near as much as doing the lying down version. My daughter suffers from meniere’s and it helps her too.

@JenniferM55 hugs for the sore throat, I’m sure your delicious sounding soup plus ibruprofen will work just as well as a sweet commercial cough syrup.

Still can’t face coffee but I have lactofree milk now for my tea. Around 1/2 the carbs so much smaller impact on BG.

Dinner roast pork loin with lovely crackling, steamed broccoli and creamy parmesan cabbage.

Wow! Thanks for the compliment.

I've met newly-diagnosed diabetics who are distraught at the very idea of reducing their carb intake and I hope that, between us, we can encourage newbies to focus on the many delicious foods diabetics can safely eat and not hanker after those high carb 'goodies' that are doing us harm.
 
Today was the last day of my sauerkraut mash, with the last bite of smoked sausage and the last two tiny slices of zuurkoolspek, so I added a very non traditional chorizo sausage. :)

Tomorrow will be something thrown together, my car still hasn't been repaired and my last shopping was done last tuesday.
Bell peppers stuffed with tuna melt muffin batter is a possibility, provided I can borrow some eggs from a neighbour.
But it might be I'll simply eat a low carb sandwich.

Don't know why I do this, but every now and again I get the urge to 'experiment' it usually results in a disaster, plus a messy kitchen! Friends passed a couple of recipes onto me and I'm afraid I just had to try them, at least I must be feeling a bit better.

Around 10am had 2 thick back rashers of bacon, 2 fried eggs and half a fried in butter beefy tomato.

Coffee with half the cream I usually have, to be fair I didn't notice the difference, so I guess that could make a difference to my new plan of lowering my dairy consumption.

Dinner was a 1/4 of a pizza.... well sort of. Despite me making a mistake with the recipe adding almond flour instead of lupin flour, it was edible. I only noticed my mistake when I realised the mixture for the base was rather wet. After adding about 50g of lupin flour the dough did stiffen up a bit. Topping was Lloyd Grossman's sugar free tomato and basil sauce, tinned tuna and peppers, plus mozzarella cheese. Husband's verdict, "it was tasty" :facepalm:. Recipe

Pudding was 'Non-Apple Crumble', husband couldn't fathom what was replacing the apple, which was a good sign because if I'd told him he'd have turned up his nose ;) . He thought the 'fruit' was really nice and didn't have a clue what it was, but he wasn't keen on the crumble. The recipe did call for coconut, but what sort of coconut, flour or desiccated? In the end I added desiccated which most probably made it too crumbly. BTW the 'fruit' were courgettes, if I found a way of adding a better topping think I'd do the 'apple' filling again. Recipe

Thursday 16 November - bed 7. 4 FBG 7.8. I still have about 80 posts to get through (although I've scanned some). @ianpspurs , the NLCK order arrived. Their granola is rather nice. Still to try the pasta. @DJC3 I do hope your vertigo goes quickly. As a fellow sufferer, I know only too well how horrible it is. @Antje77 - my DIL's swimming group has had 2 seals for company the last few days!

B. TAG and a cheese and ham toastie on SRSLY bread. Benecol dairy free.

L. A bit crustless quiche

D. Roast gammon with carrot and swede mash. CC little chocolate pot. I love this time of year for all the gammon joints of varying sizes.

Friday 17 November - bed 7.5 FBG 6.8.

B. TAG and cheese and ham toastie on SRSLY bread. Benecol dairy free.

L. Nothing - half day Friday, so usual running about at lunchtime.

D. 3 chicken drumsticks with coleslaw. CC little chocolate pot with raspberries. Gin and zero lemonade.

Got mine & sons shopping done so I have peace tomorrow.
