What have you eaten today? (Low carb forum)

Evening all

My kitchen faces north so stays cool most of the Summer. That said, with a scorcher in prospect, it would be too hot to cook this morning, so prepared lunch first thing and refrigerated.

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns, all seasoned with a good grinding of black pepper.
Water to swallow tablets.
Espresso.

L: Appetiser: gazpacho
Salad using asparagus spears, French beans, mung bean sprouts, cucumber matchsticks, shredded red cabbage, Padron chillies, basil, coriander and mint, dressed with avocado oil, ginger, garlic, lemon zest and a touch of lemon juice, topped with toasted almonds and cashews.
Water to drink.

D: Seafood salad made with king prawns, crab, lettuce, sweet cicely, vine tomatoes, celery and salad onions dressed with home-made aioli for dipping and topped with pecan halves.
Water to wash down tablets.
 
Didn't feel like cooking tonight. Though I did make a cheese and mushroom omelette for lunch. So this evening I had half a tub of Greek yoghurt, some (bought) chicken breast, and a small packet of pork scratchings. I did spread the chicken out on a plate, and sprinkled it with black pepper, so that's cooking of sorts. Normal service will be resumed shortly.

I do enjoy pork scratchings and was thrilled to discover they are common in grocery stores in south Texas, chicharrones, which sounds so much more fancy than scratching. In a variety of flavours too. A treat when I’m there.
 
Lovely late birthday surprise arrived in the post this morning from brother in law and partner who live in Wales - a perfect present for a low carber - air dried Welsh bacon and ham. Looking forward to trying a pack of bacon this weekend. All vacuum packed so good dates.

Breakfast low grain granola served with Kefir
Lunch hummus, olives, radishes, celery, kimchi and a few garden tomatoes followed by garden berries with yoghurt
Dinner last day of leftover cooked chicken and sausages with salads and two of mini crustless quiches made yesterday

Just finished meal with decaffeinated coffee and a low carb blondie.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: lamb shank in red wine gravy (was inspired to look in Tesco after @IanBish mentioned he’d got them pre made) with brussels and broccoli.

L: Packed lunch made with a wedge of Montgomery's extra mature cheddar.
Hummus and salad using cucumber, salad burnet, rocket, Halkidiki and Kalamata olives, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a squeeze of lemon juice and topped with toasted sesame seeds.
Water to drink.

Mid-afternoon: tea with lemon.

D: Seafood salad using crab, brown shrimps, lettuce, vine tomatoes, celery and salad onions with home-made aioli.for dipping and topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.
 
It's too hot for thinking today, let alone doing groceries or cooking.
So another LC toastie to the rescue, too bad the rather dried out end bit of cheese didn't really want to melt, still tasted good though.

Will have some raw chicory and hummus before bed by way of vitamins, will do better once temperatures drop again.

Morning all. I haven't been eating properly since I went on anti-biotics because they gave me a disgusting taste in my mouth but for today I got a hm beef stew out of the freezer and I'll cook some veg. As for tea, I like a small tin of salmon with acv and a bit of mayo. So back on the diabetic wagon woe. :)
