Smoked salmon and cream cheese on LC toast
Salmon burger with salad (tomato, cucumber, bell pepper, avocado and roasted onion and garlic dressing)

All macros and micros quite close to my targets today. I was going to have some raspberries today for my daily fruit, but in view of me being so close to my targets I'll leave that for tomorrow.
 
Morning all. I made a fish stew yesterday and I can't say I enjoyed it. I think I prefer to have a piece of salmon with salad. Have a nice day all. :)
I like most fish, but I don't like fish stew.
I enjoy Italian and Spanish-style fish stews that are often made with the addition of shellfish (some of which benefits from longer cooking) in a white wine and tomato broth with garlic and fresh garden herbs.

To avoid overcooking, it’s best to add the fish towards the end, when the stew is nearly done. Let it simmer until it’s partially cooked, then turn off the heat so the fish finishes cooking in gentle, residual heat.
 
Breakfast kefir then fried tomatoes in olive oil and a slice of bacon and egg
Lunch had a keto seeded roll buttered topped with ham, mustard and a few small tomatoes followed by the peel of one local apple

Dinner wild salmon with cabbage followed by low carb crumble
I was unable to track down wild sockeye salmon this week @shelley262. When available, the flavour is far superior to farmed, Atlantic salmon in my view.
 
Today:

B: Two poached eggs with a knob of butter and avocado seasoned with a good grinding of black pepper
A wedge of Gorwydd Caerphilly made with unpasteurised, raw cow's milk
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover spinach and mushroom frittata.
Lettuce, Romano peppers, celery sticks and cherry toms with a dollop of homemade mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.

D: Smoked salmon and cream cheese salad made with sweet cicely, baby plum tomatoes, mint, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to wash down tablets.
 
I have sausages with carrot and swede mash. Later I will have some scrambled eggs or a tin of salmon . Cooking for one is a chore and I always get it wrong. I could make meals and freeze them, but I'm not keen on the the taste and texture when they are frozen, they always seem to taste different. I prefer to freeze the meat. On the bright side, I definitely won't starve!

Dinner had left hm chicken curry in slow cooker while out all day. I served it with lots of fresh coriander. Also had a gin served with soda water.

My Middle Eastern friends twisted my arm to have one piece of Baklava with Turkish coffee. Although only 80 calories and 9 g net carbs it did raise my BG level more than I would have liked (to 7.2 from 4.8). I do not intend any insulin for the rest of the day, so I'll see if my BG goes down during the evening.

Agreed @Rosemary Jackson. Dividing quantities intended for four persons can be tricky. How do you cope with a quarter of an egg for instance?

Have you come across Delia Smith's best seller? One is fun! It's a feast of easy recipes, many of which are diabetic friendly and all are specially devised for the single cook.

If memory serves, the paperback edition was first published way back in the eighties, but you can obtain a second hand copy for less than £3 on eBay.

Evening all

Today:

B: Two poached eggs and two scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Tuna steaks rolled in finely chopped celery and sage, baked with Romano peppers and aubergines, moistened with double cream and topped with grated Cheddar cheese.
Steamed calabrese and French beans with a pat of butter.
Skipped pud.
Water to drink.
Two squares, Montezuma's Absolute Black 100% chocolate.

D Seafood salad made with tiger prawns and mussels, rocket, avocado, cucumber, cherry tomatoes, salad onions and Halkidiki olives with home-made aioli for dipping and topped with toasted pistachios.
Water to wash down tablets.
