What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: scrambled egg on Marmite on toast. (LC of course!)

I had scrambled eggs on sourdough toast the other week for the first time in ages. But I scrambled the eggs quite slowly until it resembled rice pudding (sort of). I added a knob of butter, plus salt & pepper, and I really enjoyed it. I'm not all that fussed on low carb bread (I wish I was).
 
Breakfast 2 scrambled eggs with 1/2 avocado and a spoonful of turmeric and ginger sauerkraut.
Lunch was pate on cheese ‘crackers’( microwaved Edam slices) with some cornichons and red pepper. Greek yoghurt to follow.
Dinner: bacon wrapped pork tenderloin stuffed with cream cheese, garlic and fresh herbs. Fried mushrooms and airfried courgettes and red peppers.

Breakfast kefir then one slice of bacon and egg
I'd ordered some of the SRSLY low carb seeded bread which is now available pre sliced so thought I'd try it. My order of three loaves arrived and I did what I always do with low carb bread - cut up a few pieces of kitchen towel to separate slices so can be frozen in the bag and taken out one slice at a time - I usually toast from frozen

Lunch decided to try some of the bread fresh so used the crust and a slice and made an open sandwich - topped with a tin of mackerel fillets in olive oil mashed and mixed with a spoon of horseradish, squeeze of lemon and salt and pepper. Plus some celery.

Really enjoyed it. Followed this with a couple of strawberries chopped and mixed with a few spoons of yoghurt.
Dinner wild salmon with peas plus just had three squares of 90% chocolate.
 
Today for lunch I had a sourdough red salmon sandwich. It was maybe a bit too much as my BG went to 7.2 after two hours. The bread is quite dense, and I'm not sure it's actual sourdough, even though it says so on the packet.

And for dinner I had a couple of small cod fillets in breadcrumbs with chestnut mushrooms and mushy peas.

Morning all (spelled it right this time!) Yesterday I had 3 chicken drumsticks airfried in butter about 11am and 2 lovely , minted lamb burgers later in the day. No plums! I gave them away to take the temptation away. For today, I have 2 poached eggs on ham and later some sockeye salmon. Hopefully it will bring my bg down. Istill take the olive oil every day. Have a nice day all. :happy:

Dinner chicken curry with mint raita and fresh coriander. Just been sat in garden enjoying a gin with soda water, ice and slice of lemon while the sun has being going down. About to have a two squares of 90% chocolate with a decaffeinated coffee.
 
I had an early train to catch today so bought a cup of black coffee at the station and ate my packed breakfast of cheese and marmite l/c roll on the train.
Several cups of tea and coffee throughout the day. Main meal mid afternoon was a Chicken ‘hanging skewer’ with piri piri sauce and roasted Med veg. Should have been a good choice but I think the skewer meat had been brushed with honey ( not mentioned on the menu) it was quite sweet and raised my BG to high 9s. Very disappointing.
Home late and had a small brandy.

Morning all. I had roast lamb for lunch and 2 lightly boiled eggs for tea plus some chocolate cream (a la @Annb) which was very moreish. It's pensioner's lunch today so no idea but am taking some chocolate cream with blueberries for pudding. I'm finding I'm not hungry and my cravings have stopped. Have a nice day all. :happy:
 
Breakfast kefir then poached egg and mushrooms
Lunch cheese, celery and low carb seeded crackers
Dinner used some left over chicken with some veggies and eggs to make a frittata - topped with cheese. Served a slice of frittata with salads. Some left over for lunch next few days

Just had a small piece of hm LC lemon cake with cup of decaffeinated coffee.
 
Greek yoghurt and M&S grain free granola for breakfast.
H/m scotch egg, piece of St Helena cheese ( from Suffolk - it was in my latest cheese subscription box) couple of cornichons. DGF cake and clotted cream to follow.
Dinner Gourmet Kitchen Burger topped with cheese and bacon served with a large mixed salad. DGF peanut butter egg to follow.
Scotch eggs were made with 1 skinned Waitrose 1 sausage wrapped round each egg then rolled in pork panko crumbs ( Amazon) and airfried.

Not posted over the weekend as been entertaining family over from America, but back to normal routine today!

Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: bacon melts with cauliflower, broccoli and carrots.
Bloods taken for annual diabetes review this morning, keep your fingers crossed for me pls!
